What have you eaten today? (Low carb forum)

Small amount of kefir before rushing out.
While out 2 cold boiled eggs and later a low carb cake with some coffee
Dinner pulled pork with a low carb wrap and range of salads having some 100% chocolate with my decaffeinated coffee just now.
@shelley262 when you boil a few eggs at a time and put them in the fridge - do you leave the shell on or take it off and roughly how long do they last in the fridge?

Hiya I plunge in cold water when cooked and then store in fridge in their shells I prefer them like this but sure ok shelled too just easier for me to store. I've only done for a few days because I fancy a change after a few days! but provided eggs in date, cooked, cooled rapidly and stored in fridge I am sure they'd be fine for a week. Notice that the egg protein pots from m and a and Sainsbury's which are just cold boiled eggs usually have a reasonable date so sure fine.
 
7am brekkie - 2 boiled eggs mashed up in a cup with butter. Mug of earl grey tea

elevensies - 1 white chocolate phd bar and another mug of earl grey

4pm dinner - chilli salmon cooked in air frier with large side salad

Went out for a long walk as it is a nice dry night here and once back in I have just demolished a packet of curators cheese flavour pork puffs which I got when we were away last weekend to try as there is not a Sainsburys near me and I now like but I guess I will get them on Amazon so I will order more as I much prefer them to pork scratchings
 
I had a go at this today with a beef sausage.
I used mozzarella, a little of sundried tomato, some jalapeno, onion and grated cheese to stuff it. I baked the rest of the onion next to it.

This may well become a new favourite to liven up an otherwise slightly boring meal of veggies and protein.
Or I might even use it on its own on days I don't want to cook, I can simply have two of them and call it a meal.
I guess a pack of sausages will have to be added to my freezer for emergency meals! :joyful:

There were 4 sausages in a pack so I'll do some more experiments with different toppings in the next few days. :hungry:

Springtime treat for breakfast: scrambled eggs with wild garlic on lc ( schneiderbrot) toast.
Lunch- made from a ham hock I bought at the weekend www.feistytapas.com/2017/01/instant-pot-ham-and-cabbage-soup/ then a DGF brownie and cream.
Post dog walk snack - handful of almonds.
D- DD chicken Caprese casserole made with yesterdays leftover chicken. Glass of white wine. Probably some Montezuma’s 100% choc later IMG_2337.jpg
 
I think there are two branches, one in Fulham and another in Vauxhall. Not sure where ours came from as my daughter ordered it through Deliveroo or Ubereats:
They are on Facebook as well. Their pasta dishes look amazing! Wonder if they will franchise elsewhere in the country.
 
Uncomfortable night of bloating and wind after yesterday's curry, just added to the discomfort still from the wedding on Friday

D: cauliflower cheese with bacon (sauce cream cheese with cheddar thinned with a little milk). 1 sq hm lc coffee cake. 1 sq 85% chocolate
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and another carb killa bar.
Dinner: gammon steak with a fried egg, cauliflower, brocolli and a few slices of carrot.

Sunday 23 April - bed 7.8 FBG 8?? Must have been the mini ribs I took from Hubby's Chinese. Back to swimming lessons with the youngest today.

B. TAG and 2 slices of back bacon, 1 fried egg, santini tomatoes, and 2 slices of SRSLY toast with butter.

L. Nothing

D. Another from the M&S incoming summer range. Asian style chicken wings, done kebab style, with a spicy crumb. Veggie kebab, asparagus, and mushrooms. Sour cream dip. Usual campari and soda.

I had to swap the glaze for one I mixed up myself. Their's was a bit sweet.

Thank you. I hope like @maglil55 says, they open a few more branches. I don’t stay near either of those locations. I do think low carb is starting to take off a bit though, certainly in cities. (Ps hope your daughter’s move went well. )

No. It was in a freezer cabinet, behind a very enthusiastic chap promoting blueberry Greek yoghurt. I'd have cramped his style. :cool: I wasn't going directly home, so wouldn't be considering buying it today.

Actually, just googled it. This os from the Tattoed Chef's website. The Costco package was much bigger than 340gr:

Didn't have any thoughts about having them cold as a packed lunch so far because I didn't think of it.
But now you gave me the thought...

I still have 2 sausages and some runner beans left, so now I'll make two stuffed sausages tomorrow, one to be eaten cold later so I can answer your question. :happy:
Three days of almost the same food is quite enough anyway, so you just saved me from that fourth and boring day.

Today was almost the same as yesterday (but on a smaller plate).
This time I used a thick slice of mature Gouda instead of mozzarella as the first layer of the filling with a very cheesy result. :hungry:
The grated cheese on top is mainly to keep the sundried tomatoes from burning.

For the sausage to be saved to be eaten cold I'll need to use something different, I don't like melted and cooled Gouda or mozzarella, so I might try the cream cheese as suggested in the original recipe.

Made some boiled brisket and carrots yesterday - long, slow cook. Smells good and should be fine for today's 2nd meal.

Breakfast has to be thought about first though. Maybe just some berries and cream - it's the day for my cleaner to come and I don't have time to hang around. Most of what has to be done first, is done - just a bit more in the kitchen. Legs really bad today and I'm still feeling kind-of hung over after taking the Laxido. Not that I have ever had a hangover, so how would I know? This is what I imagine it would feel like though.
 
I had edamame & mung bean fettuccine, with a chopped frankfurter, cream cheese, gruyere and cheddar cheese. I haven't had it before: the texture was good, I guess I'll get used to the taste.

Does anyone have any good alternatives? I've got wholewheat pasta, which is better than white, but still not low carb. Although it should have a low GI.
I use spirallised courgette. Shredded cabbage also works. Courgette has a habit of being very "wet" despite trying to get liquid out of it. I loved Oomi noodles (and the Lidl equivalent), but both vanished of the face of the earth during lockdown, never to return. I've tried other subs, but I'm not keen on them.

Rice is another thing that affects a lot of us. Cauliflower rice (just grated Cauliflower) is a great substitute for all things "rice" - although I doubt I'd make rice pudding out of it!
 
Monday 24 April - bed 7.9 FBG 7.4. So starts another week.

L. 6 almonds

D. Six seared scallops on a bed of cauliflower risotto. It's another on my CMT, but the link is below. The only change I made was to substitute spinach for the broccoli (as I have a load of spinach currently). Later, CC little chocolate pot.
