What have you eaten today? (Low carb forum)

Mid morning B: 2 very fresh eggs with quite a bit of mozzarella sort of scrambled together. 1 large tablespoon ff greek with 1 rablespoon seeds
Mid afternoon 2 bites of hubbys ice cream
D: beef burger, 1 small lamb burger and salad
Did the burgers in airfryer. Lots of the fat came out, but shouldn't I be eating that?
They were moist.

Back home now after a week away. Weighing and testing start again tomorrow
 
11 am just put a ham hock in a big pot with veg to make a ham stock for soup tomorrow.

FBG 12.8! This new insulin is no better than the last lot.

Breakfast - just finished, was a the last of my pickled eggs and some pickled, sliced, red onions. The vinegar is pretty mild (I used half wine vinegar and half water). Shouldn't hurt my stomach too much, if at all.

Dinner will be the ham from the hock and some Brussels sprouts.

Neil has been looking for ham hock for me for a couple of weeks, but couldn't find it. This week he brought back a piece of leg of pork to see if that was what I wanted (he's not a meat eater, so doesn't really know one meat from another). I offered it to No 2 son, explaining why I had it. He took it for Sunday lunch for his family and came in later with a ham hock. He often buys it to make lentil soup for his family. The odd thing is that it was labelled "ham hough". My only knowledge of the Scots tongue is from time spent in Ayrshire and Glasgow, but then I was told that "hough" was potted beef and had little to do with smoked pork hock. Possibly it's made with beef shin, I don't know. Never liked it. @maglil55, do you know - have I got it all wrong?

It wouldn't surprise me - I am finding more and more things these days of which I am ignorant and never even thought about before (origins of Irish songs for example, and what was the "battle of Cropridy", or who was the "white lady" of Banbury? - the internet is a great help with these questions and, as with dictionaries, it's impossible to find an answer without thinking of other questions.) I do know that "haugh" is flat land beside a river (as in the Haughs of Cromdale) and nothing whatsover to do with a piece of meat (although I have just discovered that it might also mean a shin). Too much time on my hands, obviously.
 
Another lovely day here in holiday-land. Quite looking forward to getting back to my own kitchen - this is the first time I've cooked with electricity for 40 years and it's taken a while to get used to.

Woohoo - I am really feeling the benefit of a full night's sleep (the dogs aren't so stressed and restless now that Mr C is back from his trip to Kent). Even my BGs are showing an improvement!

@Mrs T 123 - After reading your post and having severe burger envy I've just ordered some rolls and bread from Seriously Low Carb. :happy:

Today

Breakfast: weekly brunch of chaffle, fried eggs and baked beans

Dinner (will be): Naked Glory (a vegetarian protein), a few bits of roast carrot and parsnip, cauliflower and broccoli, gravy, h/m cranberry sauce - dessert will be strawberries

I have my house (and therefore my brain function!) back to myself and the animals :)
My friend and her baby has moved in with her brother for now, as he has a house which is way more practical than mine with the baby. I loved having them here for a couple of weeks but I also love being able to concentrate on something (like a book or the forum) again.
So now I'm able to bore you again with my food stories, but not much to tell because of the big pot of oxtail and sauerkraut stew which will keep me going for the next days.

I think I'll have to make a big batch of cheese crisps today to make up for the pork scratchings and nuts I currently use as my go to midnight snack :hungry:. I tried eating them last night and I paid for it with a second piece of the already broken molar, so best to put the rest of the pork scratchings way back in the cupboard for now.

But first, I'll get a new male chicken today!
The old one died last spring so my ladies have been doing without and I miss the crowing. Yesterday I saw someone on facebook asking for someone to adopt her very friendly male chicken because the neighbours complained of his crowing, which sounds like he has a good cockadoodledoo! :happy:
Now I'm trying to decide if he's going in the chicken/rabbit pen with the one chicken too stupid to flap over the fence, or if he is to join the other two chickens who use the rest of the garden because they won't stay in the pen. Perhaps I need to try to catch the stupid chicken and let her join the rest on the wrong side of the fence.

Here they are. Only got 5 balls from the scaled down mixture which should theoretically have made 6. Need to up the quantity of bacon a little. Used a mix of mozzarella and Parmesan in place of cheddar. Very filling. 2 are in the fridge for tomorrow’s lunch - don’t want to spoil my main meal, which is in the air fryer and will be ready in less than 2 hours.

These are very tasty even if the photo is a bit blurred!

