What have you eaten today? (Low carb forum)

The cafe I go to on a weds used to give me a reduction but not now. It is slightly annoying but glad they are still open.
Next time rather than removing items from the Big breakfast (2× everything) I'll ask for the Small (1x) and ask to replace the 3 carbs with an extra sausage, bacon and egg...
It's worth a try!
But we're away and I doubt we'll ever be near this one again
 
Monday 10 April - bed 7 7 FBG 7.9 Still strapping the ankle during the day, but it is improved. Not going to venture out just yet.

B. TAG and a bit crustless quiche.

L. 6 almonds.

D. Cold cuts. Ox tongue, chicken breast, roast pork, pork and egg, and some bits of what remains of yesterday's lamb. Coleslaw. CC little chocolate pot.

Tuesday 11 April bed 7.7 FBG 7.6. Another home day and still strapped during the day. I was getting about without my crutch indoors, though.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw.

L. 2 slices of SRSLY fruit loaf with butter.

D. A SRSLY day! I took 2 SRSLY Mediterranean tortillas and made them into a quesadilla. Popped the bottom in a heavy pan with oil, topped with grated cheese, then a mix of tuna, peppers, tomatoes, corn, and mayo. A touch of chilli, more grated cheese, then topped with the next tortilla. I have a cake lifter, which is big enough to let me flip it to do the other side. Worked well.
 
I've got a kind of McMuffin on my CMT , which is very Macci D.
 
I had one of my favourite go to meals: Mixed spicy veggies with peanut sauce and pork belly pieces coated in black bean/garlic sauce. No picture because I was in a hurry.

I just saw this short video on Facebook and I want to try!

He topped those sausage boats with cream cheese, some seasonings, jalapeno and grated cheese but I'm sure you can use any filling you like, looks quick and easy.
He also threw some mixed veggies (guessing mainly onions and bell pepper) on the tray next to the sausage boats to bake together and make a full meal.

 
Sounds like a really good idea. Just have to manage to make sausages in the absence of a really low carb version here.
 
Just had to cut the following out of a reply to Antje because, once again to upload was refused. It works this way though. Obviously doesn't like long replies but is OK with the same length posts.

Had breakfast of a whole pile of mushrooms and some scrambled egg. BG was 11.1 this early morning and 10.9 before breakfast. I hour after breakfast (and insulin, of course) it was 9.4. Keeping the insullin as low as possible has stopped working and I'm having to increase it again. Searching for where I am still letting carbs slip in. I did have a few berries this week - 3 for a breakfast and then in the fruit salad yesterday (or was it the day before? Whenever, it was about 3 strawberries and 4 blackberries plus some grapefruit bits and a few tiny bits of melon with lots of cream). I also had one RyVita on 2 days - each 7.9 g carb. I suppose I should cut back on those as well. Maybe being over-confident. I think I've put weight back on too, but am unwilling to confirm it by stepping onto the scales.

There will need to be a second meal today. I am due to make a veg curry but am reconsidering that because even the veg I can use are not zero carb. I'll have to think about that.
 

That looks really tasty, such a good idea. I wonder if it’d work with the DGF wraps? I have a few of those in the freezer
 

Another great idea! Another one I must try. I should keep a list of ‘recipes I must try’ for the days I’m lacking in inspiration.
 
Yesterday had my usual brekkie of slice LC toast, copious tea.
Lunch was last bit of farmhouse cheese and chopped salad.
Supper was 3 egg tomato & chorizo omelette.
Since Easter Sunday when I had a lot of lamb have had bad acid tummy (lots of trips to the smallest room) and since last night continuous gallbladder discomfort. The cheese yesterday and chorizo omelette were probs too fatty and I had a very bad night. I have this condition called Bile Acid Malabsorption and I likely shouldn’t be eating high fat. We are going to Spain in a week’s time so hoping if I dial down the fats and eat more veggie I might get over this as a blip. Fingers crossed. Ow trip to the GP on the cards, easier said than done.
today brekkie was the same.
then lots of tea and a cup of soup for lunch. Wanted to eat toast but didn’t.
Supper will be chunky cod fingers and broccoli.

I have to say the SRSLY tortillas do actually have the texture of tortillas. I've never managed to get the DGF wraps yet. For quesadilla, I have no doubt either would work. Tuna is certainly not a usual quesadilla filling, but I didn't see any reason why it wouldn't work. It was very, very filling. I've always liked a quesadilla, so it's great to have a LC version.
 
Wednesday 12 April - bed & FBG both 7.8. I ventured out today. I still kept my ankle strapped, but I managed to get some necessary shopping with no mishaps.

B. TAG and a bit crustless quiche.

D. DD cauliflower chicken alfredo with the addition of mushrooms and tomatoes. I altered the way it was cooked from the diet doctor recipe. I fried the bacon bits in a little oil and then added the butter and the small cauliflower florets. Lid on and softened the cauli down a bit. I didn't blanche it as I find it makes it too wet. Chicken went in next, followed by mushrooms, spinach, garlic, tomatoes, parmesan, black pepper, and lastly, cream. In true DD fashion, sufficient was cooked to do tomorrow as well. Peroni 00.

Toast and peanut butter for breakfast, 'lean mean turkey chilli' with lots of petit pois and broccoli; tea and gingernuts .. delighted to say that my blood spike was related to the butter beans in my chilli and not the gingernuts! Just starting to test before and after foods to identify what's going on.

Lunchtime a tuna salad with kimchi and olives I also baked a LC wrap cut into triangles to make some nibbles to go with my salad

Mid pm slice of low carb fruit loaf
Dinner hunters chicken served on cabbage and glass of red wine pudding LC Blondie with yoghurt

Thursday 13 April - bed 7.9 FBG 7.2. Post-operative check today, and everything is fine. 20/20 vision in both eyes for distance, lenses bedded in, and pressure is down to 17! I was delighted with that. The left eye is still bloodshot where they injected the eye, but he had a good close look, there's no problems, and it is clearing. 2 weeks, and I'll get specs back even if the varifocal is plain on top. At least it will give me reading, reactive (for sun), and anti-glare for headlights all in one.

D. Remaining portion of the cauliflower, chicken alfredo. I added more cauliflower and spinach. It's even better 2nd day. Peroni 00.

Really happy with the eye results.
 
B: ff greek with seeds
L: 2 slices HiLo bread with half an avocado and some Lancashire cheese.
I find the HiLo bread really filling so didn't really need dinner, but family back together for 1st time in a week so felt wrong not to eat with them.
D: egg hash/scramble with sausage, ham, courgette, peppers and a side salad. Glass rose wine
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: Spanish chicken with roasted Mediterranean veggies.

 
Breakfast will be ham and cheese in a lettuce wrap.

2nd meal will be the veg curry I didn't make yesterday.

BG has been sticking at 11.2 all morning so far. Diabetes is trying to take control of me and I'm trying to fight back. It was a mistake to reduce my basal dose as demanded by the diabetes nurse. That's when BG went up and stayed up, despite going back to the previous dose over a week ago. Sometimes I think this condition is a nasty, sentient entity which swipes back every time I try to reduce its impact. Other times, I think I can do this. Right now, I'm not sure but I will keep going. Wish it didn't make me so hungry though.
