What have you eaten today? (Low carb forum)

Sausages, hard fried eggs, tomatoes, two slices of toast and vegimite for breakfast.
Red Rooster chicken halves done in some mild peri peri sauce marinade, green veggies for lunch.
Toasted cheese and onion sandwiches for supper at six.

Glass of single malt before bedtime.
 
Seemed to get away with yesterday's pizza, level around 6 overnight.

B: yoghurt, seeds, raspberries
Temp dropped from 23° yesterday to just 10° today, so a very bracing walkaround a lake
Skipped lunch
Ice cream with a cup of tea, but forgot how big even a single scoop is here . Spike to 12 drpping to 3.8. I just, must get back to my 2 bite rule.
You should have seen hubbys chocolate cake - huge! I only looked.

D: 1 slice leftover pizza, 1 chicken drumstick

They have a fridge, and they invited me for dinner in their caravan too tonight!

Always a bit uncomfortable because it's complicated to explain you'd love to but it depends on what dinner is without being rude.
Especially with people you only met yesterday.
But they were very understanding, if a bit puzzled by how to make a low carb meal!
 
Friday 7 October - bed 7 FBG 7.1 - YAY! Much better. Boys went off to sleep quite happily after daytime dramas were dealt with. They were awake at 6.20am and the had their blether time while I negotiated multiple breakfasts and orders for packed lunches on the way to swimming (half day Friday). After swimming we headed to the railway station to get Mum & Dad.

B. TAG and I felt comfortable enough to have 2 slices of SLC toast with ox tongue and coleslaw.

L. Nothing - 1.5 hours in pool with boys then the usual palaver encouraging them to dry, dress, comb hair etc.....

D. After returning son, DIL and both boys home. 4 GF pork chipolatas, mix of wilted spinach, mushrooms and santini tomatoes, 2 fried eggs and mustard.

Surprisingly, after having the boys for 24hrs, I didn't need a large gin and a darkened room

@RosemaryJackson as @PenguinMum said, you can do the fish fingers homemade. I do them but the can be fiddly.

Cod loin is the best to use as it's a nice firm fish. My LC crumb is an even amount mix of almond flour, milled flax and parmesan. I tend to add lemon zest to the base mix for fish plus sesame seeds as the seeds give you a nice crisp exterior. A variation I've made on this (usually for the grandsons) is fishcakes. I just cook the fish and mix it with either cheesy cauliflower mash or celeriac mash. I season and add chopped parsley. I have a "stuffed burger press" which I use on the fishcake mix to stuff them with crushed peas. Dust the fish cake (I use whatever is handy - vital wheat gluten, coconut flour etc. and refrigerate. When better set, dip in beaten egg then in the LC crumb. Refrigerate again before frying later. Boys refer to them as "surprise" fishcakes as they are never quite sure what I'll put in the centre.
 
Just had a small sandwich with edam. That's breakfast. I would have had bacon and egg, but although I have lots of both, they're in the big fridge in the back porch and my legs are just not up to struggling through just now. Maybe I'll get them through if my legs recover and have that for my 2nd meal today.

Feeling lazy today - as yesterday, so I'm still sitting here in my pj's and dressing gown. I spent all day yesterday in my pj's. Lazy is the word. Actually, I remember many years ago I was getting into the habit of draping myself over furniture and leaning against walls and kept telling myself to stop being so lazy, feed the boys and wash the dishes. Turned out I had Hepatitis A. Apparently there was a lot of it around in Dumbarton at the time. I'm not that bad, so it isn't anything like that. Maybe this time, I am just being lazy.

I don't know yet, we'll eat later this afternoon.

Today I went to a car boot sale where I had an amazing burger too. Didn't eat the bun.
My camping neighbours happened to be there as well, which was lucky because their dogs were happy to clean my hands after eating a burger with lots of extras without a bun or cutlery.

After that I went to the beach in Clacton and was brave enough for a quick swim!

I had some of the cheese as an in-between meal snack.

Main event today was home cooked though. Well, AirBNb self cooked! Fried 20% mince with smoked bacon and onions, with an egg beaten in.

 
I dragged myself to the back porch and retrieved a packet of streaky bacon and a box of eggs. Forgot to bring butter, but I can do without that for now. There's enough fat in the bacon to cook the eggs. If not, I'll just put a little olive oil in the pan. Em's here just now - she's been ill for a few days with some sort of tummy problem (interesting, so was I), but she's back on form today and wanted to come for a visit (wanted to play with my tablet). She's had the last of my bread spread with chocolate spread and an ice cream, so she's done allright for her first day out of the house.
 
My niece can't wait to get in from work and into her PJs, dressing gown and slippers. I love to have an evening shower and do the same. Nothing lazy about it - just cozy/comfortable as we edge into darker/colder evenings.

Look what amazing people!
They had mash and beans with the sausages I brought, but after my very brief explanation of low carb yesterday night they made me a large portion of veggies!

I didn't eat all the beans, they still shot me up more than I like (also because I bolused very conservatively because of all the going low yesterday) but I'm fine with diabetes control not being as tight as at home.
Currently sitting at 8 and happy with that. Back to normal and without beans in a couple of days anyway!

Tomorrow I'm going to try out Keto Bite UK in Frinton for my last meal before heading back home on monday morning.
Should go better than today's beans!

 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: more Dutch cheese and mayo with salad, coleslaw and chicken followed by SF cherry jelly and cream.

 
Saturday 8 October bed 7 FBG 7.1 - Double YAY!! How I would love to have a Coconut bar or a DGF but I'm not giving in. Currently sitting at 6.8.

Really busy day. Jujitsu this morning, dropped son en route for him to get shopping done/collected on way back. Straight to do my shopping and just had time to unpack it/put away before taking grandson for his second covid jab. Picked up hubby from football, sorted out dinner and relax!

B. TAG and 2 slices of SLC toast with ox tongue and whipped cheese.

L. Nothing - no chance in today's schedule.

D. Usual cold cuts. Chicken with stuffing, ox tongue, wafer thin roast beef, pork and egg, smoked duck, coleslaw.
Cappuccino made with almond milk.

I'm debating a no sugar hot chocolate made with soya milk currently.

Looks like a great meat fest all you guys had.
