What have you eaten today? (Low carb forum)

The cracker is very simple; like making a scrambled egg. Throw 2 ingredients together and cook them lol !
I found a safety measure for my microwave that could come in handy if anybody runs into my "temporary shorting out of microwave" scary problem. I think as the paste cooked, it lost all its water, and the microwaves, they be knowing that and turn off. Or something.
Anyway, I put about 1/3 cup water in a small bowl in there with the paste, nuke 4 minutes, remove water, finish for 20 or 30 seconds depending on how crisp the cracker was when I removed water.
Good flavoring is smoked paprika. I bought a jar of that accidentally after Christmas on closeout, and have used more paprika since January than in the past 10 years! I'm a fan.
 
Learned a lesson. Made a batch of the flax crackers with a little erythritol. It burned. Just like sugar, looks like burnt sugar, smells like burnt sugar, tastes like burnt sugar...wasn't quite what I had in mind! No more of that nonsense.

Silly me. I had a cup of low carb hot choc at 6pm last night. and the caffeine got me.
Was awake til nearly 3am, and am now a walking zombie.

That was a lesson I learned ages ago, and then conveniently 'forgot' yesterday.

Bed 6.6 FBG 7. Still got DP so had a LC breakfast to correct. School half day so I have a portable lunch to make for No 1 (No 2 gets his carry out lunch at school). Eat some of it in the car as we go straight to Lego Club and to change the library books. After a cold start it's starting to warm up.
B. Welcome back @shelley262. Inspired by your train breakfast I've just had creamy scrambled eggs with smoked salmon and parsley. My usual TAG with ADOC.
L. Will be nothing school pick up, Lego Club and library ensures that.
D. No contest! My Italian tripe. It's even better second day although I may need to cool the chilli a little with some lime and/or Fage 0%.
Will also have the last LC creme brulee.
I really need to get more Dr Almond bread on the go. Will try to fit it in once the boys go home. Also been busy with the ironing. Made the mistake of getting behind with the bed sets while the place was upside down - done 5 so far but still a few to go. Nothing so soul destroying as King sized bed sets!

I like burnt sugar and mint.....and LC fish and chips......and tripe (which I'm having tonight).
 
Don't think it is as simple as Almond flour. I suspect a mix would be required. I would use a mix of Almond flour, golden milled flaxseed and a small amount just a few g of whey protein isolate (or you could sub psyllium husk). 1/2 teaspoon of xanthan gum would stabilise it. I'd suggest the Almond flour and flaxseed should be very fine milled (just from my memory of these). You're right though everything else is OK. Instead of cream how about almond milk? I'd also be inclined to use gruyere cheese and a wee bit of your new favourite paprika wouldn't go amiss.
I've come around to the idea that a mix works far better than just Almond flour or coconut flour. Texture is immensely improved and my milling attachment for the Kenwood is a godsend. Mind I love the dicing attachment too.
 
I'm absolutely and completely bored with all this continuous local election news (especially as we didn't have an election here). Like the outcome was a surprise..

On a positive note - I found myself a Jaeger jacket (new with tags) for £6 in a charity shop today which fits beautifully. Woo hoo

Today....

Breakfast: Egg mayo on crispbreads
Lunch: cheese (as usual)
Dinner: Waitrose special offer BBQ meats- steak, burgers and something on skewers - all with different flavours - plus a green salad and Mr C's famous sour cream, green chilli, garlic and chopped fresh coriander dip
Dessert: Strawberries and cream
Drinks: BDC, SSW, RW
 
That was a bargain! What gets me is the media acting all surprised Labour lost seats too. To me the LibDems seemed like the next safe haven. People do use council elections to send a message.
 
BTW @maglil55 I looked but I couldn't find that paprika mozzarella in Asda in Hessle (nr Hull) today.

@zauberflote - I'm looking forward to hearing about your gougere experiment. Mushroom, cheese and bacon flavoured soya bits gougere used to be our favourite meal for me and my daughter when we were veggie (many years ago) and just thinking about it makes me feel hungry.
 
Do they have a halal section? I've got a load of supermarkets nearby and I find they stock according to their customers. I have 2 Morrisons nearby and I vary which one I go to depending on what I want as the veggie selection is far better in the one where there is a large Asian concentration. Same with Adsa , the one nearby has quite a large Asian community.
 
Hi all

Had to look up gougere - never heard of it.

Carnivory continues. Lunch was 3 rashers bacon, 2 fried eggs and some grated cheese at the cafe near work. Dinner was slow cooked lamb shoulder shank. The meat juices are getting more intense by the day and are delicious. 3 days in and the erratic BG of late has now flatlined and dropped back to where I expect it to be.

@Goonergal I had to look up gougere too. Glad the carnivory is going well, and your bg levels have dropped again.

Today I had a scrambled egg for breakfast with a buttered flaxseed bun. 2 mugs CWC
Lunch: mackerel in oo with 1/2 avocado, kimchi and extra avocado oil and acv. 2 mugs TWAM
D: Leftover IP tikka masala sauce with some king prawns that were taking up too much space in the freezer. Broccoli stir fried in ghee with garlic, cumin seeds and fresh chilli. 1 HC 100% baton afterwards and 1raspberry gin with raspberry Dash beforehand.
 
So this being the silly names thread - cf MM - today was (only slightly) flatulent Friday. Day 2 of no Metformin began with TWAM, about 5 pints. About 11.30 I had @dunelm's flaxseed cracker with butter (I like flaxseed) and a chicken leg from a pigeon chicken cross. Walked the dogs for about 80 mins then had a 0 carb and cal electrolyte drink. To town for viands where I drank a Wait and see rose latte. Home for a Mortadella and Jarlsberg sandwich (can that ever be a thing?) Evening meal was a Salmon fillet (2 bones found but I have disciplined the staff) halloumi (Milky's Hallum) chips, watercress and rocket salad and h/m mayo. File under all safely gathered in and stowed away.

No, they didn't - I couldn't find any ethnic foods except for a small section of Polish foods. We won't go there again, it was a weird supermarket with quite a small real meat section.
