What have you eaten today? (Low carb forum)

@shelley262 oh dear. Twice in my adolescence I had a bird dump on me, and once was on my head. You have my extreme sympathy. This (and pollen) is why I never hang laundry out to dry....foodwise, you get 5 stars!

@DJC3 Yes I have been buying cartons of cream every week recently so I think it is the culprit - today I did half and half with cream and water in my tea - it was actually ok so tomorrow I think I will water it down even more - will defo be cutting back on the cream for next weeks shopping and I will save money too win win!

Brunch - f/f greek yoghurt with mixed berries and a little double cream drizzled over the top. Earl grey tea with double cream.

Dinner - 2 bratwurst sausages, 2 fried eggs, 4 slices of smoked back bacon. SF jelly and yes extra thick double cream (I will not be buying this again but I have enjoyed it while it lasted).
 
Yes it is soooo annoying when they dump on the nice clean washing and it has to be redone
 
Cracker with butter, cheese and marmite. I hardly dare using the little marmite left in the pot as it looks like something's wrong with the availability. My supermarket doesn't know if it's due to Brexit, covid or something else, but they haven't been able to order marmite for months

Half a peach to fend off a hypo.
Found out the first of my grapes are ripe and sweet, so quite happy with the next hypo as it meant eating my own grapes

Evening meal was a fun collaboration with my new house mate. She browned a couple of 'sukadelappen' (part of beef which needs stewing for hours) and started them on the 'slow cooker' (lamp-oil powered cooking thing inherited from my grandparents), and in the subsequent hours we both added whatever we thought tasty to the pot whenever we passed the kitchen, so we ended up with a big pan of tasty stew

Getting used to this new household with a baby, plus helping out with the organising of my friend's new life, including basics like underwear, means I only have time to quickly glance over all your posts so I'm likely to miss half.

Breakfast 2 x CWC nut granola
CWC also the end of MrSlims croissant dipped into the home made jam my French friend gave me. It's mixed fruit, strawberry, raspberry and groseille which are apparently a hybrid between gooseberry and blackcurrant. Certainly they are like nothing I have ever seen before. The jam was wonderfully flavourful and just a tiny bit tart.
Lunch: ham , English salad. Three small thin slices of the wholemeal loaf purchased in error, with butter.
BG before meal 4.8 Forgot to test further, bad Lizzy. But did remember to order more test strips. Good Lizzy.
Dug up some of the root veg bed, found an onion and a carrot, plus a carrot top. Something had eaten the rest from below. After that moved a few barrow loads of earth. That's my daily exercise done, I think.
Dinner was an attempt at lasagne type meal, using courgette instead of pasta. Cannot say it was a success. Mess on a plate is best description. Wont be trying that again.
On the subject of courgettes. MrSlim let it be known a couple of weeks ago, that they are not his favourite vegetable. They are however the one we have the most of.
Today he told me about Toxic Squash Syndrome. Thought he was having me on, but no, it's a real thing.

I fully agree with Mr. Slim on courgettes.

As for the lasagne type meal, if you use aubergine instead of pasta/courgette you can call it moussaka, which is very tasty!
I put the slices of aubergine in the oven with a drizzle of olive oil until halfway soft before using them in a casserole layered with a minced meat and tomato sauce and topping it with a cheesy bechamel sauce.

Very tasty, and it works well with vegetarian minced meat as well

Its a delicious - and not very good for you - whip of double cream, 70% cocoa and I daresay a bit of sugar. Not very sweet though. They usually put it on top of the hot chocolate (my HC was 85%, you can choose the strength from 100% down to very sweet) but I like it separate.
I need to go back to explore Stourport. Wanted to get on with the planned walk so didn’t go past the edge of the marina. Now I know which bus to get it’ll be easy.

@Antje77 the marmite crisis is yet another reason to visit the UK. Although I’m in the ‘hate’ camp when it comes to that stuff. Bovril on toast, however, used to be a favourite.

Just enjoying a morning cup of Teaolat with double cream before catching a train to meet some friends.
 
@Antje77 and @Goonergal - I must be one of the few who aren't in either camp when it comes to Marmite. I do use it in veggie casseroles but I have never enjoyed Marmite sandwiches or spread on toast.

@zauberflote and @SlimLizzy - I hope your cauliflower rice salads turn out ad nice as mine

@Goonergal - those walks sound wonderful *jealous*

@ANTJE and @SlimLizzy The only ways I like courgette is brushed with garlic butter then cooked until dark on a griddle pan or the small ones roasted whole in garlic butter (but then I think most savoury things taste better with garlic).
 
Day 2 of my 4 day fast.

Yesterday's FBG was 9.4
Today's was 8.1
Scales: show a loss of 3lb (I'm not expecting this to be permanent but a girl can hope!)
Blood pressure: no change
Sleep: really weird vivid dreams and woke up an hour early
Concentration: good

Just black decaff coffee, fruit teas and water planned for today



i know @DJC3 asked about mood - I was fine until just about the time I'd normally be thinking about cooking dinner then felt a bit 'down'.

I only really felt hungry at what would normally be my mealtimes but had a hot drink each time and the hunger faded.

