Type 2s: What have you eaten today?

Well done you sounds as though you are doing brilliantly well. down to a 14, that's my target weight, have to be patient. I know what you mean about food being a pain when you have family that eat normal. I mind 4 of my grandchildren on a daily basis so my daughter and husband can both work. They eat all sorts that I can not My daughter is very supportive and makes me meals, sometimes off her own ideas and sometimes from the menus I give her from what I have found others eat off this site and my own ideas from researching Low carb and no sugar diets. My morning readings used to be high but are coming down slowly but surely I am 65 in a few weeks and I have not got the time to exercise or go to a gym, but I am never still with the grandchildren. You will get there believe me time is patience that is what my mother used to tell me. At least you have all the support on this site stay with us.:)
Four grandchildren to mind must keep you very busy! Thanks for you words of encouragement. I know I'm in for the long haul, but I also know it's manageable to eat this way even if it's very tempting not to!!

The fish fingers WERE properly cooked. As were the chips. The tomtato sauce was very tomato-y!

Had stir-fry for our supper which was yum! Oodles of veg and a little bit of duck. OK, so we had a side of vegetable spring rolls and sweet chilli dip (Guilty as charged m'lud!)

Today is the usual coffee and walnuts, lunch is chilli dawg and 'slaw.

Tonight (checks with OH, hang on a mo....) we've agreed on chilli burgers with celeriac chips and 'slaw. Does it appear that I'm addicted to coleslaw? I think I may be. It fills, if a vinaigrette dressing is made it's not only yummy but healthy, it cures cancer and may even be the answer to world peace. And it looks pretty. NOM!

Anyone have any other recipes for something that resembles alpen ?

I have - it's a variant on something that Jamie Oliver did ages ago.

I part rolled oats (the unprocessed, large type)
1 Part bran (again, the unprocessed bran)
Nuts - walnuts, almonds
Dried apricots
Whatever other fruit you like - raisins, sultanas

Mix well and cover.

The night before put a serving in a bowl and cover with milk, cover and fridge (cover otherwise anything with strong flavours in your fridge will taint the cereal).

On the morning grate in an apple. Eat.

Feel Full. At least until lunchtime.

I've not tried this in years so I may have forgotten some bits. Neither have I a clue as to the carb hit you'll get with this - but as I recall, it tastes GORGEOUS.

Well, one of The Boyz has been at a residential the last two nights. So we still have food in the house. This will soon end.

I fed the youngest on Pappy Special bacon & cheese burger with fries. He was well happy!

The OH had chilli burger, the last of the burger mix with a lump of chilli on top. I found two sausages lurking near the back of the fridge and cooked them and used up more of the Chinese leaves as dog buns. A shed load of coleslaw. ****** TV then bed.

Tonight The Boyz will snarf up a Pie Minister pie, mushy peas and some variety of pudding, then BED! We've planned a chicken curry, with sides of spiced cauliflowers and some butternut squash (the OH may well want rice!. I will resist... Please?)

B. Porridge, dried cranberries, cream, yogurt & Splendour
L. Spanish Tapas Restaurant:-calamari, sardines, chickpeas with
Spinache, Potato wedges with garlic mayo, chicken wings, all with their
Appropriate accompaniments...small glass house red,!
D. Probably toast & marmite!

last night, fish and chips from chippy followed by berries and cream , moderate rise in blood sugar but not enough to put me off my once a month treat from the chippy.

breakfast today, two slice of lightly fried lidl roll with boiled eggs as topping.....I like to slice lidl roll in three and lightly fry 1 or 2 slice in olive oil for breakfast on most mornings with a variety of toppings.
