What have you eaten today? (Low carb forum)

Good morning everyone! I hope you are all having the lovely sunny (but cold) day we are having here.

@Annb - Ouch for your fall. I had a fall a while back which has completely put me off going out of the house on my own. Good idea to see the doctor if you think its more than bruising.

@ianpspurs - that bread looks nice! I haven't experimented much with baking low carb bread mainly because I'm lazy and the few times I have baked things they have been disappointing (understatement).

@DJC3 - my daughter (who thought she was musical) first tried the flute (age 6) which mostly sounded like a small furry animal being trodden on. The second attempt (age 8) was piano - my suggestion - luckily we didn't have one at home. She loved playing it but six months the piano teacher said she thought it was a waste of my money because she couldn't/wouldn't concentrate and just wanted to make up her own tunes - so that was the end of that!

Anyway, back on topic!

Saturday 14th December

Fri bed: 7.2

Sat FBG: 7.5
Breakfast was a chaffle with sugar / carb free syrup, black coffee
Diet pepsi with tablets
2 hours later: wasn't at home and didn't have kit

Lunch: Wasn't at home and didn't have kit
Cup of black coffee and small individual cheese portion from M&S
2 hours later: 5.6

Dinner: 5.6
Roast dinner: Quorn fillets, roast carrots and parsnips
sprouts, broccoli, cauliflower and gravy
2 hours later: 7.8

Bed 4.9

Not enough water today. Too much red wine and Prosecco (Mr C's 60th birthday). I did try a sip of the Jack Daniels but it really is :hungover::hungover::hungover::hungover::hungover: and so very sweet.

@SlimLizzy - mine was the Moon Cheese which you can do with any hard cheese (and add flavour like chilli, garlic salt etc).

https://www.lowcarb-nocarb.com/wp-content/uploads/2017/12/Cheese-Pops1.jpg

It was @Brunneria that added the brie crisp. I think it was as simple as chop it up and microwave it but I can't remember the timing.

@Chook - I get what you are saying about car computers. That is what(it seems) caused my 5.5 month nightmare with a car that was only 11 months old when it started. A faulty temperature sensor that caused the whole computer system to go "oh no, hold it, don't like this, let's just shut everything down".

@DJC3 & @shelley262 - I watch the Crown when Hubby us out somewhere but I think I need to start again to be honest. I'm disappointed I missed it's a Wonderful Life yesterday. @DJC3 - have you tried the Skinny Bread with yeast yet? It still makes me smile.

Saturday - 7 December. Bed & FBG was 6.4. Still lurgy infected but did an online shop so I didn't have to go out.

B. TAG with ADOC.
L. Slice of LC toast and pate.
D. 2 trout fillets, seasoned with chilli and wilted spinach, veggie chips.

Sunday - 8 December. Bed 6.2 FBG 6.8.
Still getting surges thanks to the bug but it drops back again.

B. TAG with ADOC and felt human enough to have a LC toastie with ham, cheese and a slice of tomato.
L. At swimming with the boys, son had fallen victim to the lurgy so I didn't have to drop him at the gym.
D. Usual campari and soda. Rib eye, veggie chips, mushrooms and a green mix. DGF brownie and raspberries/cream later.

Somewhere in the mix of the last few days I picked up my new specs and can see clearly again! Yes, I did go to Specsavers.

@maglil55 - just talking to an old friend about car computers and the problems they cause. They've had their brand new for retirement car in the workshop at least once a month for computer problems (its still under warranty but thats not the point, its the inconvenience). She said that back in the day she had a Citroen 2CV inherited from her Mother who had bought it from new in 1950 and it never went wrong enough to need a proper mechanic, anything that needed fixing or changing could be done easily by her husband or son. She regrets getting rid of it now she's got this new model Citroen which is, of course, designed NOT to be fixed by an amateur mechanic.

So, 2nd try with air fryer and first success (at least visually). We wanted one with a rotisserie to do chicken and this is the result of our first try

Not feeling any love for or trust in results of LC eating and testing since Friday's results but this will, hopefully, help me to regain a little more hope. I seem to be waiting as long as Spurs to win something. Maybe the January window will work for me.

Ooooh,........ I just put out rotisserie "bits" for the AF into a slightly less accessible cupboard on Saturday, but I think that image has reawakened to curiosity factor. It does look good.

I must say the AF seems to be incredibly well suited to chicken. Sadly, chicken for MrB is very much a "so what" meat. The other day when he was golfing, with a dinner afterwards, I took out a handful of drumsticks that had made their way home with some thighs, when thighs were really what I wanted. I just seasoned them well, put the in on the chicken setting, and stuck the meat thermometer in when they looked about right and I have finished the other things I was doing.

So crispy on the outside and succulent on the inner.

That chicken does look good @ianpspurs . Now I want an air fryer with rotisserie function!

Bit of an odd eating day today. Having gone to bed extremely early last night, up at 5am marinading meat for 2 meals and baking cakes. Very hungry by 9am so some extra thick double cream and almond butter. Supplemented by a 24g bag of Serious Pig snacking cheese.

