Moaning for moanings sake!!
I gave half of mine away. By the time I had cut, deseeded and peeled half of it I was exhausted and couldn't face doing the other half!!
How about a nice boozy cream to put over our fruit at Christmas? Put 2.5ml brandy/whisky nto double cream, pinch of sweetner and whip till thick!! Yummy x

I considered buying some but though it's organic it is thickened with cornflour making the carbs 35g per 100g so that idea went out of the window.

Do you have a good recipe for pumpkin pie @vintageutopia? I managed to grow a pumpkin and now have a lot of puree in the fridge waiting for me to do something with it! Made pumpkin and hazelnut scones which were good but not sure what else to do with it!

This is my go-to pumpkin pie recipe and it has never disappointed. I like a nice spicy filling, since pumpkin can be rather bland on its own. Admittedly, this was my go-to recipe BEFORE I was diagnosed with Type2. I am trying to think of a way to make it carb-healthy. For example, use cream instead of evaporated milk. Sugar substitute for the sugar. Maybe, SF syrup for the corn syrup. Possibly xantham gum for the flour. And I noticed a almond/coconut flour crust recipe on Pinterest that is low carb. Heck, I bet it would even work without a crust. The filling is the best part anyway. And you could top it with a dollop of homemade whip cream.

If you do try it, make the filling the night before and let it sit in your fridge overnight. The flavors will meld together and taste even more fantastic. Then, bake it.

I also enjoy pumpkin smoothies. Pumpkin freezes really well, so you could even freeze some in ice cube trays and then pop it into a smoothie before blending. http://bakingandlosing.blogspot.com/2011/09/low-carb-pumpkin-spice-smoothie.html?m=1

And joining the neglected pumpkin.. eight butternut squashes.. I ordered a pack of eight tiny ones but they were out of stock and the delivery guy didn;t tell me that they had subbed eight fullsize ones duh. I see butternut squash soup in my mother's future..

Ditchthecarbs is one of my favourite "go-to" places if I'm looking for inspiration.
Ooooh - those LC choc mint truffles look good.

My mother's truffle recipe is basically a combo of the best cocoa powder, double cream and iceing sugar, with added booze-of-choice. May have a low carb play with that too. I have been steadily munching my way through some excellent squares of Lidl 70%, but the thought of these has me salivating.

I don't low carb on Christmas. I do watch what I eat most of the holiday period, but Christmas day is my day off from Diabetes.... I have bacon butties for breakfast, sweets and chocolate, a massive roast dinner, cake and pudding! One day of the year won't kill you... I do follow it up the next week with some intense cardio to make sure my body gets back to normal quickly though. I am quite lucky in that my local gym is only shut 4 days a year so staying active is easy.

Having grown loads of butternut squash this year I have just found pumpkins are way lower in carbs. Doh! I assumed they were similar.

Took possession of two bags of Lofbergs Lila Harmoni today, my favourite coffee. It's a Swedish brand, of organic medium roast South American Arabica filter coffee, just right for mellowing out after Christmas lunch.
