Type 2s: What was your fasting blood glucose in a morning? (very low chat level)

I would like to know as well, as I eat a lot of it [Brie], and I can’t find any reports of adverse carbs.
Hi @aylalake. Most of the lactose (milk sugar) is removed in the whey during cheese making. The residual lactose in cheese curd is metabolised during the early stages of ripening, mainly through the action of microbes, leaving you with a food that is mostly fat with some protein; carbohydrate content is negligible.

Perhaps the OP ate late in the evening and suffered some indigestion which kept her awake. Poor sleep, as we know, can certainly contribute to raised blood sugar levels, but that's speculation on my part. We await the OP's reply.