Dinner was slow cooked lamb breast which had been marinated in olive oil, lemon juice and zest, pink Himalayan salt and thyme. First time eating lamb breast. Won’t be the last AND I managed to get the slow cooking right on the Instant Pot! Dessert was a small piece of flourless chocolate cake - made one for Christmas and a mini one for sampling today using the 100% Hotel Chocolat drops found on my kitchen sort out yesterday. Very, very rich (and delicious) so only a tiddly bit needed. Based on this recipe: https://lowcarbyum.com/keto-flourless-chocolate-cake/

Thanks for posting and helpfully including the recipe for the chocolate cake. Both dishes look fab...I can almost smell the lamb with those flavours. I only get away with a lamb chump chop sometimes as Mr PM doesnt like lamb other than curried.
He is at the Emirates today...is it all over?

Oh dear! Mr C is a Gooner and will be watching the game at work. He'll be upset.

B=tea; mid morning = 20 gms applewood cheese and 5 gms pork scratchings - advent calendars; L= rotisserie chicken, sauteed savoy+onions, mushrooms and gravy - 0.4 rise @ 2 hrs; Mid aft = chunk of applewood; Eve= 1/2 Dr Almond ciabatta with a 1 egg mayonnaise and some lettuce leaves drizzled with EVO. Lots of tea and a cinnamon Nespresso - (coffee is an experimental re-introduction). Quite dispiriting atm but hanging on in quiet desperation is the English way. Hugs to the gooners or spouses thereof - no really. You need Poch!

Evening all.
CWC this morning then late breakfast 1egg, 1 rasher, mushrooms and spinach.
Dinner: Roast pork ( and crackling of course) roast sprouts, celeriac dauphinoise and broccoli. Few strawberries and cream afterwards.

I have had a mystery ailment for a few weeks and a I’ve been racking my brains for a cause. It’s what is commonly known as hives - really itchy little lumps- they appear in random places, arms, legs, trunk they itch like mad for a few hours then disappear and pop back again in a different place, they are driving me to distraction. Today my daughter informed me that although rare, adults can suddenly become allergic to eggs, and the main symptom is..... hives!!! I wanted to cry ( a bit Over dramatic I know) The only way I’ll know is by giving up eggs for a week or 2 which will be SO difficult. I’m horrified at the thought that that’s what it might be ( have already considered shampoo, shower gel, washing capsules etc etc) booo!

@maglil55 hugs for the lurgy. I didn’t get to bake the skinny bread this weekend but it won’t be long - I’ll keep you posted.
@ianpspurs that chicken looks wonderful. Just like a perfect rotisserie chicken.
@Chook kudos to your daughter for ever having got a peep out of her flute in the first place. I tried with my daughter’s and couldn’t get a sound at all.
@Goonergal thanks for the reminder about lamb breast, I haven’t had it for a while, such a tasty economical cut.

Sounds horrid. Really hope it’s not the eggs.

Oh heck - Fingers crossed for you. Eggs are a bit like milk - they crop up everywhere!

Did you have your flu vaccine this year? Did anything happen after that? (Some vaccines include eggs in the alchemy - similarly bananas, of all things!)

Shingles is usually only one one nerve route, and most usually above the waist. I did a bit of enforced reading on it a couple of months ago, when it came to visit me.

(Of course, there are exceptions to every rule.)

Well, I had a bit of the frittatta this afternoon - about 4 o'clock. About 1/8th of the whole thing. Tasted fine, but it was quite small. So I had some of the cheese I had put out - about 1/4 of a garlicky Boursin and a few slivers of Leeurdamer. But, silly me, I had made some soda bread to go with the minestrone, in the absence of any other kind of bread, and I had to check it - too little salt really, although I did follow a recipe but, oh boy - I've just (7.45 pm) stopped feeling sick. It was half wholemeal and half white. Never had that reaction before. Still some of the loaf left, but that will go to No 2 son's chickens. The rest of the soup will do for his meals (he eats anything and everything, except sweet things, especially if it would otherwise go to waste - or has even gone off) and the chocolate bites and trifles will be welcomed by the kids.

Had some tea today - need to get more fluids in - but no more food, I think.

Shoulder is feeling a bit better today and I am walking a bit better this evening.

No nothing after flu vaccine but I think that is quite a low egg protein vaccine. I think it’s a chick embryo one and egg whites tend to be more allergenic. Interestingly my mum never let me have the flu vaccine when I was younger - she was a nurse and insisted everyone in the family had one except me. I think she said it was because of the eggs but I’ve always eaten them. Odd but it’s too late to ask her to clarify now.

I dont think it’s shingles, the positions are too transient and random and it’s not really a rash just itchy lumps, but thanks for the lateral thinking. I will give up eggs and see what happens - no mayo! I might be reduced to that vegan alternative made with chick pea juice. Has anyone tried making it?

Yes, I have things I wish I had clarified with a parent too.
