What have you eaten today? (Low carb forum)


Thanks so much for the heads up. I’ve been checking on YouTube periodically to see if they are out yet. I was getting impatient!
 
Evening all

Today:

Temperatures well above the seasonal average expected here this morning, but a gentle breeze made being outdoors comfortable once more.

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Baked whole sea bass, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears with butter
A medley of baked broccoli, leeks, sweet red peppers and garlic mushrooms.
Water to drink.
Skipped pud.

D: Seafood salad made with mussels, brown shrimps, lettuce, cherry toms, celery, Romano peppers,Welsh onions and Kalamata olives, dressed with olive oil and a squeeze of lemon juice, parsley and garlic, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
Skipped breakfast
Exercise class, followed by coffee/tea with friends
L: 2 scrambled eggs with ham. Ff greek with chia seeds and frozen blackberries
Mid afternoon a mini ice cream
Was lovely to be out in the garden
Next doors hazelnut tree is cropping well, all over my garden. 2.5 kilos so far.
Our grapes doing well too, starting to be eaten by wasps and snails so joined them by picking a few bunches... trouble is I find them sweet enough but hubby and others say a bit tart. Don't know what to with them (last years are still in the freezer!). Think I'll have to bite the bullet and make grape jelly with real sugar. Think I might freeze the juice and make the jelly when it's not so hot . Think I know what all the carb eaters will be getting for Christmas!
D: roast chicken reheated with spicy njuda paste with broccoli and green beans. Raspberries and cream .
 
Why do things always happen when I'm about to cook?
Today it was a panicky message from a neighbour down the road who suddenly had a turkey with 7 newly hatched chicks in her garden, mom on one side of the fence, chicks on the other side.

By the time we got there the chicks had already returned through the fence to have a nap under mamas wings, and we explained that we had known she was brooding somewhere west of us for weeks, but that we didn't know where until someone would spot her. We asked if she liked the turkeys, much easier to leave her in her chosen environment than try to catch them all and force her back.
Neighbour was delighted, and didn't even want food or anything. I think she's gone all broody herself all of a sudden, and those turkeys will be utterly spoiled!

After that I was very hungry and I decided to keep things quick and easy with cooking: There's a burger hidden beneath the onion, bacon, cheese and the last of rather dried out mushrooms.

 
Thank you @shelley262 so much for the video link, Prof Bikman is excellent. I've been struggling to explain insulin resistance with my baby brother (he's 57 ), he's on the cusp of being pre-diabetic, HbA1c 41 with the level going up every few months, he was very overweight but has recently lost 14kg while we've been encouraging each other in our low carb efforts. I've been struggling because we didn't understand the machinations of insulin resistance, this video will be game changer for us as it explains exactly what's happening. It's a great feeling to know we're on the right pathway.

Breakfast today was 2 back bacon rashers, with butter sauteed mushrooms. Frothy coffee and cream x 2.

G&T

Dinner was cold gammon slices with butter fried tomato slices. Frothy coffee and cream.

It's early yet but breakfast will be some more of the thin cut pork belly and a couple of eggs.

I have a lot of chicken mayo to use up so will make it into ch pot pie filling (ie chunks of chicken, onions and peas in cream).

There will be too much if I used all of it for that so will make some leek and chicken soup as well. If I blitz that, I can have it hot or cold, depending on what the weather does in the coming days.

Intending to have a fairly easy day today to recover from all my exertions over the weekend and yesterday.
 
Skipped breakfast, having a 'job' to do instead helps, the job was a Morrisons visit.

Coffee and cream

Mid-day was a G&T accompanied by a noggin of Lancashire cheese and almonds

Dinner was a beef stir-fry.

Will have a coffee and cream soon, probably followed by 2 Lindt 90% choc squares.
 
Friend over for the morning and lunch had a lovely time catching up. She's low carb too so made it easier.
First thing felt hungry so had some kefir with my supplements
1ish smoked trout, tomato salad, some cheese and LC seeded crackers followed by garden berries and yoghurt
5ish pork shoulder shredded with salad and LC wrap and glass of dry white wine followed by LC ginger cake and decaffeinated coffee.
 
Black coffee and water all morning.
L- 2 slices cold roast beef rolled around cheese slices and butter mayo.
D- Air fried duck leg. It was nice but didn’t fill me up so had an omelette for pudding!
@shelley262 I listened to Ben Bikman this morning and agree it was an excellent presentation. I was really interested in what he said about the ways in which the common diabetes meds act on the body.

Hummus with Kalamata olives.
Salad using cucumber, salad burnet, rocket, salad onions, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a touch of lemon juice and topped with toasted sesame seeds.
Water to drink.
Skipped pud.

D Seafood salad made with crab and brown shrimps, lettuce, cherry toms, celery, Welsh onions and mustard cress, with a dollop of aioli for dipping, topped with chervil and toasted pistachios.
Water to swallow tablets.

Monday 11 September - bed 6.8 FBG 6.9. It's a lot less humid now, thank goodness. Only a 4 day school week (September weekend, so school is closed Friday & Monday). @DJC3 a very belated Happy Anniversary. I like the taste of mackerel, but I have a serious aversion to bones!

B. TAG and 4 M&S dinky sausages. Somehow, I managed the school runs and a trip to M&S food Hall before heading to a 10am Aqua class!

L. Grandson was out early for lunch, I was on my way back from Aqua, so he walked to ours. Benecol dairy free and 2 slices of SRSLY bread with egg mayo.

D. Leftover cold cuts. Pork, ham, ox tongue, roast beef, chicken tikka, lettuce, san marzano tomatoes, coleslaw, vegetable salad. CC Little chocolate pot with raspberries.
 
Tuesday 12 September - bed 7 FBG 6.7. Eldest gas a double free first thing, so he was at ours doing maths after younger brother was deposited at school. Also, son & DIL have a meet & greet at youngest's school so I'm back out for transport there and back this evening.

B. TAG and LC granola with sugar-free coconut milk and blackberries. Benecol dairy free.

L. 2 slices of SRSLY toast, one with a cheese triangle, one with egg mayo. I also had another 4 of the M&S dinky sausages at different times.

D. The meet & greet upset my schedule. I made Hubby Carbonara before I left. By the time I got back, I couldn't be bothered to cook. Ended up with lettuce, tomato, veggie salad, mayo, 8 prawns, and a baby bel. CC little chocolate pot with blackberries.
 
B: ff (10% fat) greek with frozen sour cherries and milled chia seeds
Mid morning cwc
L: was baking so ended up with:
Pumpkin seeds
Blacksticks blue cheese
Coleslaw
Seedy crackers
Hm lc brownies
And rather too much of all of them
. 3 hours later and I'm still very full so might make it a TMAD day.

Libre's on, but not activating until tomorrow. Being good/better starts then
 
Hungry day so went for high nutrition over three meals.
10ish two boiled eggs with buttered keto roll
1ish left over smoked trout served with kimchi and a slice of LC bread - it's the new Hey lo and only 0.3g per slice but very small slices! Followed by a few garden berries and yoghurt and two squares of 90% chocolate


5ish chicken with bacon and mushrooms with cauliflower cheese and glass of dry white wine followed by LC lemon cake and decaffeinated coffee
