What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: left over tuna melt with petit pois and sweetcorn followed by Greek yoghurt and raspberries.
Mid afternoon: coffee chia pudding and black coffee.
Dinner: mature cheddar and mushroom omelette with leafy salad and two cherry tomatoes and sweet pepper followed by SF jelly, cream and LC chocolate granola and a small piece of Lindt dark choc Easter egg.
 
I run the back of a knife over it to make a grid so that it snaps into squares - well, when it feels like it. Tasty though - and a great talking point at tea parties.

Mine is so fragile I can't see that being worth it. I did put cheese on one batch, a creammmmy buttery Vermont Creamery Cremont. It was very good. I just spread it on and let the little chips that fell away serve as the top halves of the bigger pieces. Oh man I am so glad I tried those! There is no way I could stop at just half or a quarter of that, not currently! I think I must have been really hungry.
 
Monk Fruit Classic sweetener does the trick if the rhubarb needs sweetened but at the moment the thin, pink rhubarb (as Chook illustrates) doesn't really need it. If I make a low carb crumble with it I add strawberries which sweetens it.

Maglil55 I haven’t heard of that sweetener. I’ve just found one online supplier here, but where do you buy it in the uk?
 
Long day today, didn't get home until 7.30pm. A drive over to Yorkshire to spend the day in prison! No need to worry, I haven't done anything naughty....it's part of my job! I do love telling people that I'm going to prison though! I didn't make a great choice a lunch - I should have skipped it and had a coffee. No healthy options on offer, but I felt obliged to have something as I was a guest and they proudly offered to buy my lunch!

B: Strawberry and lime chia pudding with almonds. Black coffee.
L: Cheese and ham panini for me (doh!). Coincidentally, Mr B had a cheese and ham DD roll followed by 85% choc. He also had an almond milk cappuccino I'd afternoon.
D: Nothing for me, apart from a 85% HC baton. Cheese and ham omelette with salad for Mr B, followed by HC baton. Decaf CWC.

Seems this DP thing is endemic. Pandemic? Epidemic? Trans-Atlantic anyway.
Bfast whole avocado, 1/4 cup or less pecan halves
Second bfast started after 2 hr mark DWGoatM, chunks adding up to one 90% choc square, while sitting on sunporch with feet well elevated. BG rose .9 after first, and fell by 1.2 after second. There is no rhyme nor reason to any of this!!! What to eat? Try what's worked 2 days running. Nope, didn't work. Go for broke, have chocolate later, I expected bg to rise further. Nope, fell to nearly normal number. **** shoot is what it is. However, it seems that I do have the hang of the <2 mmol/ml rise down pat. This is great. Now to get the starting numbers down and I'll have the tide of the battle turning in my favor.
Lunch @dunelm 's crispbread, 3 batches, one with cheese. I was not the least bit hungry after ballet class last night, so ate a small buttered piece of my brown bread to go with pills. Could be why I turned out to be so hungry this afternoon. Just did 2 hr test on that cracker/cheese lunch. Rise of .2. Tomorrow it could be the decimal moved one place to the right and I'd have no idea what to make of that.
Supper will be. Hmmmm. Leftover very wilted spinach that I didn't eat last night, hm dressing. Maybe the leftovers of the egg salad (your egg mayo, sounds like) Mr ZF didn't fit into his sandwich last night. Not currently hungry and supper is supposed to start in 10 minutes. My Kroger hasn't had the pre-cut and-washed celery sticks I buy for ease, and I am jonesing for that crunch!
 

I agree - first couple of times I scored it first so I could break it into neater crackers but I invariably ate the whole thing anyway so there didn’t seem much point. I think it looks very artisanal this way!

I have managed to miss this magic micro cracker recipe - does anyone have a link?
(Dog is currently trying to bury a bone under my foot, so not able to conduct a coherent search!)
 
Lunch yesterday: corned beef sandwiches.
Dinner: Nile Perch fillets, salad.
Breakfast: Cheesey omelette, bacon, tomatoes, reheated spudlite.

Drinks: Black coffee no sugar / sweeteners, water.

For new posters in this thread. I eat low carb bread called Herman Brot Low carb bread, the spudlites are lower carb potatoes.

Has anybody made gougère with almond or other flour not wheat? I haven't made it in 35 years, just ran across the recipe card while looking for a birthday pound cake card. All of it but the flour and milk (could be cream, I suppose...) is LC! It's a pain but would be worth washing dishes after.

Yes, i’ve had CMT for ages.
But i was away from home when everyone swapped their CMT ids and I thought ‘I’ll collect them all when I get home’. But this thread moves so fast, I never found the pages again. Lol

I thought you did. My CMT name is the same as on the forum so I’ll be easy to find. I’ll need to add you to my circle too so you can see my stuff. What’s your cmt name?
