What have you eaten today? (Low carb forum)

Bad start today - Em stayed overnight and wanted to make chocolate chip pancakes for breakfast. I have a problem making pancakes. My electric hob is not sufficiently controllable to get the temperature right and avoid charcoal like surfaces for the first few. However, I am loath to just dump those first few and, since I don't mind burnt food, I just had them. Em had some of the rest and there are lots left over. Those will go down to her house when she goes. Took a full dose of insulin to get BG under some sort of control.

I will have to be careful for the rest of the day, especially since Neil couldn't get quite a lot of the things on the shopping list yesterday. I have some bacon, some smoked salmon (which Em will scoff if she sees it) avocados and some salady kinds of things. There is a cauliflower and a red cabbage as well. I'll just have to make something with those things.

She left a few morsels of smoked salmon and I'd made a huge platter of salads - it included apple and melon and some strips of red pepper. She ate all of the apple, the melon and the pepper but left quite a lot of the lettuce, tomato and cucumber. So - I'll add a few bits and pieces to that - avocado (I didn't put that in the salad - it's one of the few fruits/vegetables tha Em won't eat), bacon bits but I'll leave the cauliflower cheese for tomorrow maybe.
 
Behind again!

Two hearty, carnivore main meals the past two days - beef short rib yesterday and lamb shoulder today.

Interspersed with various quantities of pistachio nuts, Fage 0%, raspberries, extra thick double cream and crunchy almond butter and a cheeky chocolate ice cream at Kew Gardens yesterday. Two squares Lindt 90% this evening - hoping it stays that way!

I've been having Internet issues so missed a couple of days.
Thursday dinner was at a friend's who kindly did a low carb Spanish chicken dish, then a "deconstructed" ie not put together trifle, so I had the sugar free jelly, the berries and the cream. That's how you tell how good a friend Is!:)

Friday was :
skipped breakfast
Lunch, olives, cheese and hm seedy crackers, and 2 small portions of a nice dessert being given as free tasters.
Several tastes and sips of things at a food event, but not bad carb wise
Dinner was chicken drumsticks, sag aloo (spinach and cheese, might have the wrong name) and a lentil Dahl made with spring greens. 1 glass red

Today was an "all you can eat breakfast" so I had 2 fried eggs, 3 rashers bacon, 1 sausage, half a piece of black pudding and 1 tomato

Dinner will be burger in lettuce
 
Late breakfast - one each of a field mushroom,slice of bacon and egg, on lc toast
Lunch small salad with some kimchi and a leftover cooked chicken thigh followed by stewed rhubarb and hm yoghurts and a few squares of 90% chocolate
Dinner marinated spiced chicken strips with cauliflower rice and Corriander with glass of soda water with splash of gin followed by lc chocolate brownie.
 
Had a rather messy meal so no picture today because it tasted much better than it looked! :D

I added an extra egg to part of the leftover mix for cauliflower rösti. Figured that would help to not have them fall apart when pan fried instead of baked. Worked well, and they were very tasty, especially with a little hot sauce and some mayonnaise on top. :)
I had endive salad and two small but thick chorizo sausages with them. And that's when things started to get messy.

I now remember why I don't eat sausages too often, I have no idea when they're done so I always feel a bit lost when cooking them. I'm the kind of person who flattens their meatballs and burgers to have them cook quicker, or I use the oven.

So of course the sausages weren't done yet and back to the kitchen I went with my plate. I cut the sausages in half, lengthwise, to make them cook quiker and chucked them back in the pan. But by the time the sausages were done, the rösti's had gone cold, so I put them back in the pan as well, after scraping off most of the hot sauce/mayo. Of course some of the salad went in the pan as well, sticking to the rösti's.

In the end, I put everything back on my plate, re-applied the hot sauce/mayo mix still sitting on a fork and enjoyed a tasty dinner, but you can likely imagine the battlefield-like appearance of my food after all that! :hilarious:

Tomorrow will be the last of the rösti's, and after that it will be 5 days of adventure!
I'm going sailing with a school class of German teenagers and their teachers.
My job will be to teach the new deckhand everything he needs to know to safely do his job of handling the ship together with the captain, and to do all the sailing manoeuvres with the group.
This particular captain has gotten his knee replaced only 5 weeks ago, so he can't just take a quick sprint to the front to help his deckhand out.

