What have you eaten today? (Low carb forum)

Got to say these figures are puzzling. There shouldn't really be that much difference between coconut milk and coconut cream since, as you've correctly surmised, coconut milk is just a bit more dilute coconut cream. I usually stick to cans as the cartons can be a bit dodgy for additives. I use Sainsburys full fat cans mainly because you get the coconut cream sitting on top if you dont shake before opening. Is it possible you have additives in the ones you were looking at? Unusual for cans for you never know.
 

I expect its the same reason dairy cream has fewer carbs than milk - because the cream fraction has a higher proportion of fat. I’ve noticed a brand variation too though between different coconut creams and different milks.

Hope the river doesn’t get any higher - how far away from your house is the back of your garden?
 
Bed 6.3 FBG this morning 7.6. I awoke to snow this morning. All gone now but there was enough for Grandsons to make snowballs. Told son we were going to Costco sooner rather than later as it is on higher ground. Sure enough when we got there a fair amount was lying much to eldest Grandson's delight. Hubby had to pass on football. Pretty bad cold and the snow and sleet would not have been beneficial. Apart from Costco I had a bit of wandering to do. Visited the fish hut to get fresh clams and also got a few packs of variously marinated anchovies. Before I escaped I got 4 VERY large tiger prawns and I mean VERY large. From there it was Morrisons and also had to detour to the pet store for sons pet supplies.
B. Tassimo Americano grande with a dash of cream. 2 rollitos.
L. 2 falafels.
D. After going on about the varying battered out chicken breast to @Listlad decided that would be dinner tonight. Didn't crumb it this time. Bashed out and seasoned. Fried one side and turned then added a strange combination. Thinly sliced avocado, very thinly sliced pineapple (and very little), thinly sliced mushroom, 2 rashers crispy streaky bacon then topped with a slice of gouda which I finished melting under the grill. Had it with a mini cob. Skipped the carbon veggie chips!
1/2 PhD raspberry bar with another Tassimo.
Busy day tomorrow pre swimming. Hubby decided he wants spaghetti a la vongole as I hadnt made it for ages. All down to Mary Berry who made it during the week. No problem with that as it's easy and I'll have it with oomi noodles. But he also wants bruschetta and tiramisu! So I'll need to make another Dr Almond loaf for the bruschetta and a low carb sponge for the tiramisu as well as a a sabayon to blend with the mascarpone. Regrettably, I cannot make it as boozy as in the past with Tia Maria and marsala so I guess espresso and brandy will have to do.
 
Well, yesterday afternoon's market trawl for MrB's breakfast mangoes, revealed these handsome chaps. It's had to gauge scale From the pic, but these bad boys(and/or girls) were about 2" tip to tail.



Somehow. Just somehow, my will of iron seemed untroubled.

When it came to the fried pork rinds lady, that will of iron evaporated in a trice. I'll swear I'll resemble a fried pork rind by the time I come home!

No idea, but they're big buggy looking critters. Sadly my graps of the local language, and generally speaking the market traders' grasp of English arent great for some puzzles.

Whatever they are, I fell most comfortable knowing I will not be getting any more closely acquainted with them. My greedy tummy will remain bug-free if I have anything to do with it.
 
Thanks all for the ox cheek tips. As of 5.30am they have been seared in yesterday’s short rib fat and transferred to the slow cooker on a bed of steak fat (butcher gave me a bit extra for cooking), more of yesterday’s short rib fat and some saved up beef juices. @BibaBee glad to hear they’ll be good reheated as it’s an enormous slab of meat even by my standards!
 

And such a good price!.....no no no. I am spending my days posting stuff to get rid of on ebay and freecycle. I do not need more stuff - its a mantra I keep repeating to myself in the hope I’ll believe it!
However I do really miss my IP- stupid of me to leave it in Cornwall. I’m going back on 1st April and will swear never to forsake it again!
 

Our house is back to front, with a very long cottage garden at the front and river at the bottom. The river is usually nowhere near the level of our garden, but it is a lot higher than usual. The river is probably about 15m away from our house. Thankfully we seemed to miss the heavy rain that was forecast yesterday.
 

Phew! It’s a lovely dry day here on the outskirts of London - I hope it’s stopped raining where you are.
 
Has anyone got a nice red cabbage recipe that doesn’t include apples or sugar or wine?

I occasionally make a red cabbage dish with rice or sherry vinegar and Chinese five spice. Basically just put sliced up red cabbage, a hood size dollop of butter or ghee, the Five Spice and the rice vinegar (or sherry vinegar) in a big saucepan and cook very slowly over a low heat until done to hour preferred level of doneness. Usually about 45 mins for me.
 
Big hugs to everyone in potential flood areas. I've been in that situation in the past and I found it terrifying.

So, today:

Breakfast: egg, bacon, low carb chipolatas, mushrooms and two tablespoons of baked beans

Lunch: Nothing planned but I might have a small bit of cheese

Dinner: Lamb shoulder roasted with garlic, herbs and butter

Drinks: Black decaff coffee and still spring water
 
The little one and myself made the keto Nutella spread this morning. Compromise had to be made, using ground almond instead. It came out a little different to the original type of product and I though the little one was going to turn her nose up at it but thankfully she didn’t, giving the full Augustus Gloop impersonation once she had taken some on a slice of bread.

I struggled to make a smooth paste but I think that was because the almonds were not completely finely ground.
 

Perfect thank you. To put a spanner in the works I couldn’t get a red cabbage today - winter must be over. I’ll save your recipe for later though
 

Glad your little one liked it. You won't get the same results using ready ground nuts, it is best to use whole. When you process the whole nuts, the natural oils are released which turn it into a creamy nut butter. I had to blend mine for quite a while to get the right consistency and my blender is a pretty heavy duty one.
 
I'm a bit off with the long legs on my very large tiger prawns goodness knows the effect the legs on these things would have on me!
