Salad dressings

I always make my own, never really buy dressings - only mayo.

For a basic vinaigrette - 2 parts white wine vinegar 6 parts extra virgin olive oil. 1 part mustard - either French English
To make different types you can use as vinegar red wine vinegar, apple cider vinegar, for oils avocado oil, walnut oil, miss out the mustard & add any dried herbs & spices you like

Put in a jar with a good tight lid, give it a good shake to emulsify it and serve. Takes a minute, will keep in the fridge for a couple of weeks.

For a creamy dressing such as Caesar dressing use mayo thinned with a bit of cream or Greek yogurt add Parmesan, garlic, I also add anchovies, seasoning a good stir & your good to go.

The basic vinaigrette & mayonnaise are what you call “mother sauces” so the base for any salad dressing, you can add anything you like, your only limitations is your imagination. (Same with Greek yogurt)
 
Oh wow, thanks LL!!! I had no idea how to do all this - cooking isnt my thing at all (did you notice? lol) but I'm having to learn a lot since he got ill. I'll buy in all the gubbins and play at mixing up dressings. TY!

You’re welcome, I’m sure you’ll manage fine it’s easy and once you’ve tasted your own homemade you won’t go back to bought of the shelf.

For Italian use herbs like oregano, mint is very good for Greek flavours - but there’s no rules, just have fun with it and throw in what takes your fancy, don’t forget to add a pinch of sea salt. For a sliced one chilli flakes are good
 
You don't have to use vinegar you can also use lemon juice in same proportions (ie 1 part lemon juice to 3 parts oil).

(We have several lemon trees in our garden so usually use this).

Still remember reading somewhere how salad dressing made with walnut oil could turn a wilted lettuce into a feast fit for a king....
 
And for a "secret sauce" mayo - starting from 4 tablespoons mayo, teaspoonish German mustard, teaspoonish low sugar ketchup, 2 diced caperberries.

You adjust the levels to taste. Personally I use 4 caperberries and 3x mustard.
 
Olive oil and vinegar, salt and pepper is all you need for salad dressing.
It takes only seconds to prepare and tastes much better than any bought salad dressing

if you use balsamico, you need to check the carb content, which differs for different brands.

Similar recipe to my secret sauce (McDonald’s burger sauce for the uninitiated) I don’t add ketchup but
Mayo, mustard, tablespoon gherkin pickle juice, a small pickled gherkin very finely chopped & a sprinkle of paprika
 
Try Fu:di. My favourite salad cream.
 
I make my own blue cheese dressing. 1 part mayonnaise to 2 parts full fat greek yoghurt. Some Danish blue cheese, how much depends on your personal preference , mash it all up with some lemon juice. It's one of my favourites. I haven't bought a salad dressing in years as it's easier and a lot cheaper to make it yourself.
