What have you eaten today? (Low carb forum)

Things to use up today - egg mayo, wholemeal bread, sausage casserole, cooked chicken, bits and pieces of salad, cabbage, cauli and broccoli, peppers and tomatoes, ham and cold beef, cheese. Not about to put the whole lot into a pot - don't think that would be very appetising.

So, I suppose it'll be egg mayo and a slice of the bread for breakfast and some kind of a mixture for the 2nd meal.

Em is here again, still not fit to go to school, so amongst all that I'll need to find something she will eat. Possibly a salad with ham and some Babybel cheese. She's had her breakfast of buttered crumpets and tea.

I adore scallops. Fortunately, we have a friendly fishmonger nearby.

My husband (not diabetic) likes to kick off his breakfast with a bowl of muesli, which he puts together himself and eats somewhere out of sight, so as not to torment me. He also likes a slice of toast with his breakfast eggs. Otherwise, he's happy to eat LCHF all day with me.

I'm always on the lookout for new, mouthwatering recipes and this thread provides lots of inspiration. It's important to enjoy our low-carb lifestyle, otherwise we'd never stick to it, would we?
 
B- Scrambled eggs and turmeric&ginger sauerkraut.
L- open sandwiches using the microwaved Edam crisp bread, topped with roast beef, mustard, mayo and lettuce. 1 DGF cake.
D- DD Swedish meatballs with cauli mash. They are apparently as good as the ones in IKEA which my dil loves. I thought if you @MrsA2 as the sauce took a full 300ml pot of cream!
 

You’re absolutely right, and I’d rather have scallops than muesli any day. My husband mostly eats the same as me but with added potatoes/rice or pasta ( he can’t stand cauliflower)
 
Today:

B: Two poached eggs, tiger prawns and slices of avocado topped with a knob of butter and seasoned with black pepper.
Water to swallow tablets, followed by espresso.

L: Sweet peppers stuffed with feta cheese, eggs, black olives, chopped mint and baked until golden on top. Salad using chicory, Romano peppers, radishes, salad onions and cress, dressed with an olive oil, oregano and balsamic vinaigrette and topped with macadamia nuts roasted in butter.
Low carb pudding made with milled flax seeds, homemade granola, unsweetened almond milk and cream.

D: Seafood salad made with crab, king prawns, lettuce, fennel, cherry tomatoes, celery and salad onions dressed with olive oil, a squeeze of lemon juice, parsley and garlic, scattered with toasted sunflower and pumpkin seeds.
 
The nearly on last date cream has been made into 2 x coffee and walnut whips with added yoghurt and a splash of Baileys, and 4 x choclate lollies frozen ready for the summer. (Cocoa, a little coffe a splash of Baileys and an very ripe avocado all blitzed together with the cream). Will have to wait to see if its worked.
I ate about another portion in licks to taste if I'd got flavours right.

Has been a dairy heavy day and tummy is rebelling. Think I should really restrict it, especially as weight is creeping up.
 
If you whip the cream first it will freeze
 
Morning all. Haven't posted for a couple of days. Tuesday night had a night of severe leg cramps and had a fall too. Relied on my friend for meals as I hurt my back rather badly. My walking stick and I are best friends and going everywhere together so I can airfry my chicken drumsticks and microwave my steamed cauli! I have some smoked trout that I can have with the cheesy crackers from Lidl for later. Have a good day folks.
 
Breakfast: 2 fried eggs with a slice of toast and a cup of tea. Followed by a hypo, 2 digestive biscuits and a drink of water while at the hospital for my eye appointment.
2nd meal: is going to be lunch today. It will be smoked mackerel pate on the last of the bread from the freezer - toasted.
3rd meal will be steak, onions and mushrooms. By that time I will be getting tired, so it needs to be something easy or I will dodge doing it or eating at all.

Seems I am having to go to Glasgow for an MRI scan when they give me an appointment - just to check that the brain hasn't shrivelled away to nothing. Actually, something to do with my eyes but I don't really know what. The opthalmologist didn't seem to think it is arthritis though, but he has some other possibilities in mind. Meantime, I am supposed to be covering my left eye to rest it and to avoid confusing my poor shrunken brain with alternative images that it can't quite make sense of. Em will be pleased. I'll be going around wearing an eye patch and can pretend to be a pirate!
 

Oh dear Rosemary. I hope you are properly mobile again soon. A fall tends to knock one’s confidence for a while so I’m glad you are best friends with your walking stick and have your meals sorted for today. I love airfried chicken, I think I could eat it every day!

so back to yesterday.
Brekkie usual slice of LC toast copious tea.
Lunch at a pub was a tasty goats cheese salad with olives & sundried toms.
Supper was chicken chorizo red pepper & paprika stir fry with cauli rice.
Today same brekkie.
Lunch was egg mayo and half a chopped Little gem lettuce. Mug tea.
Supper will be chunky cod fingers and cauli cheese.
@RosemaryJackson ouch that sounds sore hope you soon feel better, falls are horrible they give you such a fright. @Annb hope you don’t have to wait too long for your scan but goodness Glasgow is a long way for you to go is it not!
