I would eat. I made something similar the other night but not tomatoey. I’ve done meals like this with cauliflower like you, but also with textured soy protein (which I find a bit bitter, cauli is better but the textured soy protein is tolerable… probably good to take camping)

Elsewhere on the threads newbies are often advised to "eat to your meter. It's your body no one elses" If your body is happier on fewer carbs, I'd listen to it rater than a nurse who doesn't have your body.It strikes me that even the 15g carbs is too much. Whatever the Diabetes nurse says.
I think you'll find the answer varies depending on what your body tells you. Initially, I was told by the diabetic nurse that 120g of carbs daily was good. If I'd gone with that, I reckon I'd be on insulin as that was way too high for me. I try to aim for 20 to 30g of carbs daily now. Some days, for example, if I was ill and struggling to keep BGs in range, I'll drop to 20g or less. Experiment and find what works for you.How many grams of carbs a day is considered low carb. I certainly couldn't last week after my tumble! Back to normal today, though. BG is very high this morning and have taken a correction dose to get it down to something reasonable before I actually eat the muffins.

Several things in the fridge on their use-by date so I'll have to do some cooking today, if I can get time - I have an exercise class on Zoom at 10.30 and getting my hair cut this afternoon. Then Em will come in from school at 3.00. I know that the brilliant Maglil can handle more than this in a day, but I'm not sure that I will be in much of a state for cooking.
Oops - just knocked a key off of this laptop. Some things slipped and flicked the 6 off the number pad. Shpuld be able to get it back on, I suppose.
