That's good to know @cdpm. I recall trying puréed pumpkin whilst working in the USA circa three decades before diagnosis.
It must have made an impression because I remember the flavour all these years later; nutritious and diabetic-friendly. Thank you for sharing

Sorry to hear the eggs caused gastric distress @cdpm.
Once cooked, cheese is notoriously hard to digest. Suggest two scrambled eggs in butter with the addition of a tablespoon of double cream and no cheese would make a tasty alternative.

That pesto and cream sauce sounds scrumptious. I forgot to sow the basil this year. How I miss the glorious scent of fresh basil leaves, garlic, pine nuts, extra-virgin olive oil and Parmesan cheese that fills the kitchen as you whiz them around in a food processor!

With ground beef and canned tomato paste and canned peas and canned diced tomatoes and canned vegetable soup and black pepper and cayenne pepper and chili powder . Cooked in a slow cooker for nearly 6 hours on low.
