What have you eaten today?

I had a slice of a microwave bun toasted with goat's cheese...
Three more slices (the whole bun by now) toasted and buttered with fresh crab pate and lettuce - wonderful...
a snack of roasted artichoke hearts, cold salmon, cold broccoli and green beans, goat's cheese chillies stuffed with cream cheese, and horseradish... sounds more like a banquet really, doesn't it? :)
Supper will be sausages, scrambled egg and bacon I think...
and I shall have a hot chocolate for bedtime... with a spoon of peanut butter... :) sigh... :)
 
On holiday again, hurrah!!
Yesterday:
B: can't remember plus coffee with cream
L: chunk of German smoked cheese and four baby toms
D: out for tea: canapés, amuse bouche (mushroom summat or other), beef with an assortment of accompaniments and cauliflower cheese, rhubarb and custard. After all that my bg was only 7 two hours after :) I think this is due to the fresh cooked produce and quantities of butter!

Today I am going cold turkey on yoghurt and cream. For the first time I have tried coconut oil and butter in my coffee and think this will make a good substitute.

This sounds like a stupid question, but is it safe to take my insulin with just coffee and coconut oil/butter or do I have to have food?

My goodness you're healthy!! :) Bravo... recipe for your cauliflower bread please, if you have time... thank you... get bored with my bread recipes...

Cauliflower Bread:
1 cauliflower - put it in the blender with a clove of garlic
mix in 2-3 eggs, 100grammes grated cheese or parmesan, pinch of oregano & basil
turn out onto baking tray lined with greaseproof paper (pat down & shape)
cook in oven 40mins @170C (325F)
turn over (turn out onto another baking tray lined with greaseproof paper, removing the original greaseproof paper)
cook for a further 20 mins
remove from the oven and cool on a cooling rack
simples!
excellent as a pizza base :)

I'm just about to make some more - yum...!

Thank you... sounds fantastic... I haven't had time to do anything very exciting.. builders in and a new kitchen to sort out... I'm exhausted! :)
 
B - My usual Greek yoghurt with fresh blackberries, raspberries, blueberries, flaked almonds and flaxseed - BS+2 = 6.1
L - ham salad with avocado, lettuce, toms, pinenuts. BS+2 = 5.6
D- homemade cauliflower cheese with green salad. Berries with clotted cream

Snack - slice of homemade savoury slice fresh out the oven made with minced beef, bacon and Emmenthal cheese - BS+2 = 7.1IMG-20150224-02331 (1).jpg
 
Last night, I made my favorite soup, Minestrone...

For lunch, I had a cup of soup with my ham, provolone, and pickle sandwich made with the 1 min flax bun. Today is day 17 on the LCHF diet. I got my lowest fasting BG yet, 131 (7.3 mmol) and I've lost 4.6 pounds (2.1 kilograms). :)

Here's how! I adapted it slightly, using baking parchment to wrap and bake it in, omitting the glaze and magic dust, but adding a dash of piri piri sauce and a teaspoon of onion salt. to the mince Its quick and simple to make and slices easily. Delicious hot and cold. Perfect for picnics and even parties. I got 20+ slices from it. Enjoy !

Ooh, that looks nice :p:p that's me licking my lips. Not many icons to choose from using the App.......

Breakfast: Percy's pink porridge made with soya milk (one of two sachets in a lucky dip box I bought
Lunch: broth made with soya mince with diced Cheshire cheese stirred thru it
Tea: ready meal of chips, beans and a steaklet made by friend - portion size meant I was OK with carbs
Snacks: couple of lower carb cereal bars, chunk of mild cheddar
 
And I WILL make the 1 main flax seed bun.....when I have time to get the mill attachment out to grind the flax seeds..... ;)
Actually, the bun is very nice sliced and toasted and topped with soft goat's cheese and avocado.... my husband bought me a posh toaster... it stops the little slices falling through and filling the house with smoke... :) I was so happy... :joyful: Little things...

Felt fine but started to become cold - thought it was just cos I was too lazy to turn the heating up :grin: However, took my bg before bed and it was 3.4 :shock: had a huge chunk of feta cheese but then I got a bit panicky as I should have had something quick acting - couldn't find my emergency biscuit so I ended up eating a packet of trebor mints :rolleyes: 6.2 an hour after

You don't mean ruffles, do you... an absolute nightmare to iron.... seersucker - that vile American textured fabric? No... crushed velvet? How far back are we going? Poplin? Bri-nylon...:eek::eek:
It was .................................OMG, I've forgot again. Anyway the name is somewhere back a few posts as someone got it right. Sorry.:facepalm:
