Glad you enjoyed the soup. It's a good standby because it also freezes pretty well. I also sometimes use it as the base for a quick minestrone, leaving out the cream, adding garden peas and some beans from a tin plus a handful of tiny bits of cauliflower. Might also add some cooked chicken or cooked bacon. If you want it to be a bit more carby, a handful of pasta cooked in it is good. I usually would finish it with a big lump of butter to make it even richer. This is a main meal soup.Morning all. @Annb, made your soup and it's delicious. Served it on mashed cauli and thoroughly enjoyed it. Never made it before. I'm going to make some lc read today, beginning to enjoy cooking again. I have a pork steak with brussels and broccoli for lunch and hopefully a bacon and egg lc roll for tea. Not a very bright day today but at least it's mild.
I think I'm going to try that HiLo bread as I've seen it in Sainsburys. Would anyone know if it toasts ok from frozen as I doubt I could eat a loaf before it went mouldy.
