What have you eaten today? (Low carb forum)

Good morning all

@DJC3 - I did that with the cream too. I tried the Diet Doctor diet which uses a phenomenal amount of cream (and butter). Nowadays, on a normal week, I buy one small pot of double cream to make my omelettes.

@zauberflote - I do the lazy girls' chaffle - just 83g / 3 ounces grated cheese and a raw egg mixed thoroughly together then cooked on a pre-heated waffle maker. Very easy and very nice. Usually I buy a pre-blended mix of grated mild cheddar and mozzarella. Makes a nice fake (kind of chewy) pizza base too.

So today is the first day of my fast - I actually remembered NOT to take my metformin (I learned my lesson about not taking metformin while fasting last time!!)

Breakfast: nothing
Lunch: nothing
Dinner: nothing

Drinks: plenty - black decaff coffee, chamomile tea, water - I will be putting a pinch of salt in the chamomile tea
 
So interesting what people are eating, and all with different 'challenges'. Lots of tips to pick up on this thread :)

Crispy streaky bacon and 2 scrambled eggs (no cream or milk added), and merely a 1/4 teaspoon of HP sauce (one day I'll ween myself totally off it).... 2g of carbs for breakfast.

Wasn't going to have lunch, except my husband decided he wanted cheese and ryvitas while watching cricket which 'set me off'. I finished off a couple of fillets of peppered smoked mackerel that needed eating up. 1.6g carbs.

Dinner was cod and cauli.... now that was a challenge to make these two appetising, especially as I've ran out of cream! Cod was gently steamed after the cauli was steamed, while I sauted 3 chopped spring onions in avocado oil. When softened a rather 'lot' of shredded cheese was added to the pan, mustard, salt and pepper was the seasoning; when the cheese had melted chopped cauli was stirred in..... quite a tasty result. Dinner was under 5g carbs.

I've stopped buying onions, it's far too easy to over do the carbs, so I've taken to using spring onions also using their stalks, they're much more manageable for counting the carbs.
Cooking your cauliflower rice in stock (fish if you have it since it was to go with fish or chicken if you don't) gives a good flavour. Cook as you would a risotto adding stock gradually then add cheese after.
 
I have to admit I really do miss pizza, I used to have it a lot pre T2 diagnosis - my mouth is actually watering just now even just thinking about it - I have found an alternative - I make the base with mozzarella cheese and eggs then whatever for the toppings - I do like the really cheesy tasting base - I must do it again - I have not done it recently. People eating cakes in front of me doesn't bother me (well sometimes may be) but I do miss pizza,chips,pasta,rice, bread and indian food .... I will stop now before the tears appear (which I am sure we can all relate to) good old days before the big D eh:banghead:
Pasta I think Lidl's high protein noodles are a great substitute. I used oomi noodles previously but they seem to have vanished from the shelves. Rice? Cauli rice is a great sub too. I manage to do almost as much with cauli rice as traditional rice (but not rice pudding!). My continuing issue is pastry. I got as far as a mix that actually tasted like pastry but the darn thing would not rise. I've taken a note of the mix and one day will try it as rough flaky using butter and turning to build up layers. Pizza base - lo dough is OK but my search for something to match my memories will continue.
 
@MrsA2 - my sister had a house about 1 hr north of Naples. She'd meet me at the airport with a slice of pizza! (And a suppli - the rice ball things I can do with cauli rice). The neapolitan pizza is absolutely the best.
 
@LaoDan - that looks delicious but, there again, you live in my favourite place. If I had to choose a different place to live it would be Singapore. I the place. @DJC3 - I weighed myself for the first time in a while and I'm still the same weight as I was at the end of the 10 week challenge. So 20 odd weeks of no classes has just left me stable. Quite happy not to have gained anything though. @zauberflote - it was a relief. He was being reminded going in this morning and duly took his place at the rear of the line with his friends. Eldest had a bit of a moan but no nerves or tears.
Saturday - bed 5.9 FBG 6.3. I didn't intend going out today but faced with wall to wall football I decided on a trip out. I don't mind football - just not non stop.
B. TAG and a slice of LC toast with pate.
L. Nothing.
D. Selection of cold cuts. Slice each of ox tongue, haslet, half slice pork, turkey & ham. Coleslaw, couple of baby beets and veggie chips. A scoop of Halo Top strawberry cheesecake and raspberries.
 
B: 1 cold sausage
L : ff greek yog with chia seeds and a few berries
D : roast chicken, 2 tiny weeny new pots straight from the garden, home grown green beans, broccoli and slow cooked celery in tomato and orange

Any ideas as to the carbs in that last veg dish?. It was a whole head of celery, 400g tinned tomatoes and juice and zest of a satsuma. Serves 6-8
On 6 portions, I reckon about 6g per portion.

L. Nothing.
D. Usual campari and soda. Hubby fancied prawn cocktail so mixed one up for both of us with Marie Rose sauce. Also had half a burrata.
Got the remains of a beef joint I'd split in 3 a few weeks ago and air fried it. Had it with horseradish , asparagus and one of Hubby's jersey royals.

@Annb - glad to read you are starting to feel better. @DJC3 - meant to ask, any progress on your London abode?

Missing in action again, dont know why but the days all roll into each other and I only know its the weekend when Mr PM goes to golf on Sat morning. Have been having higher BG than I am happy with for a few weeks now. The biggest change is staying high through the day. I used to be close to 5 at teatime but now more often its a mid to high 6. Food hasnt changed. I know I do flirt a bit eg Fishfinger Thursday but I am pretty careful. Anyway back to food.
Sunday breakfast was slice HiLo toast, butter, tea.
Lunch was 2 h/b eggs mashed with mayo and spring onion.
Supper was roast chicken breast and cauli/broccoli florets.

today same breakfast.
Lunch was medium plate salad of few cherry toms, chopped cucumber, half a spring onion, few bits artichokes in oil, 2 radishes and crumbled mature cheddar on top.
Supper will be mushroom omelette.

