What have you eaten today? (Low carb forum)

I would eat. I made something similar the other night but not tomatoey. I’ve done meals like this with cauliflower like you, but also with textured soy protein (which I find a bit bitter, cauli is better but the textured soy protein is tolerable… probably good to take camping)

Ah yeah, I know the one, I was a vegetarian for almost half of my life so familiar, haven't had tvp for a long time though, might try again if low carb.
 
@Antje77 hope your first gym experience went well today.
First thing kefir with sprinkle of pomegranate powder
Lunchtime in small bowl some beetroot kimchi, a few chopped olives and baby tomatoes with some small bits of blue cheese - Shropshire blue and montagnolo affine(bavarian) and one slice of LC buttered toast followed by a few squares of 100% chocolate

Mid pm one slice of LC fruit loaf
Dinner slow cooked beef, cauliflower cheese and local asparagus with glass of red wine pudding LC berry crumble with yoghurt.
 
Sunday 16 April - bed 7.2 FBG 6.6. I must admit, I am looking forward to getting back to the gym and my swimming/aqua classes. Not long now.

B. TAG and 2 slices of SRSLY toast, 2 slices of back bacon, and another double yolk egg.

L. Benecol drink.

D. Usual campari and soda. Mussels in a white wine and garlic sauce. CC Little chocolate pot.

Holidays are over, back on the school run tomorrow.

Woke at silly o'clock so got up to do some admin jobs on the pc, but they then led to more jobs, then the Internet went down, then I got told of a meeting TOMORROW that I didn't know of, so had to do a report for that and next thing I knew it was 3 pm.
At some point i had yoghurt and seeds and frozen raspberries
Then son reheated some of last nights curry for lunch, just the chicken and sauce.

A couple of hours potting and weeding in the garden restored my stress levels to near normal

D: Cheesy fish bake with 1 sliver of roast parsnip, carrots, cabbage and broccoli. 2 yoghurt jellies and 1 glass wine.
2 hours later still hungry so 4 naughty sqs of 70% chocolate (forgot to buy any 85%)

And today was a rare day that had nothing in the calendar!!!
 
Brunch - 2 boiled eggs mashed up in a cup with butter. Mug of earl grey tea

Dinner - steak topped with peppercorn sauce and a large side salad which included cheese and coleslaw. Large glass of pepsi max. Once home 2 squares 90% lindtt and a mug of earl grey
 
Breakfast: Mushroom kind of frittatas - slices of mushroom mixed with some cottage cheese, cream and eggs and baked in muffin tins.

BG is very high this morning and have taken a correction dose to get it down to something reasonable before I actually eat the muffins.

2nd meal will be cabbage and onion with chopped up roast pork through it.

Several things in the fridge on their use-by date so I'll have to do some cooking today, if I can get time - I have an exercise class on Zoom at 10.30 and getting my hair cut this afternoon. Then Em will come in from school at 3.00. I know that the brilliant Maglil can handle more than this in a day, but I'm not sure that I will be in much of a state for cooking.

Oops - just knocked a key off of this laptop. Some things slipped and flicked the 6 off the number pad. Shpuld be able to get it back on, I suppose.
 
I've just added a "Store Cupboard Soup" to my CMT. Recipe below. This is one that is definitely open to additions/change. It's a Nigella recipe, and it just so happens I love spinach and coconut milk. I reckon a number of greens would work in this, and I noticed the suggestion of adding cooked prawns to it. Personally, I think a number of different fish would work in this to make it a main meal, mainly "meaty fish".

 
How many grams of carbs a day is considered low carb. I am trying to figure out what I am aiming for. I do want some carbs.
I think you'll find the answer varies depending on what your body tells you. Initially, I was told by the diabetic nurse that 120g of carbs daily was good. If I'd gone with that, I reckon I'd be on insulin as that was way too high for me. I try to aim for 20 to 30g of carbs daily now. Some days, for example, if I was ill and struggling to keep BGs in range, I'll drop to 20g or less. Experiment and find what works for you.

