What a difficulty for you. Do your supermarkets sell any kind of tinned meat that you like (not stuff with added carbs) which with a stock cube and any diabetic-friendly vegetables that are either fresh but reduced as they are getting a bit past it, or are tinned or frozen, can make a soup which tastes great even if it may not look beautiful. A plus if you can add some fat in the form of cream, oil or butter (I appreciate there is extra cost here but something might be reduced for one reason or another). It's possible with tinned fish too, but I'm not sure if you like that.

I'm in the process right now of seeking recipes to use canned meats as sometimes they are on sale. I have an aversion to pureed foods so I'm looking for recipes that will render the meats softer than they are already.

@Outlier our supermarkets are the same as in the UK. We have the cheaper ones equivalent to AldI , Lidl, Tesco and we have upmarket ones similar if not more upmarket than Waitrose where almost everything is produced locally and ethically. They are large and full of every type of food, the same variety and quality as UK supermarkets. Food is more expensive here in Canada than in the UK for sure. Our fresh produce is better than the UK, I would say. We have discounted food often between of 30% - 50% off meats and veggies as they approach sell by dates. This food is good and there is nothing wrong with it. I often buy it and put it in the freezer. I have not seen vegetables that are so bad as to be unusable. They are perfectly good. :)

Just to add - a youtuber I really like is called 'Prepper Princess', of Southern California, and she is really good at the pared down life, and hacks galore. Including with food. I enjoy watching her, although I can't say I can adopt many or even many of them! In my country life I come across very charming preppers liks she undoubtedly is, and recommend her. She's very upfront, a good communicator - that kind of thing. She even wrote a book, advertised via her channel, 'How to Live on Almost Nothing'.
