I've read a lot of people doing keto like to drink bulletproof coffee. This means coffee with cream, butter and maybe MCT oil. My question is if you add a couple of packets of artificial sweeteners (like say Splenda), how does that change anything? The artificial sweeteners have no carbs.
I just need a little something to make my coffee sweeter. Thoughts.

@sunspots warns, sweeteners are a bit of a mine field, especially those little packets offered in cafés. They can be half sugar, half sweetener. (Sugar is very cheap and many sweeteners are expensive.) I recommend carrying old fashioned saccharine tablets. They are tiny, cheap, come in a small tube and are impeccably carb free.
Bulletproof coffee is usually part of a keto diet. I believe fat bombs may be too. The aim is to consume few carbs, not too much protein, and make up the lost calories with lots of fat. I won't try to expound the various possible benefits and drawbacks of the keto diet. There are innumerable videos on Youtube and books on Amazon for that. In my case, all that fat made me feel sick, so I have settled for low carb, high protein and fairly high fat. Double cream in my coffee is rich enough for me.