I certainly couldn't last week after my tumble! Back to normal today, though. Up at 7am, shower, wash hair, got No 1 to school for 8 30am, then collect No 2, get him to school, straight to physio for a torture session (it was fine really), back home, took delivery of shopping, just sorted grandson's lunch, and I'm off out in 30 mins to collect him as lunch is a tight turnaround.

Everyone is different - you can only check your blood glucose level to find out what is right for you.

Some people stick to 100grams a day, others to 20. I was trying to stick to 20, but right now, it isn't working for me and I have to cut down to only the carbs that are in vegetables. If that doesn't work then, the next step is a carnivore diet, ie just meat, fish, eggs and dairy - no veg, no fruit, no starch, as close to zero carbs as possible. I'm not going for that option yet - waiting to see if just proteins and vegetables will do the job, at least for a while.

Breakfast 2 egg 2 cheese omlette followed by strawberries and greek yog

Dinner will be steamed fish salad and lo carb noodles with more fruit pribably pear a bluwberriws and yoghurt

Snack so far a low carb peanut bar half and other half tonight if get munchies

Yesterdsy was 2 egg n cheese omelette wirh mushroons and bacon and tomato

Snack was peanut bar and 2 squares of 80 per cent choc and strawberries

Dinner was 2 half chicken thighs with steamed veg carrots cabbage cauli and brocoli with a filo pastry apple and pecan desert i made up with creme fresh

1 apple

Just loving this way eating best ever after years of ww low fat diets thst i feel xontrubuted to my sweet tooth and consuming those e hidden sugars

Back to yesterday
Usual brekkie slice LC toast and copious tea.
Lunch was two fried eggs on slice of LC toast.
Supper vege stirfry with spoon of noodles.
Today same brekkie.
Lunch was finger of Emmenthal and sliver of Shropshire Blue with chopped salad.
Supper will be lightly spiced chicken breast with green veg.
when I get back from hols in two weeks time hoping to start growing cherry tomatoes in hanging baskets. Was successful last year and they have gone up in price so much.
@Antje77 how was the gym session?
 
Coffee and cream
Coffee and unsweetened almond milk
Cottage cheese and tomato
Clotted cream
Mackerel tomato and cucumber
 
Monday 17 April bed 7.7 FBG 7. Busy day - ironing can wait until tomorrow.

L. 1 inch (yes, I do mean that) of a fulfil bar. I find them far too sweet. Tried a Benecol Dairy free that arrived with my shopping. Really nice and much lower in carbs.

D. What is rapidly becoming a favourite, sea bass with a mix of spinach, mushrooms, tomatoes. CC little chocolate pot with 3 blackberries. 20230417_182906.jpg

@LINMARIE welcome to this low carb eating thread. Are you testing your blood glucose 2 hours after eating to test how you react to the few carbs you are including it can help as we find that helps us to include the carbs that produce the lowest peaks. For example I can eat the peel from a small green Apple but not the fruit same with pears. I can only cope with a few berries but we are all unique enjoy finding out how you can best way to improve your health.
@madistheword 're no of carbs when I started my journey 6 years ago I was very insulin resistant and with a hba1c of 97 so I had to both reduce my carbs below 20g in total daily and fast I did both by doing one meal a day for a month.six years later I can be more flexible and have a few more carbs, as my body is more flexible, but I try to stay between 20 to 50g at the most. I do have treats but the low carb versions.
Today was a busy one rushing around but before going out had small amount of kefir and ate two cold boiled eggs taken out with me.
Dinner two lamb chops with lots of salad including beetroot kimchi, coleslaw and olives pudding LC warmed crumble and yoghurt

B- feta and spinach omelette
L- SLC roll filled with Brie, Turkey and h/m red cabbage& ginger sauerkraut. Few squares Montezuma’s 100% with orange.
D- cold poached salmon fillet, h/b egg. Raw spinach and some leftover veg from yesterday, cold ( roast cauli and green beans) DGF cake.
@maglil55 the sea bass looks fab again. I’ve added that store cupboard soup to my CMT ( autocorrect changed that to cat!) too. Thanks for the link.
