What have you eaten today? (Low carb forum)

No 2 son was just in with the post and shared with me a funny story , which I thought might brighten everyone's day. So here it is:

Em had to have an emergency appointment with the dentist yesterday. She wasn't happy about going, but she had a bad toothache. Once in the chair, the dentist filled her mouth with the tools of his trade and was ready to do whatever he had to do when she said (as well as she could with her mouth full of metal) "Wait, wait, I have to tell you something." So he took all the gear out again and asked what she had to tell him. "If you have to have a leg amputated, you can still feel it itching" says the bold Em. As a delaying tactic, it worked, but not for long!

The butcher also supplied 2 hefty beef short ribs today. There was a recipe on this forum for short ribs, I'm sure. Was it Goonergal who posted it? I do have a Gordon Ramsey recipe, but I'm not keen on the idea of so much wine, or indeed what I would replace it with. Could just be beef broth but that might be too bland.

Bit of an odd day foodwise.

Looked like being a long day at work, so had breakfast of 2 fried eggs, 4 small rashers streaky bacon and some grated cheese.
Late morning a pack of Awfully Posh pork crackling and a late lunch of M&S Serrano ham and manchego cheese rollitos.

In between some DGF double chocolate brownies and a little cream - a little because that was all that was left

No dinner as still full.

Very glad it’s Friday and some long walks planned for the weekend, especially Sunday when it’s set to be sunny and warm.

Evening all. I’ve been very hungry today for some reason. Couldn’t wait until lunchtime so had bacon and cheesy scrambled eggs around 11:30. Then DGF blueberry and lemon drizzle cake with cream and about 10g Montezuma’s.
The jar of almond butter is now empty so I’ve obviously polished that off too at some point.
Dinner was the DD version of tuna bake ( aka casserole ) which is popular here and very simple. Had the rest of the Montezuma’s 30g bar with a cup of tea afterwards.
@Goonergal hugs for the long working days, enjoy your weekend walks.
@Annb I’m glad you got all the food you wanted, I loved Em’s delaying tactic. Perhaps I’ll try it next time I go.
@Chook it doesn’t surprise me about MrC: my husband is the same - I wondered why our last dog Tilly was putting on weight until someone told me that when they went out for their evening stroll, my MrC would stop off at the pub for a quick pint, and also buy a bag of mini cheddars which he shared with the dog. So did everyone else in the pub!

Stuck at PC doing my paid job today but made progress. Will be doing same tomorrow. Helps that it was cloudy and fairly cold I’m much more able to cope being stuck indoors when weather not as tempting looks like a nice sunny evening though.
Breakfast one slice of bacon and double yoked egg on half slice of lc bread toasted
Lunch vintage cheddar, Shropshire blue and celery sticks
Dinner wild salmon in lemon butter with asparagus and celeriac chips with glass of dry wine followed by lc lemon and lime jelly cream.

The May edition of "Fresh" magazine is out, some good recipe stuff in it if you want to decarb them.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and White chocolate phd bar
Late Lunch: 2 x Babybels followed by Greek yoghurt, lemon chia pudding and LC vanilla and raspberry granola.
Dinner: Prawn cocktail, coleslaw, leafy salad and Itsu seaweed thins followed by SF jelly, cream and LC chocolate granola.

Could be worse.... many years ago I had a teeny tiny Yorkie who, if taken anywhere near a pub, would throw a complete tantrum if he wasn't given some beer (any kind) and a share of a packet of crisps (had to be cheese and onion). He, on his miniature majesty own, was more trouble than these three put together.

Okay.... Jersey Royal potatoes in melted butter .... they tasted every bit as good as I remembered but had a bad effect in BGs - pre-dinner 4.8, 2 hours later 7.9, 3 hours later 7.8. Not ideal - but possibly worth it for a once a year treat.

Breakfast: Cheese and mushroom omelette, bacon, tomatoes.
Lunch: Nothing, was not hungry.
Dinner: Toasted sandwich, not very hungry.

Drinks: Black coffee, water.

Online shopping is back to it's old self, no substitutes, shortages, etc. managed to get ahead with toilet paper, paper towels, tissues, etc.

Finally managed to get some Dettoll disinfectant for the first aid bag, got a couple of litres of heavy duty stuff as well.