I cook cauliflower rice by frying it in a bit of ghee or olive oil/butter mix. I add the juice of half a lemon, garlic and a bit of salt. (Thats my basic recipe).

I also add things to the basic recipe depending on what I'm eating it with or swap the lemon juice for lime juice. Nice combinations are lime and fresh chopped coriander, smoked paprika and chopped roasted peppers and aubergine, lemon, thyme and parmesan. Mostly I eat it hot but its also nice cold as a couscous type salad with chopped sun dried timstoes, o!ives and fresh chopped parsley.

Breakfast - Liver pate with RyVita. I know RyVita is a bit of an issue but don't like pate on its own. Current problems with veg mean I can't put it onto any salady things, so RyVitra it is. I've run out of Atkins crispbread, which is tasteless and unsatisfying, but at least I can spread pate on it. Must try to get some more from Amazon.

This evening's meal will be chicken "nuggets" - small chunks of chicken breast marinated in yoghurt, lemon and garlic and then coated in coconut flour. I have to do something with the chicken breasts, which I took out of the freezer yesterday, thinking it was something else. I don't actually remember putting it in there. Never tried making nuggets before, so it will be interesting to see the result. Shan't be bothering with any veg to go with it, or anything else for a while. I'll try and get the tummy issues to settle first.

Just realised - Neil has gone to town and will do some shopping for me, and I went and put Brussels sprouts on the list. Dope! Never mind, they'll keep for a while.

I still have all this half-cooked lamb to deal with. I cooked the vegetables in a saucepan, in the end and now have a kind of veggie stew, which I can't use for a while - freezer for that. The gravy is quite rich though - it was underneath the lamb and caught all the drippings that did come out of it. Might have to make some kind of spicy lamb, without the veg that would have gone into a curry or a tagine.

Okay chook, you have just solved one of my sad problems! I used to make a "room temp" to-die-for quinoa salad with quinoa cooked in OJ, spring onions, raw cashews, and raisins. With your cauli rice method, I can come up with something like it. Unfortunately, there is NOTHING like raw cashews for sweetness! Yet more unfortunately, MrZF won't like it, where he loved the other. I don't miss rice at all, but I do miss my quinoa...

Lunch walnuts nibbled whilst preparing - stress related eating - then range of cheese, celery and more walnuts
Mid pm DGF choc brownie
Dinner spicy chicken and salads plus glass of prossecco followed by strawberries and cream
Sunday short exercise but no breakfast
Lunch scrambled eggs on one slice Lc toast
Dinner hm chicken curry and pickles with gin and soda water followed by strawberries and cream
Today very very hectic so didn’t eat in day - would have had indigestion!
oMAD dry white with soda, pesto chicken and salads followed by strawberries and cream and then had decaff coffee with a tempting 2 montezumas peanut butter eggs. I ordered them in sale on the 10th of July and thought they were lost for good but they turned up today! A compensation for a difficult weekend and a shock this am - I do my stretching exercises on our decking under a tree on a mat and today had just started when a pidgeon in tree above developed diahorrea right above me - it was a gross experience although OH seemed to think it was funny as you may do! Had to strip off and wash everything you can not believe how much one bird could dump on you!
 
Well something in last nights meal sent me from 6.2 to 9.3. I can't pinpoint one thing but when I add up the carbs the one meal was about 20g which is much more than usual.

B ff greek with chia and berries which I prepared last night just for a change in

Mid afternoon really hungry so 5 brazil nuts
D: went a bit awry. I was roasting some veg keeping them separate from each other when I got involved in a phone call so asked son to check them. He stirred them altogether so I then spent ages trying to separate the onions and potatos from the peppers and aubergine for me. Served with some cold chicken and leftover celery from yesterday
But then I had a poached pear for pudding....
Its that harvest and glut time of year and I'd usually be making, baking and freezing all the fruit and veg. We were given some beautiful but very hard pears so I stuck them in the slow cooker with water, rose wine and 1 tabelspoon sugar.... they came out sooo good.
I must be stronger willed with the windfall plums and damsons ....

OMAD today and a walk that was 4.5 miles longer than intended. Who says you can’t get lost in canals? That all assumes you set off in the right direction :hilarious:. Set off from Kidderminster heading for Stourbridge via Stourton and was very surprised to find myself in Stourport! Found a bus back to Kidderminster and started again. Very enjoyable though.

Dinner was Nando’s - had it delivered to the hotel as feeling lazy. 10 plain wings with grilled halloumi followed by 6 Hotel Chocolat 85% batons.

Batons were purchased yesterday after a hot chocolate in Hotel Chocolat,mthe excuse for which was getting soaked on my walk.

@Rachox bravo you! I am now imagining someone with ticklish feet having to sit still for stitches removal. Here's hoping they are the type that dissolve on their own?
Stitch removal is on Thursday, not dissolvable unfortunately but thankfully I don’t have ticklish feet!

I think I forgot to post yesterday’s any way today’s food was:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and birthday cake phd bar
Late Lunch: left over crispy duck and veggies followed by Greek yoghurt, raspberries and vanilla and raspberry LC granola.
Dinner: chilli con corne with cauli rice followed by SF jelly, cream and LC chocolate granola.

Wow amazing walk but , as you say wrong direction back to brum! What a distance - stunning. Love stourpourt some amazing industrial buildings by canals and river but it’s also a little like a seaside resort on the river with lots of fairground rides as I’m sure you found out!
