I wouldn't say I'm a great lover of veg either but I have found ways of making some things very enjoyable. Firstly cauliflower has become my best friend and usual carb substitute. Try mashing with butter and mustard - just like potato. Roast it with some chilli flakes and finish with a squeeze of lime or grate it to make cauliflower rice and stir fry with any herbs and spices you like. Shred some cabbage and boil until cooked. Fry bacon, onion and garlic in butter then add the cabbage. Add some double creamI have trouble choking down my veg and my vegetable "repertoire" is pretty restricted. I'm constantly on the look out for the best ways to cook veg. Think that's half the battle - cooking them properly! Maybe we need a veg-dodgers' forum ;-)