I did, eventually, make my chicken "nuggets" last night. It may have been because I had had another day of feeling ill, despite no veg, but I really didn't feel that it was worth the bother. Coconut flour doesn't make a good coating. I was trying to use a similar method to "southern fried chicken" but with the yoghurt and coconut flour, it didn't really work. This was at about 10.30 last night when I finally dragged myself up to use the marinated chicken before it went off. Wasn't hungry but I thought I might feel better if I ate something (that's often the case) and it worked, after a fashion.

BGs still high due to reduced doses of the new insulins. I think I will have to step the doses up - it really isn't working so far. I also think that I might benefit from reducing fat content in my food. I do like my butter and cream, and I don't know if that is the problem with my stomach. That's the next thing to try, I guess.

The chicken nuggets are not greasy, at least, so will have some more of those for breakfast - maybe with some kind of dip to moisten them - the coconut flour makes them very dry. I'll need to use them up.

Later will have to be something with the lamb to use some of that up. Probably some chunks of lamb re-roasted with a spiced yoghurt sauce - not too spicy hot, of course; something more middle eastern than Indian. Must ask my Persian friend what she would suggest, although I know her suggestions would include mint, spinach and celery, which I will ignore. Cumin and turmeric come to mind though.
 

We were told that the Marmite shortage is due to brewers reducing their beer production - something to do with the covid thing, but don't really understand that, I would have thought beer consumption would have increased with people off work, but there it is. I didn't realise that the yeast in Marmite was a by-product of brewing. I am currently reduced to about a quarter of a small pot of Marmite and am not sure when I'll be able to get another. Great loss for me! Best on buttered toast but on a buttered crispbread is almost as good. It does need the butter though and since I am about to start cutting down on fats, perhaps it will be a much rarer pleasure anyway.
 

I think it works better for me if the HF bit in LCHF is fats like avocado, nuts, olive oil - trouble it is one thing knowing it but difficult putting it in to practice. I do love my eggs and cheese and I really don't much like nuts.
 
I use aubergine too. It's very successful. Courgette is a bit wet.
 
@Mrs T 123 - here's a link to the Lidl noodles. They keep them in the cool cabinet with the cooked prawns, salmon etc. They are made with fish protein but don't be put off by that. They do not taste fishy at all. I sub them for spaghetti, noodles in a Chinese, or in fishy dishes with prawns and chilli. 5.9g carbs.

B. TAG and a slice of LC toast with pate.
L. Handful of monkey nuts.
D. Pork chop with applesauce I knocked together with monk fruit. 1 baby beet and all the talk of cauliflower rice got me moving enough to make a cauliflower rice mushroom risotto. Finely chopped jumbo spring onion, couple of sliced chestnut mushrooms - soften in butter in a wok. Add freshly chopped parsley and a portion of cauliflower rice. Soften a bit then start adding chicken stock gradually to let the rice absorb it. Once softened to your taste add parmesan and mix through. Check seasoning and serve. I really enjoyed it.
Later, scoop of Halo Top strawberry cheesecake and a few raspberries.

Sorry @shelley262 - I had to laugh. Seagulls near us don't seem the like the colour of my car. It is constantly being pooped on.

Oh, and that child is currently not permitted in playground with class. Has to go to another closed in outdoor area with "minder". He is also now going to a support class with minder part of the day and he was racing round and round out/in of class and locked said "minder" out of class. He definitely needs therapy. He hit Grandson yesterday with a sock filled with rice and grandson proudly announced that he didn't retaliate "I wanted to but I didn't. I told the teacher".
 

Well done to your Grandson! I hate to say it but the other lad needs to be removed from the school he's in and be moved to a more disciplined environment.

Its not seagulls here but pigeons. They are eating all the ripe blackberries then, for some reason, targeting my next door neighbour's washing. OMG - you should have seen her lovely white sheets... and the stains don't come out!

Mmmmmmm risotto!!! Mr C made himself a chicken and asparagus one for his pre work meal with lots of lemon and parmesan. So cruel!
 
@Chook well done on your fast - it sounds epic. I’ve never managed very long - did almost three days once but found it tough although lots of OMADs over past three years but even these feel harder now. Can happily do 18 hours normally on a regular basis but after my non deliberate 23 hour one yesterday I even found my usual 18 hours fast today harder than normal.

Went swimming this morning - yippee no pigeons! As windy and rainy outside did my stretching on mat indoors.
Had lovely message from montezumas who had refunded me a while ago for my lost parcel of choc which - although ordered on 10th of July and assumed missing in action hence refund - suddenly turned up! I asked about payment and they said to accept the choc with their compliments - wonderful customer service and wonderful choc too maybe my pigeon poop was lucky @zauberflote !
Hungry all am after a swim and thoughts about my chocolate mountain. Read several articles about how to freeze chocolate and if it affected the quality - seems if sealed can freeze for up to two years, mmm not sure will be freezing for that length of time.
Lunch scrambled eggs on L C toast followed by celebratory montezumas peanut butter mini egg
Dinner Cajun chicken with salads followed by DGF choc orange brownie with cream and tempted to have another mini egg with my decaff coffee.
OHs birthday tomorrow so will be out for dinner and then out for day Thursday for birthday picnic with friends so will catch up with you guys in a few days.
 
On 6 portions, I reckon about 6g per portion.
We ended up getting 8 portions out of it, over 3 days. Its a very simple cheap dish that we only do once or twice a year, more of a winter one really. None of us are that fond of raw celery but its one of those veg we buy because its supposed to be good for you
