What have you eaten today? (Low carb forum)


Whatever you're frothing, start with it very cold. That makes a difference. In my view full milk is about best.

I tried some Channel Islands unhomogenised milk and it was just, well, odd. Very odd.
 
Morning all. Busy day yesterday and didn’t get to post.

Still way too much being eaten here, including 90% chocolate mixed with cream for breakfast something to do with work stress, I reckon! @maglil55 I’ve has the Lidl 95% before - it is closer in taste to 100% than 90%. Theoretically less easy to over eat. Theoretically.

Lunch was leftover chicken from the weekend’s rotisserie, with one of my cheese Easter eggs and some pickled onions.

Dinner was yummy. Best IP pressure cooked oxtail yet. Did it for a bit longer than normal. Result.

 

That oxtail looks fab.

I always think getting a new gadget is a bit like making a new friend; you have to test the boundaries and find what makes things tick.

As well and yours and @maglil55 's rotisserie chickens, there have been a few on one of the FB foodie groups I belong to. The rotisserie envy is growing, so I have a feeling it won't be too long before we unwrap those accessories and give it a whirl.
 
What horrible disease this Coronavirus is, its so indiscriminate! My husband's best friend of more than 20 years died of it last night after being in hospital for just three days. Paul was a very fit and healthy 55 y/o married with children and grandchildren. No co-morbidities. So sad. Please stay safe everyone.


Breakfast: Usual omelette with carb free syrup
Lunch: Actimel and bit of brie
Dinner: Mixed vegetable curry
 
Some of of my online order was substituted, got a bag of sprouts in place of broccoli.

Either Black Mario or a friends dog will get them, as my partner and I detest them (think 1950's school dinners).


Dogs + brussels sprouts = very very windy
 
I am so sorry, that is very sad for all his family and friends and a shock. There is some conversation on breakfast tv about some people leaving it too late to go into hospital but then again how do you know.
 

So sorry to hear of your husband's friend's death. There is so much that is still unknown about this disease which does seem to be indiscriminate. All we can do is try to keep everyone safe and hope and pray that its effects are not going to be as bad as forecast. My sympathy to your husband and to your friend's family.
 
Oh, @Chook - what a tragedy. I'm so sorry for your loss and the utter devastation the chap's family must be feeling.

It's a vile thing, that's for sure.
 
BG this morning was 6.5 - not low but not too high either. Should have thought that this might be a low day.
Breakfast - 2 sausages and 2 small fritters with grated veg in them.

Heard from my Ms V that she had to attend a meeting (online presumably) so couldn't do my shopping today. No real problem with that but I had ordered things from the butcher for 1 o'clock today. So I decided it was too late to change the order time and went for it myself. Also decided to see if the fish shop was open (it wasn't) and went into a small grocer's in a garage in Stornoway to see if they had pasta for Neil (yes) and if they had any dark chocolate.

Before I went out, I wasn't hungry really, but decided I'd better eat something so had 2 RyVita and Marmite. Just as well really. While I was driving, I felt a bit odd - eyes being troublesome. But I had had some carbs, so it shouldn't be a problem. Found some dark chocolate - not very good, Montezuma's only 54% cocoa, but thought I should, and had 3 pieces. Didn't feel much better but I got home, by which time BG was 5.2. It must have been down a bit and come up again due to the chocolate. Didn't reach the shaky stage, so although it may have been in the 4's, it wasn't actually in hypo territory. Should have tested before I went out but I was rushing. Recovering slowly - had a bit more chocolate, now feeling sick. Had some tea and some pills that should have been taken earlier. Heartburn now. Anyway, all's well.

Tonight I will have some salmon, fried in butter. Some salad - still have some lettuce and some tomatoes, that'll have to do.

I have some grated vegetables left, so I'll make some mini frittatas to keep for tomorrow. Chopped up some more vegetables last night to put them in the freezer so they don't go off. Must get that done. The butcher supplied a lovely half leg of lamb (lower half) and some lamb's kidneys. Kidneys for tomorrow's breakfast as well, then, with some bacon.
 
