What have you eaten today? (Low carb forum)

I get the rolls, sliced bread and pizza bases, I keep supplies in the freezer, they all freeze well with grease proof paper between the bread slices and pizza bases.

I’m keenly awaiting my delivery of all those things! I’d tried the pizza bases before when I was searching all the different suppliers for the lowest carb with ‘proper’ ingredients. I was really impressed.
 
Afternoon everyone! The tweaked nerves in my back and neck are much better today, it's been driving me almost to tears since I overdid it on the house clearing last week. It's annoying because it's stopped me doing the heavier/more strenuous things for the time being too. So hopefully I'm on the way to being able to pick up again now.

I'm going lower carb now with renewed resolve - today I had sausages, eggs and mushrooms without even thinking about bread - I usually twitch a bit particularly with the first meal of the day because in the past it would always have bread included. I think I've always been afraid I'll be hungry without carbs when of course the opposite is true (and I have proved that to myself before). I'm totally satisfied which is a miracle for me.

Tonight's meal will be chicken breast with cauliflower cheese and buttered mashed swede (bit addicted to that at the moment!)

Glad you’re on the mend. I’m also addicted to buttery swede. I usually use a stick blender ( and half a ton of butter) to make more of a puree. It’s so moreish.

Yes! It's a great comfort food in the absence of potato-ey things - my chicken breast/cauli cheese/swede mash leftovers have been made into a mini-pie for tomorrow! It does have a few more carbs than above-ground veg but it is the lowest carb of the root vegetables I think. I find it doesn't trigger me so I'm very happy to use it.
 
1 black coffee, glass of goat milk kefir and cups of tea with lactofree milk saw me through a busy morning.
L- organic little gem lettuce ‘boats’ filled with M&S smoked salmon and cream cheese deli filler, topped with avocado, red pepper and a sprinkling of sprouted cress leaves. Chocolate chia pud.
D- h/m burger topped with Stilton and a mixed salad including latest ferment ( carrots, red pepper and ginger). H/m yoghurt with blueberries and seeds. IMG_1710275202.371866.jpg

Our parents always unplugged the TV set during a thunderstorm, but that response does have an underlying rationale, I think.
I remember that too. Was it related to the rooftop tv aerials we don’t have now?
I believe so @MommaE Rooftop TV aerials were usually the highest point on our houses and thought to be susceptible to lightning strikes. Unplugging your TV set helped prevent electrical surges from entering via the aerial.
 
Evening all

Today:

B: Two poached eggs with a knob of butter and avocado seasoned with black pepper plus a wedge of Époisses washed-rind cheese.
Water to swallow tablet.
Espresso.

L: Orkney salmon fillets baked with broccoli, chestnut mushrooms, double cream and lemon verbena.
Steamed asparagus spears and French beans smothered with butter
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, baby plum tomatoes, celery, Romano peppers, cucumber, Halkidiki olives and salad onions, dressed with an olive oil, balsamic, flat-leaf parsley and garlic vinaigrette, topped with roasted macadamia nuts.
Water to wash down tablets.

Your dinner looks very colourful and healthy. That burger looks lovely.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: meatballs in tomato and mascarpone sauce with Brussels, broccoli and carrots.

A small, but perfectly formed dinner. :)
 
Hi All MIA again…. Mother’s Day lunch was roast lamb, mixed veg, dodged the red cabbage and carrots and cauli & brocolli cheese. It was at 2.30pm so didnt eat again that day.
Monday my usual brekkie of slice LC toast, butter, copious tea.
Lunch was a finger of cheddar, a small bit of Red Storm, 6 pickled silverskin onions, three small water biscuits (7.5g)
Supper was chilli & tom meatballs with 2 oz spaghetti. If I have a balanced day this amount seems to be well tolerated at least going on FBG but I really need to check 2/3 hours after!
Yesterday same brekkie.
Lunch was avocado & prawns.
Supper was baked spiced chicken breast with broccoli & cauli cheese
Today same brekkie.
Lunch will be scrambled eggs.
Supper will be stir fried chicken, chorizo, red pepper & paprika with cauli rice.
@shelley262 sorry about son’s breakdown and slow response, the positives being happened on the return journey so DIL got away, dog was safe and Mum on the end of the phone for reassurance. Every day really is Mother’s Day.
I was a bit sceptical about the remark “you’re not really diabetic”. There are so many challenges for the NHS I hope they’re not going to punish us with control and lower A1cs and withdraw eye screening, etc.
@Antje77 that bike looks great and I especially loved your crocodile bag !!

Hiya yes Im feeling very uneasy about the comments looking back she also used the term "fake diabetic" as well as you are not a 'real diabetic' and also something that has been subsequently changed on my medical records! They have asked me to come in for an admin face to face next week - so I do wonder if taking me off the Diabetic Register is on the horizon. I wouldnt choose this as need to keep on top of it all - In my view I am only in remission as I manage it by the way I eat but if I went back to my old ways of eating I'd soon be back there. Only reasons they would give for the admin appt was that I am below target and have no plan!! Once I get solid information about what the practice has planned for me I'll do a wider discussion thread on the forum as I am interested in what others think and how different practices have deal with patients in longer term remission. A big shortage at the moment of DNs in my practice could also be leading new plans, or not, for those in remission. I would want a yearly Hba1c and eye test as a minimum but will see what they actually say before I start my campaigning!
 
Breakfast: 2nd half of the frittata that I made yesterday.

2nd meal will be somethig out of the lucky dip that I call a freezer. Open door, close eyes and grab something. Or I did want to try something that I saw somewhere which was cashews with green beans, red pepper and dressing. The only problem with that is that Neil could only get me broad beans which may not be so good unless I can get them cut into really thin strips and steam them.
 
Morning all. Yesterdays lunch was scrambled eggs with spring onions, mini red peppers ans some grated cheese. For tea a tin of salmon with mayo and ACV. Today I have a chicken leg with red cabbage, cauli and broccoli. Maybe a couple of boled eggs for tea with a couple of Ryvitas. Have a nice day all.
 
Reeeeejoice with me - yesterday I managed a 23-hour fast - only been able to do that a handful of times, so delighted. Evening meal preceded by my usual little helping of mixed nuts, then steak, cauliflower, cabbage and tenderstem broccoli.

Today I will shortly have brunch of lumpy soup. Evening meal will be nuts followed by pork chop, sprouts, cabbage and cauli.
 
Great news on your fast @Outlier, congrats! I must get some fasting done, I've been slacking off on that a bit.

Scoffy day today, I had the leftover chicken/cauli cheese/mashed swede for breakfast, then a packet of pork puffs with a little bit of cream cheese, cooked some lamb leg steaks for the freezer so had to eat one of course, and just had some harissa pork mince with a greek salad.

I think I might have some more pork puffs with cream cheese, and possibly a few nuts and montezuma 100% buttons later. Very much not a fasting day of any description!

Edit: At least low carb! I find thoughts of carbs creeping in when I am losing weight, but managed to push them away today.

congratualtions on achieving the 23 hour fast. I find longer fasts harder these days but can happily do 16/18 hours most days.