Forgot to post yesterday.
Breakfast was usual slice HiLo toast and gallons of tea.
Lunch was the remainder of the celery & broccoli soup. supper was h/m chicken curry and cauli rice. Two gin & sodas beforehand.

Todays lunch will be scrambled eggs as I need to use them up.
Supper will be lamb chump chop with fried mushrooms.

@maglil55 and @Annb there was an interesting article in The Guardian yesterday about the long tail Covid that many are experiencing which can go on for months. It is still on line today. I would tag it if I knew how!

Phone call from my sister. Was informed few days ago that she probably has the virus and is very ill. Massive stress attack, got very tearful. Called but no reply, didnt want to pester, she might be sleeping, so Mother has been giving me updates every day. Today sister says she is better. Had been ill for weeks before anyone told me. Last time I spoke the her was two weeks ago. She didn't mention being ill. That is typical of her.

Lunch,( very late 3pm, that cake is filling) was going to be avocado, tomato and cheese, but avocado was a bit over, so ended up as Tomato, cheese and avocado, with lettuce and 2 slices of ham. Water, made tea, but only drank a few sips.
Had the tea, cold, much later.
With the driveway more or less cleared, turned my attention to the grass, it would probably grow through the mud deposited on it, but i dont want all the rigdges. so flattend that out as best as could be. Small area, next to the drive. Eight barrowloads of mud removed. Started to shift mud from the stables, but got tired and hungry, so went inside.
snack, while preparing dinner: Two small, raw carrots,
Dinner, again very late 9.30pm, working outside, sunny evening. Shoulder pork chop, carrots, and the last of the disappointing beans. Panna Cotta. MrSlim knows its a favourite. He bought several last time we went shopping, have resisted until now.
lemon tea at bedtime.

@Chook jersey royals, with butter of course, mmmm, Delicious. Have not had a single potato for nearly four weeks, managed to finish them all up before MrSlim left for UK.
@Annb sometimes i can be sensible with chocolate, but not when stressed, which at the moment is almost all the time.

Thanks for the Jersey Royal feedback. I agree that could be worse and I might just be tempted, how many did you have?
Your old Yorkie sounds like the doggy incarnation of my husband!

12 noon - had my brunch - pate made with the lamb's liver the butcher provided yesterday. Had it wrapped in lettuce leaves and added a few little bits of orange to it. Next time, I must add orange zest to the pate. It definitely improves it. Another tub ready to go into the freezer.

The chicken I ordered turned out not to be very small but I will cook it this evening and have it with some courgettes and some roasted tomatoes.

Feeling even worse today. It took me quite a while to get out of bed this morning - I was so stiff. Never been quite so bad before. And tired. I did eventually manage to get upright and shuffle through to the kitchen (unusually needed zimmer support - a stick just wouldn't hack it) and took my half dose of co-codamol before collapsing into the chair. Slept again for an hour, but still pretty stiff and wondered if I should take another half dose, but decided not to. Finally able to move around after a fashion after another hour. I think this still has something to do with this virus. Also wondering what other damage has been done to my already compromised kidneys and liver. Ach - just feeling a bit low right now. Will forget all that later, I expect, low moods never last very long.

I'm hoping to stay mobile enough to get on with some food prep - need to do something with the short ribs and intend to make some steak and kidney filling for a non-pie, to have in a couple of days. Also have to do the chicken and veg. Also must get the rest of the butcher's order into the freezer. So come on Ann - just get on with it!

Couple of days behind. @Annb - sorry to read you're having chestiness issues again and I'm the same. @DJC3 - I'm still a bit "crackly" and mildly breathless but once again I'm moving to the end phase as the sinuses are bitterly cold and that's where the issues are coming from. @Brunneria - if the Garden Centres were open here I guarantee I'd want to be there as soon as. I must confess I'm bewildered. I've been out twice this week with son in the car, fully masked and essential journeys to collect meds and shopping. Advice is still stay home BUT exercise go out as often as you like and essential trips are OK. First trip , it was busy and looked like a normal day. Yesterday's trip to gets missing meds was chaotic. Parking situation was so bad the cars were double parking on the High Street! Where are all these people going? Anyway, Thursday BG's still high bed 7 FBG also 7.
B. TAG and a couple of Dairylea triangles.
L. Nothing, taste has gone again and I'm trying to think of something to make for dinner I can taste.
D. Butcher arrived so I made meatballs stuffed with mozzarella and a tomato ragu (which I made too strong). Had with some of the Lidl noodles.
Also had sugar free jelly with a few raspberries.

