What have you eaten today? (Low carb forum)

Morning all. @PenguinMum, all the this talk .... full stop!! I love coming on here and reading all the posts, it makes my day and I love all the hints and recipes. Am going to try Antje's peppers with tuna melt batter in soon. Sounds scrumptious. Back to the thread... am airfrying sausages and bacon today and serving them with bacon, mushrooms, eggs and tomatoes. Slice cheese for tea so that I don't eat late again. Have a great weekend everyone. ;)
 
All these soups sound delicious! My favourite low-carb soup is cream of mushroom. I have a massive bowl of it in the fridge at the moment. I stole my friend's 'tweak' and put a bit of tarragon in it, but I'm going back to my recipe next time. It's nice, but mine is nicer in my opinion. I add a bit of Old Bay seasoning and it just gives it that something extra.

FB: 6.1

B: Waffles made with 1 egg, 3 tbsp ground almonds, 1 tbsp yogurt (or mayo for savoury) 1/4 tsp baking powder, 1/2 tsp water. That makes 2 in a mini waffle iron.

I made sweet ones so added some erythritol and cinnamon to the basic recipe. Served with frozen blueberries blasted to death in the microwave, strawberries, and salted caramel Skinny Syrup.

L: Mushroom soup and a low-carb sausage roll from Greenhalghs (ordered online). This will be on the go as I'm taking our youngest out for the day while my husband takes our eldest and friends out for birthday bowling. He's 13 and quite rightly didn't want his 7 year old brother tagging along today.

D: Something simple when I get home, probably some roasted med. veg with halloumi. IMG_20230513_110334.jpg
 
Breakfast: the last of the sausage meatballs in tomato/onion sauce with a couple of eggs baked on top.
2nd meal will be: chicken curry with cauliflower rice. I've just blitzed about 2/3 of a cauliflower with stalks and the thick part of the leaves. I've cut the green part off the leaves to use as cabbage although I might shred the leafy bits and add them to the curry.

The cauliflower cheese I made yesterday was OK but I made a mistake with the sauce. I had less cream than I thought so added some butter and some milk - too much milk so the sauce was far too thin. Edible, but could do better.

I’ve only been taking it for about a week so I’m still building up to the full dose. It was on offer In sainsburys I’m not sure if it still is. I’m currently boarder line pre diabetic and thought it can’t hurt to give it a try.

I agree with you, cream of mushroom soup is delicious and I much prefer it without tarragon.
Your waffles look fantastic by the way.
 
@PenguinMum 're the vinegar I was listening to a podcast a few weeks ago as I do every evening I walk and listen with ear buds this one was about the Glucose Goddess method of lowering your blood sugar overall she's appeared on several including

I got intrigued and bought her book the Glucose Goddess Method. She recommends Having a tablespoon of vinegar daily - I am using local fermented Apple Cider vinegar but you can use wine vinegar s too. You also follow some other guidelines including eating a savoury breakfast which can be unsweetened yoghurt etc not just eggs but seems to be protein and fibre content plus eating at least one vegetable or salad starter before your main meal. You can combine the salad of course with your vinegar as a dressing if it's easier. Lastly she suggests you move especially after your meals...... I'm enjoying the method and yes eating more fibre with a few extra carbs - but still low and have noticed a whole point lowering in my fbg it could just be one of those things for example I've slept better this week but will carry on for now as it makes sense to me.

Breakfast today a mix of my rhubarb with some hulled hemp seeds and yoghurt - tasted lovely like a cold rhubarb crumble the hulled hemp tasted nutty.
Lunch had salmon left over from yesterday so had with some sauerkraut, olives and beetroot followed by more rhubarb with yoghurt
Dinner starter of my ACV mixed in water and flavoured with my ginger and lemon water and a few veg crudities and hummus then main a hm chicken curry, chopped coriander and mint raita and LC roti with small glass of red. About to have decaffeinated coffee and LC cake and then go for a walk out in the lovely evening sunshine to listen to another podcast.

B: out very early so just grabbed a nut bar.
10:00 coffee with cream - in a Costa! Very unusual for me, glad they did "cream on the side"
Pub lunch of beefburgers with chilli sauce, salad and a few chips. 2 glasses white wine with soda.
6pm 2 hard boiled eggs with mayo, olives, a gherkin and a little dried tomato from the olive jar.

They were really nice but definitely needed the skinny syrup with them. A dollop of yogurt or some cream would do the same thing.

I prefer them savoury and do those ones with the tbsp mayo instead of yogurt, and add a bit of onion powder and garlic pepper. I keep meaning to do a batch for the freezer but they're so quick to make that I've not bothered, and I like varying the spices too.

My experiments with mushroom soup will have to wait a bit, I'll be working on a ship next week (monday evening through saturday afternoon) so food will be interesting.
Food is supposed to be included but I have no idea what to expect, and neither does my skipper who I called today to ask if she knows anything about it.
It's a sailing ship, we'll have 14 paying guests, but it's not the kind of trip I'm used to. This time we're mainly the hotel for people doing a 5 day walk, so they'll walk, we'll move the ship (under motor, not sailing) to the next place to provide a place to sleep for the walkers.

It'll be 6 ships and the food is the responsibility of the overall organisation, not of the individual ships, and we haven't been told if it will be catering brought to the ship, or eating out, or something else. The walkers (and supposedly the crew) will be provided with breakfast and lunch packets, but again no idea if they'll make their own breakfast and lunch on board or if they (and we) will be provided with ready made packets.

I hope the breakfast/lunch stuff will be a do it yourself thing, which means I can simply put whatever they have in the fridge on my own low carb bread. If nothing's stored in the ship's fridge I'll need to find a different plan.
As for the evening meals, no idea if I'm expecting simple fare like lots of pasta or rice with a little sauce, or something more sophisticated where I can pick and choose.

So I'll bring quite a lot of basic snacks and emergency rations, but not much which will go off if not used, in case the food is better than I fear.
I'm happy with whatever food I can eat with them, and I'm happy to provide my own, but life would definitely be easier if I knew a little more about what to expect!

Tonight was the same as yesterday, except I did hear the kitchen timer so it wasn't burnt this time. :joyful:
There's still some tuna melt batter left so I'll have that as a muffin tomorrow with a substantial salad or such.

And from monday on it will be a surprise, wish me luck with that!
