What have you eaten today? (Low carb forum)

So am I - never gonna happen.... Now just to work out who had it sent....

Breakfast Saturday yogurt and raspberries dinner salami cheese and salad roll for some reason was all I could stomach

Breakfast Sunday
Yogurt and strawberry black coffee

Dinner egg poached in a tomato mushroom and bacon creation black cofee bread with butter.

Also Today had enough energy to make a yogurt lemon cake to take with me tomorrow at mums. I've been feeling lethargic have changed to a new dose of meds for my thyroid again hopefully it is not that that's making me feel tired hopefully find out with my next blood test results soon.



 

You and I sound quite similar in some ways @maglil - loads of kitchen gadgets and some of them very odd. Some of them bought by me, some by my husband when he was at sea, some by Neil. Now they are all in my kitchen, or in boxes in the loft. I do have a tofu press in the cupboard - bought by Neil and never used, but it's wooden not plastic. I always find that I have ideas about what I want to find - about 2 years before they become fashionable and available everywhere. Great minds and all that.

I'm not feeling particularly down, thanks for asking. It's just my darned leg making life so painful right now that I'm unwilling to stand up if I can avoid it. However, I did manage to get a compression stocking over it this morning (horribly painful process) which has helped a bit and I can, if I'm careful, put weight on it. If Neil had been feeling better I would have asked him to go out to the car and bring in my wheelchair, but he was having a bad day after eating a different brand of dessicated coconut (Whitworths) - no sugar in it but there was some sort of problem with it.

Talking to my elderly (even more so than me) aunt yesterday on the phone. She is in London and completely on her own (lost her husband a few years ago) and really feeling it. Poor soul is surrounded by bad news - lost her son a few months ago to cancer and recently lost a grandson (sudden death, she doesn't know the reason). The only contact she has with the outside world is her telephone and her late son's widow who brings her shopping but can't go into the house. She will probably not be a first choice if someone creates one of these "bubbles" for themselves and she can't get out to go to anyone else. I feel that I am so lucky that I have Neil here. The house would be very empty without him.

DIL had to get permission to go to the mainland with a vehicle to go to Oban and pick up grandson with all his goods and chattels. They arrived home yesterday. So that's even more of a houseful in their little house.

No food so far today - just tea. But I will be having a proper brunch of bacon, egg and sausage with some grilled tomatoes and maybe mushrooms.

Evening meal will probably be liver with onions and more tomato. Maybe some cabbage with it. That's all assuming that I can stand up long enough to do it.

Yes I was seeing this much of yesterday - pages seemed to be weirdly overwritten, and I was also getting frequent 522 (not normal 504) timeout errors from Cloudflare(??) which I've never seen before:

Yes - I kept on getting that page and one of the times I tried I got the scrambled, overwritten page as well. I thought, for a while that it was my laptop, but no. Seems OK now.

Its not completely random - a few weeks back I was experimenting with tofu and finally decided it was fairly revolting unless marinated overnight and/or highly spiced. So it must have been someone I mentioned it to as I was trying be discover if prolonging the pressing makes it taste better (it doesn't). I think it might have been my neighbour - remember we had a conversation about it one Thursday after the clapping. Hmmmm

You'll have a long wait! . Its cheap enough to buy but you do have to drain and press it - thats enough kitchen slavery for me.

Today

Breakfast: usual Sunday morning brunch - chaffle, mushrooms, fried eggs and 100g baked beans
Lunch: usual Actimel drink
Dinner: usual Sunday stirfry - bean sprouts, pak choi, mangetout, bit of red pepper (for the colour), a few spring onions and some cashew nuts - and some Nando's lemon sauce

Just realised that I'm getting in to a Sunday rut!

Tried to post last night, but had the same problems as all of you accessing the forum yesterday.

@Annb -- Hope your foot is less painful today.
@maglil55 -- Must be frustrating to have the symptoms recurring every so often, hope it settles for good this time.
@DJC3 -- Hope the stress settles soon. Take-away dinner the day before yesterday sounds absolutely wonderful.
@Antje77 -- Agree, low-carbing doesn't necessarily make the social aspect of eating much easier, does it?
@MrsA2 -- Do you have a link to the recipe for the tuna-melt?
@Chook -- Maybe you can use the container to store onions? Or is it too small?
@annabell1 -- The eggs in tomato sauce look fabulous. Kind of reminds me of huevos rancheros (eggs fried in salsa on corn tortillas). Will have to look up a recipe for salsa, but obviously the corn tortillas have to go.
@Rachox -- have a safe trip back home and a good day celebrating your daughter's birthday.
 
Tagging behind for two days again, so here are the meals for the day before yesterday ...

Breakfast: A double decaffeinated espresso with cream and erythritol.

Lunch: Baba ghanoush mixed with egg and fried. Half a DD keto roll with mayonnaise and smoked salmon.

Out for two glasses of red wine, returned late, so just a bit of food for dinner.

Dinner: Half a DD keto roll with mayonnaise and smoked salmon, a sliver of cheese, a couple of teaspoons of Greek yoghurt and some h/m low carb sesame brittle
 
Yesterday ...

Breakfast: One double decaffeinated espresso with cream and erythritol. Some h/m low-carb sesame brittle.

Lunch: About 150g of skirt steak with guacamole and a bit of left over cauli mash (with butter and potato fiber).

Dinner: A tub of chicken liver pate, half a DD keto roll, and a bit of rabbit in a estragon-mustard-cream sauce.
 

Yes, it was my neighbour - I've no idea why she would buy me a random present as it was totally coincidental that it arrived on my birthday. (She was out planning her new front garden when Mr C left for work, so he mentioned it in passing.)

Well actually that sounds like a very thoughtful present now you’ve explained it. How lovely of her to go to the effort of getting it for you after the conversation. I wonder if you’ve already mentioned in passing that you hate tofu now though?
 

She did ask me how I was getting on with tofu after the final clap for carers and I thought she meant eating it - I don't think I mentioned making it because I haven't. I can remember saying it taste of nothing at all until its been marinated and that I need to find a good marinade. She's a thirties something career woman (her horse and dog are the loves of her life) and working from home during lockdown has completely changed her world. Her new lockdown hobbies are cooking and gardening so she's often asking for advice on both. Its very nice of her to think about me. I'm so lucky with my neighbours (now).
 
Freecycled my waffle maker this morning, ( only used twice) so obviously I immediately had a yearning for Chaffles. Brunch was a chaffle style omelettey mess made in a frying pan
Lunch was a slice of cheddar and a handful of 100% chocolate buttons.
Dinner roast leg of lamb, roast broccoli stalks, cauli cheese. Then a small bowl of Oppo and grated 100% choc on top. Red wine.
@ziggy_w are you teaching on-line at the moment or are you back to normal now? How’s it going in Germany?
 
Has anyone got advice on how to use radishes / daikon / mouli as a potato substitute?

Evening all.

Very long walk in the sun today - walked to meet a friend in a park roughly equidistant from our respective homes. 7 miles there by the route I took. Had never been to the park before but will definitely be going back. Wonderful mix of woodland, open grass, cafes (takeaway only), water and wild flowers. Also bumped into 3 people I know (aside from my friend), one from my footie team on the way out, a former cricketing chum (not seen in at least 20 years) in the park and an occasional stand-in for my regular Pilates teacher on the way home. My friend also bumped into 2 people she knows on the way too - London is obviously getting smaller!

Very glad I ate before I went as arrived home ravenous. Breakfast was two chicken wings leftover from yesterday’s Nando’s, a lump of cheese and a small pot of Greek yoghurt.

Dinner was ready and waiting courtesy of the IP. Oxtail. Deliciously tender and very welcome indeed.

It's not a recipe as such, more a "putting together".
Drain the contents of a tin of tuna (about 100g, )
Put tuna in bowl and break in an egg. Mash it together adding half a teaspoon of baking powder (bp can be left out if sensitive). I just used a fork but a hand blender would maybe give a smoother result
Cook in microwave 3 -4 minutes
The original post I found wasn't specific on container so I just spread it over a tea plate to give an approx 7 in circle. Think it would work in the bowl though. When cooked, put slices of cheese on top and grill.
I made double amount and cooked one in main oven as test, took about 15 minutes and no difference in taste. The second one kept well in the fridge overnight and I reheated in the toaster as a filling breakfast before a walk. Was very nice with stilton, if you are that way inclined

B. Reheated tuna melt
L. Handful of fresh raspberries straight from the bush while weeding
D. Beef and aubergine bake with green salad, and enough left for us all tomorrow too
 
Thoughts on condiments: nearly three years ago when I went low carb and then quickly keto I ditched most condiments because of their generally high carb count per 100g - I still remember the sadness I felt ditching them and especially the balsamic vinegar which was consigned to the bin to save me from myself! However more recently I’ve decided that - provided I keep them to half or one teaspoon added to food on a very low carb day they are fine and for me add so much extra pleasure to a meal! Today’s treat was half a teaspoon of horseradish added to my steak - about 1 gram of carb but so little rest of day that I’m sure it’s fine. Yesterday had half a spoon of a spicy mango chutney with my curry. For me it adds so much to my enjoyment of the meal. I’m cautious about the total amount added but for me I’m going in a more flavoursome direction without adding too many carbs.the piquancy and contrast is so appreciated.

Pre dinner in garden in sunshine I drank a gin with soda water and slice of lemon closed my eyes and tried to persuade myself I was on holiday! It was so hot in direct sun in a sheltered spot it did make me think of Spain!
Dinner steak, mushrooms in butter, a few onions, halloumi fries and some horseradish sauce with glass of red wine followed by lc raspberry mousse with extra thick cream. Just had decaff coffee with a couple of squares of 100% montezumas with orange oil.
@Goonergal your walk sounds lovely and such a pleasure these days to come across friends even at a distance real faces rather than video images!
@Chook I’ve roasted large radishes in olive oil and also added to stir fries - delicious
@DJC3 id really miss my waffle maker which reminds me I haven’t made chaffles in a while!

Have to agree about condiments, they add a lot of enjoyment and provided the quantities aren’t massive I think they are often worth the extra gram or 2 carbs. I love horseradish, English mustard and Sriracha - all the hot stuff!

Just had to look up sriracha - something new to try! Enjoy chilli sauce - so I’m sure I’d enjoy this one!