I just received some water chestnut flour in the post - not sure how I will do with that, but we can but try. Does anyone have any recipes using water chestnut (singoda) flour? Or any thoughts on how it behaves in cooking.

Edited to add: I'm also waiting for delivery of chestnut flour and chickpea flour. I think I should be OK with chickpea flour, not sure about the chestnut flour.
 
Thursday is now established as Fishfinger Day (TTD giant cod ones) so that will be supper with brocolli. Breakfast was slice Brown Nimble toast, butter, lots tea.
Lunch was buttered cheese scone, last of the coleslaw, water.

Picking up my Farm Shop order tomorrow which is always exciting. I must make sure to continue this if/when we get to the other side.
 

Im really sorry to hear this Chook, you’re right it’s horrible and the indiscrimination makes it so very scary. It’s so sad, my sympathies to you.
 

So sorry to hear that @Chook. Sending hugs and condolences.
 
Didn’t post yesterday, we had some of the local fish for supper. It was either pollock or whiting, not sure which, but very nice, baked with veg.

Today black coffee in the morning
Lunch: smoked salmon and scrambled eggs
Dinner: DD Keto cabbage stir fry ( the toasted sesame oil and wasabi mayo really lift this meal) then a DGF cake. So far today I’ve avoided the chocolate and nuts but the evening is still young.

@shelley262 what a relief about your mum and the Sainsbury’s slot, glad she is still improving but hugs for stress you and your son are feeling.
@maglil55 I agree about the local stores and just hope people remember them when this is all over.
&Goonergal hugs to you for the work stress and chocolate - I feel your pain there and I don’t have work to blame!
@Annb I had no idea you could get water chestnut flour - I’ll be interested to see what you do with it.
@PenguinMum Soda stream arrived!! After another strongly worded email from daughter, they sent a personal and very apologetic response and it turned up this afternoon - I’m very happy! Your farm shop sounds wonderful, like you say a shop for the two of you is worth the extra expense and I bet it’s wonderful quality?
 
Evening all.

More chocolate and cream today - not much left and then I need to resolve not to buy it.

Lunch was hurriedly put together as had back to back meetings all day. Smoked salmon and cream cheese.

Dinner was an experimental carnivore pizza made in the new air fryer. Tasted fine but technique needs refining - part cooked the base, but when toppings were added (chorizo, salami and pepperoni), slices of meat started flying around inside! Think they need weighing down with cheese next time.

@DCUKMod definitely recommend the rotisserie function.
 

When I have done potential flying foods, I have put two shelves very close together, to inhibit it. I have also used a shelf as a weight, directly on streaky bacon (making a sort of, ish version of the M&S Crispy bacon).
 

I've once found myself in the wrong place at a time I should have been collecting butchery. I rang grovelling, confirming I really wanted my meat, but couldn't get there until next day.

Lovely people they are, just told me they'd put it in a fridge for me and it'd be find to drop in next day.
 
Hi all another wonderful sunny day and later managed a lovely walk. I’ve got lots of paid work to catch up with over next few days so made sure got out today plus autistic son not too well today but managed to get his provisions to him and settle him a bit. Walk was de stressing! Focused on the water and the wild flowers - all glistening in the sunshine.
Early breakfast bacon and egg - usual one of each
Lunch too busy
Dinner slow cooked beef casserole, roast celeriac and sprouts with glass of red wine followed by lc raspberry swirl choc brownie with yoghurt and cream.
Planning coffee and one montezumas 100% peanut butter mini egg later - I enjoy spreading out my treats a few left yet - yummy.
@Chook my sympathies for your OHs loss of his best friend it’s all so sad. Saw my neighbour today who lost her Oh very quickly his funeral is next Wednesday so so sad this illness........
Some lettuce seeds arrived today hoping to set some this weekend - hope for the future. My rhubarb too is doing really well must get some cooked for puddings.