As a rule, we eat with the guests who are to provide the food. Which means I'll be taking a ridiculous amount of emergency food with me, I don't want to be stuck having to eat spaghetti with ketchup, which is a common dish when the group is a school class! :wideyed:
 
Hi all. Well, I've had a wonderful catch-up with my DIL over the last 2 days but my diet has suffered enormously! The cold I thought I had, didn't materialise thank heavens so have no idea what was wrong. But I'm back to eating for diabetes again. Tbh, I'm so fed up of pandering to diabetes! I want to be normal!! :wacky:. I'm not listing what I've eaten because you would all be as ashamed of me as I am of me! even tho I know you would all rally round. I will be more sensible.......:angelic:

Hi @Antje77. They are made similar to fathead dough.
300g mozzarella
150g almond flour or ground almonds slightly cheaper that the flour
Heaped tea spoon baking powder
Tea spoon cream cheese
Half tea spoon Italian seasoning
Half tea spoon garlic powder
Half tea spoon chia seeds (optional)
Half tea spoon chilli flakes
3 x medium eggs. 2 for dough. 1 for egg wash
Preheat oven to 180c

Add all dry ingredients together
Melt mozzarella in microwave add cream cheese. Pour the dry ingredients in mix and add eggs. Add some flour to you counter top and knead ingredients, you may need to add a little more flour as mix can be a little wet. I cut into four pieces.

Take each piece and flatten out either circular or rectangular to around quarter inch thick and add whatever your favourite pizza toppings are along with pizza sauce and mozzarella on half and fold over the other half. Use a fork to flatten the edges and paste on some of the beaten egg. I load them with loads of different meats and plenty of mozzarella. 15-20 mins in the oven till dark golden.and enjoy.

Struggling with diabetes is nothing to be ashamed of!

Instead, I hope you enjoyed the foods you had, and you'll just shake it off and get back at the straight and narrow without telling yourself you should be ashamed.
Shaming people only serves to make them unhappy, and that includes yourself.

breakfast: coconut porridge again :). finally I knew how much insulin I need for it at last :)

lunch: chicken bread (cooke from yesterday)
dinner: 2 falafel 1 bread while watching Liverpool game :)

A bit behind again. Been busy with teaching duties with No 2 grandson and eldest got his second stripe at jujitsu in a matter of weeks. He's also discovered he likes rugby!

D. Cajun chicken flatties with spinach, mushrooms, bistro tomatoes and walnuts.
Strawberries/raspberries and clotted cream.

B. TAG and 2 slices of SLC toast with egg mayo.

D. Sizzle steak and another mix of spinach, santini tomatoes, mushrooms and walnuts.

Thursday 5 May bed 7.7 FBG 7.9

B. TAG and 2 slices of SLC toast with ox tongue and whipped cheese.

L. Nothing

D. After jujitsu - M&S black pudding, 4 slices streaky bacon, santini tomatoes and 2 fried eggs.
1 HC gin truffle (these things are addictive!)
 
Three slices middle bacon, two egg and cheese omelette, tomatoes, two slices of toast and ginger marmalade for breakfast.
No smoko, or cordial today as I have started to put the osmolax into my bottles of water, two scoops into a 600 ml bottle,
Rib steak and veggies, gravy for lunch.
Mashed up leftover vegies with a plash of kimchi mixed in toasted sandwiches for supper at six.

No snacks watching Prime, just a glass of single malt whisky.

Ginger marmalade is one of my greatest temptations, but I like all ginger come to that. Best place to visit on the Sunshine Coast is the Ginger Factory at Yandina if you are ever in Australia.

Hi All been missing a few days mainly due to persistent tummy problems so been eating little and randomly. Hoping to speak to GP on Tues and hopefully get referred on. Friday morning had 1 biscuit with my mug of tea just to take my tablets with. Lunch was a slice of buttered LivLife toast, more tea. Supper was a LoDough pizza with small amounts goats cheese, halved cherry toms and olives. Yesterday for brekkie had small slice of ordinary white toast with my tea. Lunch was mug of chicken soup followed by yogurt. Supper was Mr PMs request of Indian t/a so had a popadom and a cauli bhajee, soft and not too spiced. No idea what today’s offerings will be other than chicken in the evening. The trouble is with my tummy issues the food that suits best is white toast so might have to give in on that till I feel better.