He has a beautiful and very loud cockadoodledoo, and pretty feathers too :happy:

Stupid chicken caught and put on the outside of fence, also moved one of the feeding/egg laying houses outside the pen so now my chickens are even freeer range than before :)
The rabbits have the pen to themselves and visiting birds and cats now.

Quick post before I try to catch up on many posts. I've got the cold now but recovering again. It is just a cold. Thursday bed 8.1 but FBG much better at 6.3.
B. TAG and a slice of LC toast with ox tongue and coleslaw.
L. Nothing.
D. Ended up with a lot of back and forward so by the time I got to eat I just had chicken wings and a garlic dip. Handful of cherries.

Friday - bed 7 FBG 7.1. Still sniffy and a mild sore throat.

L. Nothing - early pick up day from school and boys to feed.
D. With a new stock of Lidl noodles I made a "spaghetti" with mussels and a tomato & garlic sauce. 2 squares of Godiva.

Will catch up on many, many posts now.
 
I ordered the bread in the end rather than rolls. I’m hoping it toasts well. Like yours my freezer fills as fast as I empty it so I’m not sure where I’m going to put it - it comes in packs of 3 loaves which will take me a month of Sundays to use. I wonder how big the loaves are? Happy to post you a few slices when my Zip Lok bags arrive if you want to try it? ( @DCUKMod I have bought an orange too in readiness for a weekend of gin experimentation yay!))
That risotto sounds wonderful, I will attempt something similar.
Btw what is that spicy prawn thing you get from Iceland? I’ve bought it once and liked it but couldn’t find it in there this week and I couldn’t remember what it was called to ask.
Let me know what it tastes like. I'll need a lot of space before I can consider buying it. The Iceland shrimp dish is this. There are 3 different ones but this is the one I add things to like spinach, Lidl noodles, mushrooms, cauli rice, dash of cream ....not all at the same time I hasten to add! The risotto does work well. It is just a case of making it the same way as a "normal" risotto gradually adding stock.

Saturday Bed 6.3 FBG was also 6.3. I have so many parcels for my niece my house looks like a sorting office. Still she's back today.
@Annb - sorry to hear about your DILs toe. Really that is not acceptable for a telephone consultation. @ziggy_w the cauli rice absorbs the stock and goes creamy with the addition of the cheese or a dash of cream. Not sure konjac would work the same. Chia might. The Glasgow/Clydeside situation is even more confused. You can't go into other houses unless it's for childcare/ caring. So they've said it's fine for grandkids to be with grandparents if they're looking after them but not if the grandkids just want to visit?? Parents come to collect them they're not allowed in. I think they have to stay 2 metres apart when they are in your house. So, you can meet your family in a pub and stay one metre apart, a restaurant but 2 metres apart and you can't sit at the same table, or a gym and goodness knows what the rule is there! How on earth is anyone supposed to follow this gobbledegook?? @Annb - no doubt you can tell me if I've got any of this wrong.

Thanks for the info Nicole though I am not going to make bread and admire you and anyone who does. The HiLo loaf is only available from Sainsburys.
Seems the HiLo bread is only available from select Sainsburys stores, none of which are within an hour's drive for me. It's looking like I might be able to special order it for collection, but if not, I'll only be able to grab it when I pass one of the stores that actually stocks it.

The HiLo website says that Ocado stocks it for delivery, but Ocado's website disagrees.

@Antje77 -- Hugs for the broken molar, I really empathize as my own teeth aren't really in great shape either.
@maglil55 -- Wow, this sounds good, didn't know that the cauli rice also turns creamy. So definitely worth trying. Ideally, it would be a bit al dente too, but I guess this would probably be asking too much.

Today ...

Breakfast: A double decaffeinated espresso with cream and erythritol.

Lunch: A small portion of ribeye cooked sous vide and then fried. Sauerkraut with cream and caraway seeds. Chanterelle mushrooms, onions, and parsley in a sauce made of creme fraiche and chicken stock.

Dinner: Lamb's lettuce with h/m Caesar's dressing, parmesan and three boiled eggs. Four tablespoons of yesterday's chia pudding. 20g of 88% chocolate. Dry red wine. Edited to add: 60g of cheese.

Off now to do half an hour on the elliptical trainer before getting back to work.

@DJC3 thanks for the brisket recipe. Brisket is definitely on the menu later this week.

Successful food day all round. After the little cheese and bacon ball ‘starter’ an earlier dinner than planned (cooked much quicker than the conversion table suggested) of the most delicious air fried lamb shoulder. Rubbed it with oil, paprika, pink salt and rosemary. Small pot of Greek yoghurt to finish.
