What have you eaten today? (Low carb forum)

My 'optimistic' sticker was for aunts 4th wedding at 78! I'll have some of whatever she's on!

Coffee out, but cafe had no cream so had milk
L: 2 scrambled eggs with a little salami and spicy cheese. 2 squares hm lc cauliflower cheese savory thingy. Small scoop icecream, topped with cream.

D: 2 95% sausages cooked with cabbage in tomato sauce.
Tried a new drink found at a farmers fair this weekend. Billed as a cross between wine and beer it tasted like a mild light beer but really came into its own when I added fresh mint leaves and some cucumber. Watching libre to see effect. This one is alcohol free, and says sugar free. If bg is OK it will make a pleasant change to allow me a 'special occasion ' drink.
Sadly just tested and have gone from 5 to 9 in 40 minutes. Going down again now. Hoping its not the drink but think it is. Will try again another day
 

So frustrating when this happens. Good luck for next time though.
 
Breakfast was h/m yoghurt with seeds and raspberries.
L- packed lunch 2 sandwiches made from SLC bread ( 4 slices) sliced turkey breast, Jarlsberg gherkin and h/m mayo) Small dollop of h/m yoghurt. BG rose to 8.3 and I don’t know why unless it was having 4 slices, rather than 2, of the SLC bread. Still only 2.5 carbs so I’m perplexed and miffed. Rest of meal was v low carb.
D- Chicken thighs marinated overnight in yoghurt and spices then air fried. Salad and vinaigrette dressing. Brie and red wine.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: Balti chicken curry with cauliflower rice followed by SF blackcurrant jelly and cream.

 
I didn't have my cauliflower cheese after all - I was feeling so groggy and sore that I just couldn't get out of the chair and it burned. I had a tiny taste of it and decided that it wouldn't help the way I was feeling so just had a cup of blackberry tea and left it at that. BG just now is 17.9 so I've taken a correction dose and am going to bed. Since it's only 10 pm I'll probably be back up by midnight but at least I might feel a bit better then. G'night all.
 
Savoury liver and bacon, two slices of toast.
Sausages and mashed spudlite and pumkin with added diced raw onion added during the mashing, no gravy for lunch.
Toasted cheese, ham and tomato sandwiches for supper at six.

Small glass of single malt whisky before I went to bed.
 
0930hrs B chia seed pudding with greek yogart and nuts
1400hrs L keto pizza
1900hrs D steak with fried mushrooms and steamed cauliflower & broccoli .
Snack of my usual . 85% chocolate and few brazil nuts
 
Brunch of more-or-less Greek-style salad - olives, tomatoes, lettuce, cucumber, pepper, one small spring onion, with small amount of feta cheese.

Evening meal of 2 eggs, 2 rashers of bacon, mushrooms, tomato, and 1 superdeluxe sausage from our independent butcher shop. Oh my that was delish!
 
Breakfast: a white bread cheese sandwich again - as before just because it was within reach and I was too stiff to move about.

I found a box of rolled pork slices (uncooked) in the freezer a day or so ago and I asked Neil to get it out for me. It is currently defrosting and I'll try to make something with some of it today - not many vegetables available so it will have to involve tomatoes, peppers and onions, or one of the 2 kinds of cabbage I have in the fridge (red and white). Not sure yet what to do. Any ideas anyone?

I’d dice and fry the pork with chopped onions and perhaps make a side dish of cold cabbage and tomatoes.
 
@Annb I haven't caught up on the posts yet, but I hope you survived the vampire nurse. @Riva_Roxaban sorry to read you are having bleed issues again. Hopefully that has stopped now. Monday 13 June - bed 8.5 FBG 7 9
A really busy few days (what's new?)

B. TAG and 2 slices of SLC toast with coronation chicken. Up early to put together a GF packed lunch for eldest who was going on a P7 outing with the school to Ninja Warriors. Still have the double school run but I made it.

L. Was the SLC thing I listed as breakfast above.

D. A M&S chicken katsu burger with avocado, santini tomatoes, walnuts, port salut, coleslaw, Emmental cheese slice. Strawberries and cream.

Eldest very craftily claimed he had a sore tummy when they got back late afternoon. He didn't but he reckoned it would make it easier for me rather than trying to be in two different schools at the same time. Clever boy!
 
Tuesday 14 June bed 7.8 FBG 7.1

2nd busy day. Up very early to shower and make another packed lunch before picking eldest and one of his friends up at 8 15am. 1st of 2 full days at the Grammar before they move there full time in August.

B. TAG no time for anything else. Got them there for 8 30 then back to collect No 2. Got him to school way too early. It gave him too much time to be a pest!

L. Nothing. I went straight to physio from the school runs. Dip have a nap until son called to ask if grandson was definitely at the Grammar? He was (the tracker on his watch had gone do-lally)

D. Starving! M&S prawn cocktail, salmon fillet, 1/2 avocado, santini tomatoes, walnuts, mini mozzarella. Raspberries and cream.

Gin truffle. Despite nerves and moaning 1st day was a great success.

Early night for me as I have to do this again tomorrow.

Dinner: salt and chilli ribs with Brussels and runner beans followed by SF cherry jelly and cream.
 
I had a spontaneous sleepover at my aunt's before going to a theme park with a friend and her two boys, 8 and 11 years old today.

My aunt made us an absolutely gorgeous meal, despite only knowing I'd be over a couple of hours before, and despite being almost blind!
I hadn't seen her since before covid, we had an absolutely lovely time!

When I arrived after a hellish ride I first had a beer and a jenever (which shares both cultural and etymological roots with gin, although it's a different drink), with high quality cashews.

For starters we had smoked salmon with seaweed and a rettich mayonnaise.
Mains was leg of lamb in a creamy sauce, a good salad, runner beans and fresh peas she peeled that afternoon. I'd never had fresh peas before, they're amazing!
Dessert was 3 different specialty cheeses, again, not stuff you find in the supermarket.

A bottle of rosé somehow disappeared as well.

So a full meal, no insulin needed (exceptforthebeer), and that without even discussing the meal beforehand, my aunt is amazing!

I made pictures of the food as well but my computer is broken, so don't expect too much input on the forum from me until I've had it fixed, using my phone is a pain.

So you all behave now we're down a moderator or I'll get back at you when the computer is working again!
 

Everybody should have an aunt like that! She sounds amazing. Good luck with getting your pc fixed.
 
Been awake since 4am so by 9:30 I felt like it should be lunchtime -Had a very decadent breakfast to perk me up - kale, blanched then fried with butter and garlic. A glug of cream then popped in the oven with 2 eggs cracked in the middle. Fabulous. Should have had grated cheese on top but I forgot.
Lunch was mackerel pate and M&S seedy crackers. Choc chia pud.
Dinner was smoked haddock with creamy tomato and pepper sauce ( @Annb mentioned smoked haddock a few days ago and I’ve been craving it ever since) asparagus and broccoli, 2 glasses dry white. Followed by h/m yoghurt
