What have you eaten today? (Low carb forum)

Breakfast: small dish of berries and full fat Greek yoghurt. 2 slices counted wholemeal toast (9g of carbs per slice) with bovril
Lunch: cheese and small apple with 3 crackers
Dinner: ham, cheese salad
 
Lovely- real comfort food!
Unfortunately, the cream I was going to use in the sauce had gone off, as had the mascarpone - both had been opened and left in the fridge - so I was left with a tub of crowdie and some grted cheddar. So the sauce wasn't as thick as I would have liked nor was it all that cheesey but the fish and the cauliflower mash were good.

Em is over her covid and here for a sleepover, so I guess we'll be baking tomorrow. I have some recipes I need to try out for an upcoming event in Stornoway, so I can try out some of those.
 
Sardines on RyVita for breakfast. Just about OK but I'm no more fond of RyVita now than I ever was, but I really didn't feel like eating sardines straight out of the tin.
Em didn't get up until about 12.30 and had a bacon sandwich for her breakfast (without the crusts - she doesn't like crusts).

I will have to have a 2nd meal today because I'm already hungry so maybe bacon and egg in a while - possibly after Em has gone home.

Beef bone broth with vegetable stock cube, lump of butter, remains of bag of salad leaves that wouldn't keep for another day, leek, courgette, mushrooms, half a red pepper, turmeric, cayenne, thinly sliced leftover pork sausage (butcher makes his own so very low rusk) small amount of lardons.

Supper will be roast lamb, cauliflower and cabbage.

Lumpy soup sounds great. I’d never thought of chucking a wilted bag of salad greens into soup but it’s a really good idea.
 
B- dollop of h/m yoghurt with raspberries and seeds
L- Brie, olives, nuts, kale crisps. Then choc chia pud.
D- Slow roast belly pork ( followed @Goonergal ‘s method of wrapping a tinfoil ‘box’ around the meat part so it renders down almost like a confit. Cracking was fab. I poured a kettle of boiling water over the skin and dried before cooking. Even my dodgy teeth could cope. Veg included garlicky kale, broccoli, roast cauli and Edemame beans. Busy day so stuck to my yoghurts.
10ish a few spoons of hm yoghurts
2.30 a few more spoons of hm yoghurts to keep hunger at bay while cooked main meal
5ish main meal steak, local asparagus, some fried onions and mushrooms cooked in butter with pepper and then dash of cream added to make a sauce.served with small glass of red wine followed by lc chocolate brownie.

Looks fab. I had roast belly pork for lunch in a pub today and while the meat was lovely and tender, there was no crackling in sight - top was all flobbolly! Still they did allow me to substitute the starchy veg and potatoes for pigs in blankets, which turned out to be 2 large, delicious and very meaty sausages with decent bacon. One of my friends benefited from the Yorkshire pudding!
 
Lazy but yummy meal of a burger with onions and a very lazy salad of endive, onion, mayonnaise, salt, pepper and hot sauce, with cooked asparagus with parmesan.

More asparagus to be eaten tomorrow, I'd be happy with ideas on what to do with them!

Skipped breakfast.
Walk with a friend
L: 2 chicken drumsticks, salad. Yoghurt with 1 sq chopped chocolate and home grown tiny alpine strawberries
Mid afternoon. 1 mini icecream , the choloateones from lidl
D: roast chicken, green beans, carrots and broccoli. Mint ice cream.
(Must get out of this ice cream habit which has crept up)
 
Toss them in olive oil then air fry, or grill. Add salt or parmesan, or dip into soft boiled eggs
Dipping in eggs sounds very good!
No airfryer, and it's very unlikely I'll be motivated enough to build a fire in the grill and wait for it to turn to charcoal only to grill asparagus and a burger for myself, but I expect the oven will do the trick as well! Also no reason to not add parmesan AND dip into the boiled egg! :hungry:
 
1130hrs brunch streaky bacon and fried eggs
1430 hrs feeling peckish chedar cheese with chorizo
17030hrs D roast beef with cheese cauliflower, broccoli, couple sliced carrots, small bit of gravy
Snack of 85% chocolate and brazil nuts
 
Friday 10 June bed 8.9 FBG 8.3. BGs higher than usual but I'm not too great. My right leg is acting up. I have pretty bad pins and needles. Usually it goes away but this isn't shifting. As most of you know, I have severe nerve damage due to a crash so, I'm used to these oddities. This is awful though. Walking is a nightmare. Thank goodness itvis just one leg.

B. TAG and 2 M&S crispy cheese crackers with whipped cheese.

L. A HC Gin truffle to take my mind off my leg!

D. A small piece of crustless quiche, 4 chicken wings, coronation chicken (needed eating), santini tomatoes, 1/2 avocado, mini mozzarella.
Pink gin with diet lemonade.

I forced myself to go shopping as eldest grandson is coming to stay tomorrow night.

@MrsA2 - he's doing fine. He's expected back at school tomorrow (Monday) complete with a cast ready for signing! @Antje77 condolences for your friend. I have to say every time you mention your neighbour in the garden, I can't help thinking about The Lady in the Van by Alan Bennett, although your neighbour is not cantankerous!

Saturday 11 June - bed 7.3 FBG 7.5. I ended up with both boys staying. Youngest was supposed to be going to the Safari Park (where they were the animals!) then a sleepover but it was cancelled. No mean feat with a dodgy leg!

B. TAG and 2 M&S crackers with coronation chicken.

L. Nothing

D. Another piece of crustless quiche, mortadella, ox tongue, wafer thin beef and ham. Mini mozzarella, santini tomatoes and 1/2 avocado.

I started reading a new book to the youngest but both ended up listening. It's called Tails. The story is told by animals and the first chapter is very funny told by a kitten who is adopted by his human family. Boys laughed out loud a few times (as did I).

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!

Today Sunday 12 June - bed 7.4 FBG 6.8

@PenguinMum - I liked the occasional banana a similar way but brandy rather than rum plus melted marshmallow. I could not go neat that now. Glad to see Octopus tea was really there!

B. TAG and a SLC bacon sandwich. Hubby was making bacon rolls for the boys. Thankfully they were very well behaved as my keg was in a worse state. Hubby accidentally kicked my leg during the night. I was awake from 4.30am thanks to that.

L. Nothing I was too busy deep massaging my leg

D. Gammon, carrot/swede, cauliflower cheese, Broad beans. Campari and soda.

Thankfully, my leg is now improving. I'll go on with the deep tissue massage plus paracetamol. I had a couple of hours sleep once the boys went home. DIL has offered to stick needles in me if it doesn't go away! She is qualified in medical acupuncture though.

So have a 'hug' for the leg, an 'informative' for the new word (cantankerous) and an 'agree' for your assessment of my neighbour-in-the-garden not having that particular trait, a 'friendly' for your condolences, an 'optimistic' for being happy it's just one leg, a 'funny' for The lady in the van, whom you've mentioned before I think but I still haven't looked it up, a 'winner' for dealing with two boys, a 'creative' for the reading and laughing, and a 'like' for being you!

And here's your 'useful' to complete the set!
I don't have Parma ham, but I do have some slices of a comparable ham which need to be eaten.
With 'griddled', do you mean putting them on a baking tray or in a casserole in the oven with the garlic butter? And do you have an indication of how long they'll need to be griddled? I think I need some more information because I think this will be what I'll eat tomorrow... :hungry:
