What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and Birthday cake carb killa bar
Late Lunch: 3 small slices of ham followed by Greek yoghurt, orange chia pudding and macadamia and coconut keto granola.
Dinner: gammon steak with roasted mixed veggies (last of the fresh veggies before supermarket delivery Wednesday, so a random selection!) followed by SF jelly, cream and LC chocolate granola.

@DJC3 & @Goonergal - the chicken was indeed good. The peri peri rub gave it a lovely colour as well as a bit of heat. It was lovely and moist too - I'm assuming yours was too @Goonergal? Looking forward to doing kebabs as well.
PS I did succumb to 2 squares of 95%.

Yes, chicken was very juicy. Had some cold for dinner with cheese and pickled onions. Thought of a use for the rotating basket - onion rings with a ‘batter’ of eggs, ground pork rinds and Parmesan. Need some Parmesan! Do you use a ready made rub, or make up your own?
 
@Chook & @Annb - do you reckon a lurking bug is sending your BGs up? That's what was odd with my illness - BGs remained quite stable. Do take care x

I keep having periods of time (2 or 3 days at a time often) when my BG is high, then it drops down again for a day or so and then up again. Doesn't seem to be any rhyme or reason to it.

Breakfast nut granola CWC, scrambled eggs.
Lunch. Ham, salad, cheese. Tea and a naughty indulgence panna cotta.
Dinner sausages, mushrooms..cauliflower rice, half a tomato.few of MrSlims chips lit if fizz and either panna cotta.. wine removed inhibitions and I ate all of the chocolate rabbit.
Mr slim opened another bottle ; but I didn't fancy any more. Checked BG thinking high but was 5.5 bit more digging. later 4.9. Amazing what exercise can do.

I sometimes use Nando's if I can get it but I make my own too. You can scale it up and it keeps for about 6 months in a cupboard. I keep it in a kilner jar.

2 tablespoons each of

Paprika
Garlic powder
Onion powder
Ground coriander

1 tablespoons each of

Salt
Dried oregano
Dried parsley

2 teaspoons each of

Ground ginger
Ground cardamom

1 teaspoon each of

Smoked paprika
Cayenne pepper

If you want to increase the heat increase the cayenne - anything up to 1 tablespoon (but that is seriously hot).
 
I have just put a order in with Coles priority service, mainly to get stuff that we cannot get from Woolies.

Managed to get some disinfectant, toilet paper, paper towels, eggs, frozen veggies.

There were a lot of delivery windows for tomorrow (Wednesday), and got a 9:00 am to 15:00 pm one, delivery is outsourced to Airtasker for some reason.
 
Evening all. Very quiet in here today.

Blood glucose is really not playing ball at the moment. Can’t decide whether it’s the dregs of this virus or something else.

Had late breakfast of small ramekin of extra thick double cream and almond butter.
Lunch was fried mince with a few fried onions, 2 fried eggs and a small amount of grated cheese. All mixed up with some of the mince nice and crunchy. Yum.

Dinner was air fried chicken wings. Wings were marinated in olive oil, lime juice and salt and finished with a drizzle of hotel chocolat cocoa and chilli finishing oil. Then a few Montezumas 100% eggs with peanut butter.

Loving the new air fryer. Much easier to organise the food and easier to clean than the previous one.

L: LoDough wrap with cream cheese, smoked salmon and chopped h/b egg. A DGF blueberry and lemon drizzle cake
D:Chicken BLT salad with aoli ( crumb on the chicken with inspiration from @Goonergal - Awfullyposh pork crackling, blitzed and mixed with Parmesan then some almond flour and mulled flaxseed too) followed by DGF brownie and cream. There will be a Gin and soda later. ( still no soda stream @PenguinMum ☹️)
 
@Goonergal hug for your bgs mine are generally higher overall not sure if it’s the stress or extra vit C I’m taking as a precaution or a mix of both! Gather vit c can raise bgs.
@DJC3 lets hope your birthday soda stream gets there soon
Breakfast two boiled eggs
Dinner lemon sole in lemon butter with asparagus and halloumi chips followed by lc raspberry swirl choc brownie with yoghurt and cream.
Later planning decaff coffee and one montezumas 100% choc peanut butter mini egg - a few more yet left of my much appreciated treat.
Managed to get out for forest walk and great to hear my mum is still improving slowly. Her local council also rang her today to offer help she of course said she didn’t need it “as I’ve got my daughter “ wonder if she told them I live 120 miles away and also care for autistic son - doubt it! Still she wrote their number down!

I think yours should arrive before the end of this week. We have noticed all deliveries, mail and vans, are getting slower. Fingers crossed for you. How is your volunteering going?

I really hope it arrives soon. I do have some Elemental gin, a bottle of raspberry and a bottle of spiced apple, both of which I like neat, but a plain G&S is the perfect sundowner in this lovely weather.
Volunteering is going well so far - meds deliveries on Wed and Fri and I pick up neighbours shopping at the same time. The old couple in the next village just ring when they have a list ready. It was a bit awkward last week as they added £5 to the money they transferred to me ( a little something extra for going!) I was horrified but decided the best thing to do was thank them and accept it with good grace but make it perfectly plain that they weren’t to do it again. The old chap ( who is originally from Yorkshire) just said grufffy ‘I’ll think on it!’ They have 2 mini Schnauzers so we had an instant connection ( through the window)
Are you managing to get shopping delivered?
 
Hi all just wondering is this low carb it's salmon and haddock fish with cauliflower rice with green beans and sprouts will test my sugars In 2 hours to see my numbersView attachment 40382
Looks good, and welcome to the thread. It seems people have different tolerances to carbs so you are absolutely right to test in 2 hrs and see how it looks ( aim for less than 2mmol rise) I found out recently that green beans cause a higher rise than I’d like so Ill need to be careful in future. Other people seem fine with them.

Late Lunch: 2 x Babybels followed by Greek yoghurt, coffee chia pudding and LC chocolate granola.
Dinner: ‘Spaghetti’ carbonara (made from Explore Cuisine edamame ‘spaghetti’) followed by SF jelly, cream and macadamia and coconut keto granola
 
Bacon, eggs and mushrooms for breakfast. Didn't satisfy my hunger as much as I expected so I had a couple of RyVita with Marmite about 1.30.
Dinner was a small piece of haddock in a cream sauce with steamed broccoli and celeriac mash. Then some Greek yoghurt (about 70+ g).
BG is still high and I don't suppose I helped much eating the RyVita but needs must. Nearly time to check my BG - 90 minutes after injecting insulin and eating.

Edited to add the last sentence because the laptop took it into its head to send the post before I was ready. Very flighty mouse.
