What have you eaten today? (Low carb forum)

Rice is another thing that affects a lot of us. Cauliflower rice (just grated Cauliflower) is a great substitute for all things "rice" - although I doubt I'd make rice pudding out of it!
Oh my.
I couldn't resist doing the google thing on that ridiculous suggestion and apparently it is actually a thing.
So now I dare you to give it a try!

 
I wish I could use sweeteners so that I could try that recipe - it sounds so unlikely. No point making it with sugar - a few too many carbs.
 
Before rushing out put dinner to marinate in fridge before cooking later. Marinated chicken breasts with lemon juice and lemon with olive oil, garlic, plus rosemary chives and thyme from garden see photo just before popping into oven

Before going out kefir
While out two cold boiled eggs and LC cake

Dinner my marinated Mediterranean chicken oven cooked served with salads and glass of red followed by yoghurt.

Tuesday 25 April - bed 7.1 FBG 7.3. I have most of this week planned out (although I may swap some meals around).

B. TAG and 2 slices of SRSLY toast with benecol spread and, thanks Mrs T123, nursery food! 2 mashed up boiled eggs with a little butter and salt. Benecol dairy free.

L. 6 almonds

D. Tuna melts on 2 slices of SRSLY toast. Tuna in spring water mixed with small spoonful of corn, spring onion, red pepper, 50/50 mayo & sour cream, mustard, lemon juice, grated Emmental, paprika. I think that's it.
CC little chocolate pot later. Currently, sipping a Peroni 00.
 
Not this exact recipe, but I did try making rice pudding with cauliflower a while ago, I don’t recommend it!
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a H&B protein bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: Keralan chicken curry with cauliflower rice.

 

Oh my goodness. I think I might have to try that! I wonder if it’ll have that brassica smell though
might be a bit offputting.
 
Todays breakfast was 2 rashers bacon, 2 eggs and mushrooms
L- tried @Antje77 ‘s sausage boats and declare them delicious. One with mozzarella and jalapeños , the other with cream cheese and jalapeños ( meant to save this to see if it was nice cold, but it was too nice hot to think about saving)
Goonergal’s lazy mousse to follow ( melted 100% choc mixed with cream until it goes thick)
D- hake and stir fried veg. @maglil55 still haven’t quite managed the crispy skin in spite of using my cast iron pan this time ( last time used a pan with a wobbly bottom!)
 
B: ff greekand seeds

Chocolate binge while out. Hadn't done that in months and no idea why i did today. Having a busy time and that part of my brain which says No just didn't click in
D:2 bratwurst sausages with cauliflower and broccoli cheesy bake and roasted peppers (just a few)
Headache which is my punishment for the milk chocolate

No worries, I made two today, both with cream cheese (the cheap fluffy airy one with herbs) and one is waiting to be eaten cold tomorrow!
Very funny, this is the third day of having a sausage boat, and the first time I followed the original recipe which used cream cheese but I liked this version the best.
So in the future I'll use cream cheese, which is the cheapest option of the cheeses I tried, such a nice surprise!

I'll let you know about cold sausage boats tomorrow.

I think the cauliflower rice pudding challenge is hilarious (and so do various friends I told about this), please don't let @Rachox bad experience put you off from trying, @maglil55 and @DJC3 , she must have used the wrong recipe I'm sure!
And we do need to know if it's edible now...

@Rachox , your Keralan chicken curry looks amazing, I have no idea what it is but I want it!

Sorry @Antje77 , but Mr Waitrose cooked it for me, I was having a lazy cooking night!
Dang, Mr. Waitrose lives too far away from me.
And because of our respective countries different but similar histories, you have India based food in your supermarkets and we have Indonesian.

I've looked for recipes for Kerelan chicken curry before and they are always so very complicated but this one from the Co-op is the simplest I have found. Works fairly well, although I use chicken thighs rather than breast (and cook a little longer).


Ignore the bit about the rice, of course. Or substitute with cauliflower rice.

Might have a go at that tomorrow - fish today.

Thanks, that looks easy, and it only uses ingredients I can get here so I added it to my CMT.
