What have you eaten today? (Low carb forum)

Breakfast yoghurt with strawberries
Lunch one slice of Burgen bread with pate and salad
Tea will be Liver, bacon and onions with celeriac mash and spring greens x

Breakfast....Coffee

Lunch.....Cold roast turkey, Baby spinach, watercress, tomato and radishes with a sprinkle of grated cheese and a teaspoon of mayo on the sde

Dinner will be....Quorn chicken pieces, mushrooms and spinach cooked in butter
Raspberries and fromage frais with ground flax seed and cinnamon

B: didn't bother.
L: half a tub of roasted red pepper hummus with crudité (little gem, radish, carrot, sugar snap peas, celery, spring onions, cucumber) and a sliced chicken breast. Still peckish so had 3 brazil nuts.
D: Going to add a little red wine vinegar and cooked chopped bacon to a generous dollop of ratatouille and serve with...something (can't think what at the moment) finished with a scattering of parmesan. Struggling as I normally make courgette noodles but there is already courgette in the ratatouille!

B- Two Fried egg yolks
L- Pork Loin( water thin) with rocket and boursin cheese
D-Some more pork loin with rocket, mayo and cheese.

B- 2 eggs, 2 cups of spinach sautéed with 4oz mushrooms. And coffee, of course!
L- Mediterranean salad of 3 oz grilled chicken, raw spinach, black olives, feta, pickled banana peppers, and diced tomatoes with vinaigrette
D- I have no idea. I better think of something or there will be mutiny. o_O

B: asparagus omelette, 1/2 avocado

L: 2 drumsticks from the slow cooker, radishes

D: fish pie (celeriac mash topping), rocket salad

Breakfast coffee n cream
Lunch feta cheese, spinach, 4 cherry tomatoes, radish n mushrooms, he'll and Mayo!
Dinner pork chop n cauliflower cheese mash!
Snacks pepperami stick n small handful of almonds.
I have lost nearly 3 stone since October through low carb, up against it as on Glicizide too

B: not the promised bulletproof choc, since Mr B conceived a passion for MacDs this morning. So I had a bread-less sausage mcmuffin and a latte, while he ate the same, plus all my carbs.

L: crustless quiche, coyo

D: lamb steak, cut in strips and stir fried with red pepper, spinach and courgette, with garlic and herbs, then cream cheese stirred in at the last mo. Yum.

But sadly back to my old tricks of too much protein. will dial it back again tomorrow.

Probably much too late to be of use but you could make a dent in the ratatouille while its in the pan & crack an egg in.

Well done @Shelly69 - that' s quite a result!

I find the protein thing a bit tricky too @Brunneria & I'm a vegetarian! Swapping out a flax bread for the coconut/psyllium one has helped a little but I find cutting back on cheese awfully hard. Think I'll take a journey through the recipe index & see what I can find.

B: Muffin/Coffee - I guess I should vary it but I've never really cared for breakfast so it's better than nothing.
L: Leftover Carrot/Mozzarella/Parsley Salad & maybe a coconut flatbread if I get time to make some
D: Friday night is burger night so a Veggie Burger with Avocado/Lettuce/Tomato on Soy & Linseed

B: greek yogurt, berries, scatter of granola
L: chicken salad
D: Bolognese sauce (served over steam-fried savoy cabbage) with a bit of cheese
Pud: cheesecake topping (no base) with a few sliced strawberries
Sounds very good.... :) You can make the cheesecake with stevia and make the base from ground almonds and butter - bake at 170, but watch because it burns easily... my friend refused to believe me when I told her it wasn't biscuits in the base... :) lush.... the difficult part is restricting yourself to one slice a day really... :D

Someone gave me a plant last year so I bunged it in the allotment and it's cropping like crazy. It looks like spinach but has a lemony taste raw. Cooked it's quite boring but has good vitamins.
Can you not eat it raw in salads? It sounds wonderful... as a child the local gypsy boys taught me to find sorrel in the woods and chew it when I was thirsty.. :) I loved the way it makes your mouth water... That was many years ago, too....

I'm having the last of the ratatouille for breakfast with scrambled eggs. :)
