Well, you can get coconut cream, so why not?Sorry half asleep! Almond milk/double cream. I wonder if its possible to get almond cream, now there's a thought......
Thanks so much Grace I have yet to buy it and try it.Re ACV this is copied from the BBC Good Food website.
“To date, the evidence of ACV’s use as a means of aiding blood sugar management is the most impressive of all its claims. A number of studies have suggested that as part of a meal containing carbohydrate, cider vinegar may improve glucose and insulin levels after you’ve finished eating. Its method of action is thought to be similar to that of the blood-sugar-lowering drug metformin.
Another study examining the consumption of 2 tbsp of ACV at bedtime found improved glucose levels on waking. It’s worth noting, however, that the success of ACV in this area appears to be most relevant for healthy individuals or diabetics with well-controlled blood sugar levels.
Moreover, if you take prescription medication to help manage your blood sugar, you should check with your GP before you increase the intake of any form of vinegar.”
The waffles sound lovely I’m going to have to give them a try!All these soups sound delicious! My favourite low-carb soup is cream of mushroom. I have a massive bowl of it in the fridge at the moment. I stole my friend's 'tweak' and put a bit of tarragon in it, but I'm going back to my recipe next time. It's nice, but mine is nicer in my opinion. I add a bit of Old Bay seasoning and it just gives it that something extra.

B: Waffles made with 1 egg, 3 tbsp ground almonds, 1 tbsp yogurt (or mayo for savoury) 1/4 tsp baking powder, 1/2 tsp water. That makes 2 in a mini waffle iron.
I made sweet ones so added some erythritol and cinnamon to the basic recipe. Served with frozen blueberries blasted to death in the microwave, strawberries, and salted caramel Skinny Syrup.
L: Mushroom soup and a low-carb sausage roll from Greenhalghs (ordered online). This will be on the go as I'm taking our youngest out for the day while my husband takes our eldest and friends out for birthday bowling. He's 13 and quite rightly didn't want his 7 year old brother tagging along today.
D: Something simple when I get home, probably some roasted med. veg with halloumi. View attachment 60885

They were really nice but definitely needed the skinny syrup with them. A dollop of yogurt or some cream would do the same thing. The waffles sound lovely I’m going to have to give them a try!
