What have you eaten today? (Low carb forum)

Have not posted for a few days, afair few carbs to get softer food eaten to run through the digester as I have been bleeding again.

Left over veggies omelette with bacon, toast and vegimite for breakfast.
No smoko.
Pea and ham stew out of the freezer for lunch.
Shephards pie (mre) mashed pumpkin for supper at six.

Glass of single malt whisky before an early night.

So have a 'hug' for the leg, an 'informative' for the new word (cantankerous) and an 'agree' for your assessment of my neighbour-in-the-garden not having that particular trait, a 'friendly' for your condolences, an 'optimistic' for being happy it's just one leg, a 'funny' for The lady in the van, whom you've mentioned before I think but I still haven't looked it up, a 'winner' for dealing with two boys, a 'creative' for the reading and laughing, and a 'like' for being you!

And here's your 'useful' to complete the set!
I don't have Parma ham, but I do have some slices of a comparable ham which need to be eaten.
With 'griddled', do you mean putting them on a baking tray or in a casserole in the oven with the garlic butter? And do you have an indication of how long they'll need to be griddled? I think I need some more information because I think this will be what I'll eat tomorrow... :hungry:
Fry them in a griddle pan like one of these Depending on the thickness of the asparagus, they may need a blanch first. Thinner asparagus, just griddle slowly wrapped in the ham. Streaky bacon works well too.

I don't have a pan like that but I expect a frying pan will give a yummy result as well!
And tell your leg I wish it a good recovery and your husband he needs to sleep more careful!
 
Morning All. Yesterday started with usual slice of LC toast and copious tea.
Then we met son at a pub garden early afternoon and I had starter of smoked salmon & prawn cocktail which was dainty and they used creme fraiche & grated lemon for dressing. Then my favourite which I seldom have was roast leg of lamb with a nice bowl of cabbage, broccoli, red cabbage and carrots (swapped for roasties and Yorkie) and a little gravy (had very tiny amount of red cabbage which wasnt too sweet & carrots). Very delicious. Shared bottle of Provence rose. Didnt eat again yet FBG this morning after 16 hours was no better. Am starting to run down the fridge in prep for going to Cornwall early Thursday. So Bolognese tonight with medley of green veg & grated parmesan. Baked chicken breasts with ratatouille Tues or Wed and other supper will be chicken in a mushroom cream sauce with tarragon and cauli rice. Lunches are more challenging for next three days but will involve cheese, eggs, ham and salad. That should do it. @Riva_Roxaban sorry to hear of the tum issues and hope you are better now, sometimes a few carbs can get you through when needed. @maglil55 hug for the sore leg and I would move to spare room or even better send hubby there!!
 
Breakfast: bacon and eggs with 1 dry RyVita and tea (3rd mug so far today).

I have to go to the GP Practice to have blood taken for a quarterly blood test - that's if they can get any. Last attempt at the hospital a couple of weeks ago was unsuccessful and left me with lots of bruises - some of which are still there, so that will restrict the potential sites for today. I am, apparently notorious both here on the Island and at Raigmore hospital in Inverness for not giving up any blood despite every effort by nurses. I keep telling them that the only place my GP could find a reasonable vein was inside my wrist at which they shudder and refuse to do anything of the sort. It hurts, but it's not as bad as half a dozen attempts elsewhere and needles being swivelled and poked around to try to get the vein. The hospital is going to have another go at getting some next week.

2nd meal will have to be some sort of veg soup made once I get back from the bloodletting. If Neil can buy me a cauliflower, that's what I'll use.
 
10ish a few spoons of hm yoghurts
1.30 two boiled eggs and one slice of lc buttered toast followed by a few berries and hm yoghurts and a few squares of 100% chocolate
5ish chicken that had been marinated all day in Indian spices served with garden salad and kimchi and glass of kombucha followed by lc lemon cake.
 
B: handful of nuts. Coffee with cream
Exercise class
Mint tea
L: salad with 1 chicken drumstick, 50g brie.
Mid afternoon really hungry so ate a load of yoghurt and blue berries
D: chicken and chorizo in tomato sauce served on green beans and broccoli. A mini milk ice cream and 1 sq hm lc brownie.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: cheeseburger on a LC roll with leafy salad and two cherry toms followed by SF blackcurrant jelly and cream.

B -Small bowl of the new batch of 30hr yoghurt made with cream - wonderful! Seeds and raspberries on top
L- Sliced Turkey breast, supergreens sauerkraut and h/m coleslaw DGF cake
D-Neck of lamb stew. Swede and a few carrots in it. Choc chia pud. Raspberry gin and soda later.
 
Fried mashed veggies, bacon eggs for breakfast.
Lamb shoulder chops, mashed spudlites, pumpkin for lunch.
Tin of chunky beef and veggie soup, couple of slices of toast for supper at six.

Glass of single malt before a early night in bed.

I have got a appoint to see another GP this morning for a medication review, this is for my continued use of opiod painkillers prescribed by my palliative care doctor.

I have got my printout of what medication i take overall, so they can straighten my record out at the practice. The listing they have, includes medication that has been discontinued.
 
1100hrs another brunch , poached eggs grilled bacon and mushrooms
1700hrs piece of 85% chocolate
1900hrs spicy chicken and peppers dish with veg in restaurant after long drive to west of Ireland for little family break
 
Just had a few bits of crispy, streaky bacon for breakfast.

Later I will use the tiny cauliflower Neil managed to get for me yesterday to make cauliflower cheese.

I have no idea why, but Neil says there was very little in the way of vegetables or fruit in the shops yesterday. Something with the delivery systems, I guess either ferry delays or lorries not able to get to the ferry in time. He did also manage to get a few small, sad bits of purple sprouting broccoli, but that was all. Must get in some packs of frozen veg to make sure we have some in when the shops run out.

I generally eat only one meal a day (OMAD), sometime mid-to-late afternoon.

Dipping in eggs sounds very good!
No airfryer, and it's very unlikely I'll be motivated enough to build a fire in the grill and wait for it to turn to charcoal only to grill asparagus and a burger for myself, but I expect the oven will do the trick as well! Also no reason to not add parmesan AND dip into the boiled egg! :hungry:

Do you have a ridged griddle pan? If you do, heat that to a HOT heat (yes, I know), then having brushed the asparagus with an oil of your choosing, the seasoned with salt, pepper, garlic or anything else you fancy, drop them onto the griddle and ignore for a few minutes, then turn over. The asparagus should be cooked, but also have some delicious charred stripes on them.

Delicious.

(Tonight's dinner here will be a ginagerous pigasaurus chop. I'm hungry already today!)

Edited to acknowledge you don't have a griddle pan, but the frying pan would be fine - just more char and no stripes. :) )

Welcome to this thread look forward to seeing or hearing about your one meal a day.

Today I had
10ish a few spoons of hm yoghurts
1ish a two egg cheese omelette with portion of kimchi followed by two small strawberries with hm yoghurts and some 100% chocolate
5ish - as photo - a couple of venison steaks,wrapped in Parma ham pan,fried for a few mins and then rested served with a salad mainly leaves and herbs from the garden and a few Isle of Wight tomatoes (green and dark red) plus another portion of kimchi and the brine, followed by lc chocolate brownie.
I hope to read this thread when have time over next few days but will be away on caring duties so won’t be back to recording my food until beginning of next week. Im hoping to stay low carb as usual but know there will be a few challenges ahead including an aunts fourth wedding (both aged 78) and the expected beige buffet!
