What have you eaten today? (Low carb forum)

Went to see Mum today and forgot to take food with me. She’s in a care home now so no food in her house, at least nothing suitable for LC anyway. So on the hoof food purchased in the local corner shop who came up with a few suitable choices.
Breakfast at home: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Lunch: black coffee, cocktail sausages, an individual portion of cheddar and a Carb Killa bar
Mid afternoon: black coffee and some Lindt dark chocolate.
Dinner back home: scrambled egg on Marmite LC toast followed by SF blackcurrant jelly, cream and LC nutty granola.
 
Breakfast just coffee- another rushing out early day
Lunch 6 m and s crackers with small pack of Waitrose mackerel pate - out of date yesterday so had to eat! Tasted good still though and whole packet was less than 2 carbs followed by fage 0% yoghurt and hm berry purée
Mid pm DGF millionaires shortbread
Dinner pork shoulder and salads followed by DGF brownie and pot of tea to accompany Bake Off which I’m really enjoying this year.
Planning on breakfast next few days but good to change things round a bit.

Same here. Didn't enjoy Bake off last year, my first with diabetes as it just showed me everything I couldn't eat any more. This year I'm looking through different eyes. I don't want any of the food (well maybe the odd taste) but like the challenge and competition. Maybe I am fat adapted and cured of carb addiction after all.
 
Did not eat much for breakfast as feeling crook, couple of pieces of vegimite on low carb toast was about my lot.
Half a tub of high protein greek yoghurt, cordial with added goodness init for smoko.
A tin of beef and veggie stew and a couple of slices of bread, for lunch.
Some various cheeses, cherry tomatoes and a bit of limp lettuce for supper at six.

I will ask the Blue Care nurse why I feel like **** when she comes to dress my leg this morning, I hope this is not a foretaste of things to come

No cooking day today!
Slice of low carb bread with lots of grated celeriac, mayonnaise and salt and pepper, and another slice with a fried egg with Turkish sucuk sausage and cheese.

 

Whenever you mention grated celeriac with mayonnaise, I always think it’s exactly the sort of thing I’d like and I tell myself not to forget to try it. I always do forget though so please feel free to mention it often and at random intervals to remind me.

And a free tip for everyone who thinks peeling a celeriac is daunting: Just cut thick slices first with a large knife. The slices are as easy to peel and grate as an apple.

The nurse said I have a bit of an infection (not that pseudomonas whatever the last bit is) in my leg and to see my GP, she does not think it needs the emergency dept again though.

Glad to hear it, hopefully the GP can sort you out with some antibiotics ASAP.
 
Breakfast: bacon and egg as usual - dietician thinks this is too much processed meat but from myu point of view - that's better than the toast she thinks would be better. I wonder if processed fish is as bad as processed meat (smoked haddock or mackerel with fried egg).

2nd meal: depends on whether Em comes back today for her sleep-over. If she does, it will be chicken but if she doesn't, I'll keep the chicken for tomorrow when she probably will come. And I'll have one of the last pots of beef ragout. There are a couple more pots of steak and kidney in the freezer, but on last night's performance I may as well just throw them straight out.

My brother tells me that he hasn't heard officially about the result of his biopsy but that he spoke to the surgeon who told him that there is no trace of cancer in his ex-kidney. The growth was just a benign growth and there was not a trace of cancer in the peripheral material they took "just in case". Hurrah! Great result. Now to deal with the aorta issue.

Neil has finally given in and made an appointment to see a doctor about his sore shoulder (he was lifting his arm with the other hand this morning) because it is just getting worse. If it was a strained ligament, which he thought, it would be getting better, not worse. I think it dates back a few months now, to when he and his brother took out a wood burning stove and sat it out in the back "yard" to be sold. Then, of course, he helped the buyer get it into their vehicle which was a high, flat bed truck, so they had to lift it to almost his shoulder height. He just isn't the spring chicken he once was, unfortunately. At 54 he is getting to be middle aged. Even his younger brother is almost the oldest postie in their office. I had to laugh the other day when my cleaner discovered his age and was astonished that he is actually older than her mother! To be honest, neither of my sons look as old as other 50 year olds that we see around the place, or on TV. But they are both beginning to feel the years now.
 
Actually ended up having spicy lamb - my hand landed on that first, not the beef ragout. So I made some tzadziki to go with it - just as well - it was very spicy. Must have developed its strength while in the freezer. Very tasty though.

Neil apparently has a frozen shoulder and has to have steroid injections and use ibuprofen gel. It really is troublesome to him - he seems quite unable to use his left arm. I'm afraid I'm going to have to rely on Em and her dad to help both Neil and myself. I can drive to get Neil to the physio department but I can't get myself into the hospital for my jags on Friday. Em could probably push my wheelchair but it will take both Neil and Em to get the chair out of the car. Shopping is another issue - maybe No 2 son will be able to get some of it; the more specific things will have to be bought by Neil - maybe with Em's help. Luckily she is always very willing to do what she can. Her brother would be more capable but he has gone to the mainland to visit his elder brother.
 
Had trouble getting to sleep last night and was very hungry at 3 a.m. but resisted temptation.

Then a coffee morning with friends so had 3 bites of the fatbomb thingy I had created before I left home, which meant I was able to resist the biscuits being handed around
L: pate, 4 seedy crackers, cucumber. 2 lc millionaires squares from the freezer
Mild migraine mid afternoon , so had a sleep.
Not feeling too good so cooked boys dinner and just had 1 chip and a nut bar
 
Not a great deal of meals eaten yesterday, mainly consisted of black coffee and food my partner brought in at the hospital.
Tomato soup for dinner.

Feeling a lot better this morning.
 
Spent a lot of time in the kitchen with cool ideas for new dishes!
Made oven baked beetroots with onion, garlic, a splash of balsamic vinegar and some thyme. It was the first time ever I used fresh beetroot, so far I've always bought pre-cooked beets, no idea why.
Made an experimental spinach dish to go with it: chopped onion, some mushrooms, garlic, spinach and cream cheese.
Had a boiled egg on top because my mum always insisted you should have an egg with spinach, and also fried halloumi to go with both the spinach and the beetroot.

It looked wonderfully festive and yummy, and it tasted utterly boring, what a waste of time!
So I'll have to think of a way to use the leftovers in a better dish, as my meal was planned to be used for two days, but I'm not going to eat this again tomorrow.
I did make a picture before I knew how disappointing my meal was going to be, but I won't share it with you.

Instead you'll get a picture of the wonderful gift for myself I ordered a week ago, and which finally arrived yesterday evening.
The present is hot coffee all winter!

I keep the temperature in my home rather low, because there's always a door open for the dogs and cats, and to keep fresh air coming in because I'm a smoker. Waste of money to heat the place if all the heat blows out the door right away, so I make do with a little heat and a blanket on the couch.
The downside is that your coffee gets cold before you can finish it.
I usually buy my mugs for 50 cents at the thrift store, so spending 25 euros on two isolated mugs just for myself is a very large present. Very happy with it too!

 
@Antje77 hot coffee is an absolute necessity, and you’re worth it!
Glad you are feeling better this morning @Riva_Roxaban . Also glad your brother’s biopsy was clear @Annb that must be a weight off.
Today I had breakfast of 2 soft boiled eggs with asparagus soldiers.
Mid morning my delivery of DGF cakes arrived with 2 free boxes of brownies! Obviously I had to quality control so ate one with my morning coffee.
Lunch was coconut tortillas filled with chicken tandoori chunks, rocket and h/m Mayo. A handful of walnuts and Montezumas absolute black buttons.
Dinner - pork stroganoff with broccoli and green beans.

Late morning: black coffee and Atkins bar.
Skipped lunch.
Mid afternoon: black coffee and chocolate chia pudding.
Dinner: Balti chicken curry with cauliflower rice followed by SF raspberry jelly, cream and LC nutty granola.
