What have you eaten today? (Low carb forum)

A very Dutch dish: Zuurkoolstamppot with rookworst and zuurkoolspek.
I substituted the mashed potatoes in the stamppot for caulifloer puree, tasted pefect!

Also, looks like my keyboard is dying, letters in the upper left corner don't work, leaving m to manually copy and past th missing ltts in.
Many months ago, that was the corner where a drink was spilled but it started working again after drying.
I suppose the corrosion from that drink has finally caught up with the keyboard.

So I'll likely won't bore you with long texts fo th next couple of days, and you'll hav to look up the tanslations fo what I ate youslf.
Still, can recommnd trying to mak zuurkoolstamppot, it's easy, cheap and tasty!

I skipped breakfast and lunch and had a small bite to eat for a late dinner: 6 little pieces of pork and a salad of leaves, peppers, tomato and olive oil.
Glu 4.1MMOL before, 4.6.MMOL 2 hours after dinner.
 
Well , appetite is still not right after being ill. I tried but sort of grazed rather than dined.
couple of spoonsful of fage yogurt and coffee for breakfast.
A nibble of cheese at lunchtime, more coffee.
a small piece of salmon for dinner with mineral water
another nibble of cheese for supper, with a slice of fruit bread, (nicked from Mr Pipp’s carb cupboard ), buttered. Warm coconut milk with a generous slug of rum, because my throat is sore again, and I needed the medicine.
 
Two hard boiled eggs, two slices vegimite and toast for breakfast.
Grilled mangrove jack fillet, mixed salad, lemon / lime sorbet and blueberries for lunch.
Toasted cheese and onion sandwiches for supper at six.

Glass or two of single malt watching the noisy electrical storm last night.

Coffee.
Breakfast: Black beans, avocado & hardboiled eggs with a grainy mustard dressing. Home made, high fat yogurt.
Later: Handful of macadamias, green olives, some goatsmilk cheese. Instantpot flank steak cooked w ginger, chilli and coconut aminos - which says low carb on the bottle, but tastes quite sweet! Coleslaw. Matcha tea with mct.
 
Morning all. @Annb, made your soup and it's delicious. Served it on mashed cauli and thoroughly enjoyed it. Never made it before. I'm going to make some lc read today, beginning to enjoy cooking again. I have a pork steak with brussels and broccoli for lunch and hopefully a bacon and egg lc roll for tea. Not a very bright day today but at least it's mild.
 
Breakfast: bacon and eggs.

2nd meal will have to be something with the remaining chicken thighs - soup maybe. I still have some onions left and some cream. Lots of things running short now since Neil hasn't been able to do the shopping. It will probably be cream of chicken soup then.
 
I think I'm going to try that HiLo bread as I've seen it in Sainsburys. Would anyone know if it toasts ok from frozen as I doubt I could eat a loaf before it went mouldy.
 
Glad you enjoyed the soup. It's a good standby because it also freezes pretty well. I also sometimes use it as the base for a quick minestrone, leaving out the cream, adding garden peas and some beans from a tin plus a handful of tiny bits of cauliflower. Might also add some cooked chicken or cooked bacon. If you want it to be a bit more carby, a handful of pasta cooked in it is good. I usually would finish it with a big lump of butter to make it even richer. This is a main meal soup.
 
B- fried eggs on lc marmite toast.
Lots of black coffee throughout the morning.
L- tried a sort of lasagne I saw on a FB group - bizarrely the GBBO group. Layers of sliced courgette, ‘stringy cheese’ and ham. Topped with parmesan. It was ok but not as good as the Italian video showed. The best bit was the English subtitles, which made no sense whatsoever

Dinner- Barnsley chop! Thanks to this thread for reminding me about it. I had it with ‘roast’ veg. ( chop and veg all cooked in airfryer) couple of glasses of wine.
I have h/m yoghurt in the fridge with berries and seeds on top. That may be pud later.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a PE protein bar.
Dinner: LC pizza (base from LC Food Co) topped with 1/2 sm rin chopped tomatoes, mozarella, bacon and mushrooms with coleslaw and side salad, followed by DGF lemon drizzle cake with clotted cream.

 
B: camembert
90 minute Walk with a friend
L: camembert on seedy crackers. Ff greek yog with 1 alcohol soused damson from the jar of damson liqueur I'm brewing. Tasted it and it was far too strong and not sweet enough. Still has 2 months to brew , but realistically I think it will be next year. Trying it with minimal sugar and using sweeteners instead, but not convinced it's going to to get any good this year.
D: celeriac chips with a mush using up this week's paprika chicken and pork chops. Added cream cheese and cheese. Tastier than it sounds.
1 small scoop coffee ice cream

Breakfast: Three warm hardboiled eggs with butter and parsley, quickly, before we left to drop well fed and watered teens at various activities.
Handful macadamia nuts and hibiscus tea while sitting in traffic.
Later: Leftover ginger beef from yesterday. 1/2 cucumber with dressing and blue goats cheese + a few black beans and some green garlic, harvested from thinning out my upcoming garlic crop. Matcha tea.
