Type 2s: What have you eaten today?

Evening all

Yesterday:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Baked calabrese, cauliflower, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to wash down tablets.
 
Greetings @cdpm. I hope your gastric symptoms have subsided.

You can't go wrong with eggs, cooked any way you like them, cottage cheese, ricotta cheese, yoghurt and home-made, liquidised soups, until your mouth has recovered and you're on the mend.

If you can hang in there and keep to a low ... ish carb menu then, barring illness or further injury, your blood glucose levels should steadily improve. That takes time, as I think you realise. It's not something that can be achieved overnight. Slow and steady wins the race.
 
Monday:

B: Two poached eggs topped with a knob of butter, avocado and crevettes, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Clams with king prawns in white wine sauce with sun-dried tomatoes, spinach, onion, garlic, double cream, rosemary, butter and parmesan cheese.
Braised cavolo nero with garlic and toasted almonds.
Raspberries with full-fat Greek-style yoghurt
Water to drink.
Skipped pud.

D: Seafood salad made with brown shrimps, mussels, shredded red cabbage, apple peel, celery, thyme and baby plum tomatoes with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts.
Water to wash down tablets.
 
Evening all

Yesterday: we helped friends to celebrate last Thursday'e general election results (well, somebody has to) with a slap-up, festive lunch.

B: Two poached eggs with a knob of butter and avocado, seasoned with a good grinding of black pepper plus a wedge of goat's milk Gouda.
Water to swallow tablet.
Espresso.

L: Aperitif: gin on the rocks with a slice of lemon.
Prawns piccantes sautéed with tomato and basil, garlic and chilli.
Side salad of lamb's lettuce, tomato, cucumber and taggiasca olives dressed with vinaigrette.
Melanzane alla parmigiana
Steamed carrot batons, calabrese and French beans.
Spinach with garlic and butter plus deep fried zucchini matchsticks, some of which I swapped for extra spinach.
Water to drink.
Skipped pud.
Espresso.

D None of us was really hungry, but we made a light seafood salad using mussels, brown shrimps, lettuce, baby plum tomatoes, celery, Romano peppers, Kalamata olives, mint and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with roasted macadamia nuts. It all disappeared.
Water to wash down tablets.
 
B:- 2 egg omelette with onion and feta cheese (left over from a BBQ when it poured down last weekend) Black coffee which I have always drank
L:- Thai Chicken and Lemongrass packet cup-a-soup. (Have enough of these to feed a small army. Powdery and likely full of bad stuff.)
D:- 2 slices smoked bacon, 2 reduced fat sausages, sweet and crunchy packet salad, tomatoes and raw red pepper. Followed by fresh watermelon for pudding whilst everyone else ate ice cream and tempted me with spoonfuls laced with sticky toppings.:(
My weakness 2 glasses of Chardonnay to wash down the Metformin, that's my excuse anyway.



Good morning, I feel a bit of an imposter here as many of my meals would not be considered very low carb owing to having to rid a freezer and larder of previously high carb foods owing to my early beginnings on low carb journey. I could bin it all or donate to the local bird population but we hate food waste so it all has to be eaten somehow. Additionally it is quite hard to fit in low carb main meals with a family who has traditionally lived on fast food, chocolates, pies, oven chips, take-aways and all things that are considered devil foods. Despite this it is possible to ease in my diet without too much fuss and upset in the household despite the jokes about Dad turning into a rabbit or caterpillar.

Low carb contributions are of course welcomed, but please keep in mind that this is not the low carb diet section, and debates about diet should be kept out of this thread. Happy posting! ;)
Sometimes I have porridge with a banana embedded in it, I also have 2 fried eggs, vegan bacon and two slices of toast, occasionally I will have a fruit smoothie consisting of banana, frozen berries,cinnamon and almond milk. After get a diabetes blood test at the doctors, I go to Greggs and have a bacon bap and latte
 
I had two slices of toast and butter for breakfast, half a tomato with olive oil and salt and roasted chicken for lunch. I had a drink of lemon juice, almond milk and apple juice for tea...

2 cups each of a plant milk with 1 scoop each of chocolate protein powder

Are you aware of a sour taste in your mouth along with the pain in your stomach? Have you experienced a burning sensation in your throat or chest during these episodes of gastric distress?

Water to swallow tablet.
Espresso.

L: Salmon fillets baked en papillote with mushrooms, spinach, Kalamata olives, lemon zest, thyme sprigs, sage leaves, olive oil and butter.
Steamed carrot batons and French beans smothered with butter.
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, lettuce, baby plum tomatoes, celery, Romano peppers, Halkidiki olives and salad onions, dressed with an olive oil, balsamic, lemon verbena and garlic vinaigrette, topped with toasted almonds.
Water to swallow tablets.
 
B:- Skipped as had to be out early and lost for time. Just tablet and water. :(
L:- 3 egg omelette, bit of cheese (10g) and 2 slices of smoked back bacon. Black coffee. I could eat bacon all day!
D:- Chicken Kiev (remnant from old days in freezer.) Sweet crunch salad, 3 cherry tomatoes and raw red pepper. Watermelon for pudding.

I am finding the red pepper to becoming my staple "filler" in most meals, tastes sweet and reasonably filling. Just bulks up an otherwise dull meal.
Watermelon same as reasonably filling and a good palate cleanser.
