What have you eaten today? (Low carb forum)


How do you make your chia puddings? Mine are always a bit flavourless
 
Breakfast - usual dessicated coconut, nuts, seeds and few oats 'muesli'. Tea.

Lunch - rollitos, pecans, mexicana cheese, olives and tomatoes. Sugar free jelly.

Dinner - lo dough chilli con carne pasty, fried courgettes. Piece of chocolate courgette cake, double cream and frozen cherries

Whenever I make cakes they always have a kind of weird salty taste. I'm not sure if it's the coconut flour, or eggs, or baking powder. Cake is ok with something but not on it's own

I was mooting the possibility of adapting this one into other shapes of pasta but don’t think a pasta machine will ever be needed in this recipe even if it’s tweaked. I’ve also not yet got round to trying in another pasta dish as it is baked before it’s second baking to withstand the liquids I’d imagine I’m not sure. I’m doing it again today but sticking to lasagne version as doing ahead for tomorrow when out all day. Will let you know if get more ambitious another day! Hope this helps.

I think there are a 100 ways to make chia! I use a mixture of Greek yoghurt, almond milk and cream. I like the sharpness and creaminess of the yoghurt. Some just use all almond milk and others use coconut milk (not to my taste TBH). I messed about with the ratios to get quite a solid, mousse like texture. I don't like it frogspawny and tapioca like! It definitely benefits from sitting overnight in the fridge. For flavourings, I add some sweetener to taste and various natural flavourings (almond extract, vanilla, orange, lemon, coffee, etc). Lakeland have a good range and so do some of the supermarkets. I sometimes add some almond butter, or cocoa to make it chocolate flavoured. I often serve it with defrosted berries (or chia jam) and usually done flaked toasted almonds. Just play about with flavours and taste as you go! I love thinking up new flavours!

Oh, I forgot to mention that my husband has joked that I should publish a book called "100 Ways with Chia Pudding".
 

I have absolutely no idea how to go about making a low carb pasta to go through this inhabitant of the cupboard under my stairs.

My sister in law gave me the pasta maker saying 'I know you can't eat carbs, but you could eat home made pasta, right?'

I think she was re-gifting it.
 

Thank you - will follow that up - why I can’t find diabetic pasta recipe is crazy - how do diabetic Italians cope? Yes I do miss it, mainly as I cook family meals breakfast lunch n dinner - and Italian food - lasagne/bolognaise/meatballs are a regular - for last two months I’ve not cooked it as I can’t put myself through that - used to eat it dent with Parmesan - hmmm. Running out of ideas n winter months calling for warm dinners - like Shepard’s pie and chicken pie - maybe I’ll look for a pastry recipe too. Thank you for reply.

Under the stairs gets opened at Xmas for regifting all that we chucked in there over the year - it’s an issue in my house - don’t open the cupboard!!
Also I fall victim to gumtree regularly if bored - annoys my daughter as she has to collect it, and other family members as I pester them that they should have things.
Apart from pasta maker I got a bag of takeaway boxes. All leftovers get put in takeaway box and taken round to family members/friends.

Think maybe the next time you venture under the stairs you should put it on gumtree - (unless I find a carb free recipe- then I think you should use it) and start thinking of an apt Xmas prissy for your sis

I have a pasta machine with loads of cutters so making the different pasta will be quite simple. Note though you don't boil this pasta - you cook it in butter.

Some acceptable ready made pasta are Enjoy Cuisine and I also like oomi noodles for speed - I've had more than a few oomi noodle Bolognese or Carbonara.
 

For shepherd's pie I use a celeriac and swede mixture mashed with butter and a touch of garlic

For a pie topping I use the topping on this casserole made less 'wet' and rolled / patted out

When I want spaghetti or noodles I use a konjac fake spaghetti - I prefer the one sold in Sainsbury. I sub normal rice with cauliflower rice (I get the pre-grated stuff from Aldi or Asda - my non-D husband prefers cauli rice fried in ghee with Indian spices to normal rice.

Beautiful but chilly sunny day - the first of the snowdrops are flowering so Spring is on its way.

Today's menu

Breakfast: Bacon and eggs, cup of tea with skimmed milk.

Lunch: Small salad with egg mayo and brie, square of G&B

Dinner: trout fillets with sugar snap beans fried in butter with a squeeze of lemon

Pudding: Vanilla chia pudding with blackberries and cream

Drinks: Cup of tea with skimmed milk and lots of water

Have been researching on Amazon - like the look of Almond/chickpea/ketto flour. A baking day is looming!

Slowly the low carb world is opening up to me - I really do appreciate bought food recommendations as, “trail and error”, on the tastebuds after being in the kitchen an hour or two can be very frustrating - so many of the health food products tastes wild n wacky and usually if seaweed!
 
Fasting today, but don't let my face fool you! Yesterday was my first lapse. As they go, it was entirely manageable and I feel completely ok carrying on as though it never happened.

Dinner will be slowcooked rib-eye steak with broccoli, followed by 10% strained Greek yoghurt with double cream and ground flax.
 
@Chook beat me to it there with toppings for Shepherds pie - I also top with a celeriac mash on its own some or cheesy cauliflower mash.

The following is another chicken pot pie which is quite tasty. I've made this a few times now. It isn't pastry but nice none the less.

If you want a really good winter dish Tom Kerridge's lamb shank madras is excellent. Serve with cauliflower rice and a diet doctor naan.

I’m off to yoga shortly and wont eat again today so an early post from me.

Coffee&cream first thing.

Brunch was leftover DD breakfast ‘casserole’ with spinach, 1/2 avocado and homemade mayo. Followed by choc chia pud made with coconut milk.
That’s it.
Lots of various teas and coffee too.

Edit to add pud.
 
A particular vile salad!. And I made it.

Something in the fridge at work seems to make everything taste off!. Not nice.