I had about 180g - okay - naughty Chook - but I do think it was worth it and my BGs were back to normal by bedtime.

We took the dogs out for a park trundle, and the carpark was full, but the park itself wasn’t that full. The roads were busy on the way there and back...
Where are all these people going? And what are they doing?

Today we had the dubious thrill of making scrambled egg using the powdered egg I bought a few weeks ago, as a store cupboard backup. Definitely not the best eggs we have had.
The dogs wouldn’t even touch it! Hahaha.
Powdered egg will now be reserved for cooking, and spiced, herbed, dressed up eggs, where the flavour is provided by something other than the eggs...

Lunch will probably not be needed (and I have already snacked on a kind nut bar)
D will be either pork chops or chicken... not yet decided.

Yesterday - Friday bed 6.5 FBG 6 4 so a bit better. As I mentioned, sinuses are bad to a hot shower was called for to loosen them up a bit. @Annb, I'm not surprised the way you were affected by the outing. That's why I took masked son with me so I didn't have to leave the car. @DJC3 - Poor Dennis. Hope he's totally recovered.

9 year old - "A Velociraptor because then it wouldn't exist".

Youngsters showing more sense and coherent thought than so called experts?

Children always were the hope for the future. As long as we adults don't ruin things for them, I reckon the world will do very well in their hands.

I was just pondering yesterday - was the selfishness and greed seen in the generation raised in the 50's and 60's caused by the overshadowing influence of "the bomb" and the ridiculous advice given by government on surviving it? And did we, of that generation, teach our children to want it all - now?

Well, to be fair, my kids had to learn early on that they couldn't have it all - probably ever and that the world and its people were to be respected and treasured. But I don't think that was very common when I see their contemporaries. I know I did pass on to my kids, the cynicism that I developed myself during those early years.

This childhood lesson is partly why, when it comes to food, they are pretty sparing and careful. Neil is very careful about what he eats - not just because of his ill health and No 2 son eats anything, however far out of date, even if he has to cut the mould off of it. He hates food waste! Or any waste, come to that. Not that he expects his family to join him in his eating style - he just uses up what everyone else doesn't want to finish. I think I may have taught him too well.

Today I went out for the first time since lockdown started (apart from weekly clapping) and was totally gobsmacked at how the world has changed. Hedgerows and trees so green and the gorgeous smell everywhere of the hawthorne blossom. Then the extreme weirdness of deserted towns.... I had no idea it would be so strange.

The intention was to go for a walk / hobble by the sea but part way there we got a notification that the seafront in question was road blocked closed. So we came off the motorway at Scunthorpe to visit a shop called Tradewinds that I'd found on eBay that sells the most amazing collection of foods from Asia and other distant places. An hour later and £65 lighter we ended at another shop that the first one had recommended that specialises in Indian groceries and fabulous vegetables. Mr C enjoyed the butchery bit and bought various cuts of beef and mutton (called sheep meat on their signs) . £75 there! My larder and cupboards are now completely full with plenty of fermented and pickled vegetables including three different varieties of kimchi, lentils, dried beans, spices, pastes, different varieties of tofu and sweet and meat treats for Mr C.

Food today

Breakfast: the usual omelette with carb free syrup
Lunch: pizza topping - just the cheese and the chargrilled vegetables of a half a pizza (the dogs ate the base) - Mr C ate all of his half
Dinner: a mixed bean bake using a jar of butter beans, fresh tomatoes and spices with roast broccoli and cauliflower rice - I'm sharing this with Mr C who will be having a huge T bone steak (bought at the second shop) with his.

We came home to be told by our neighbour that someone in our road has died of covid (don't know who yet) and that the R in this region has gone up. I think that might be my last outing for some time.

We didn’t go near the promenade, so don’t know about access. Actually, I haven’t been closer to the seafront than walking to the car and driving to the park. Might take the trike that way on my next foray.
