What have you eaten today? (Low carb forum)

Evening all

Today:

B: Two poached eggs smothered with butter and avocado slices seasoned with black pepper, plus a wedge of Gorwydd Caerphilly.
Water to swallow tablets
Double espresso.

Mid-morning black filter coffee.

L: Packed lunch made with leftover mushroom and spinach frittata.
Lettuce, Romano peppers, celery sticks and baby plum tomatoes with a dollop of home-made mayonnaise for dipping.
Almonds and hazelnuts.
Water to drink.
Wild blackberries picked on the hoof to round off lunch.

D: Smoked salmon and cream cheese salad made with sweet cicely, vine tomatoes, lemon verbena, Kalamata olives and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pine nuts.
Water to swallow tablets.
 
@ATB123 well done it must be complex balancing your insulin with keeping carbs low. It's definitely much easier to experiment when you are type 2 and able to manage it with low carb. I've eaten low carb - mainly keto - for 6 years now and love eating this way it works for me.
@derekhansen and @6 toes welcome to this thread it's a great place to get ideas and also keep an eye on what you're eating.
Today
10ish two boiled eggs and black coffee
1ish unpasteurized Wrekin blue and gambazola cheese and four small garden tomatoes with toasted Hey lo bread (0.3 g of carbs per slice) and kimchi and sauerkraut. Followed by a few garden berries and yoghurt. @PenguinMum my photo below of lunch happens to have included my favourite egg cups bought years ago from the Birmingham Christmas market and id used them for breakfast so on the side. @DJC3 I'm with you too on egg cups love them.

5ish salmon in lemon butter with cauliflower cheese and two glasses of dry white wine. Just had 90% chocolate with decaffeinated coffee. Out in Brum tomorrow as going to see Frank Sinatra the musical which is premiering there so will be catching up on the forum on Sunday.
What a pretty plate. I admit, I thought the cats were attached.
 
Thursday 28 September - bed 6.6 FBG 7.2. Back to my Aqua class again. I've had to cancel my Monday class to drag Hubby to the doctor for a follow up.

B. TAG and I'm sticking with 2 slices of salami, 2 chorizo, slice of scarmoza, 2 san marzano tomatoes. 1 slice of GF toast.
L. LC granola with sugar-free coconut milk.

D. Crispy skin sea bass with a mix of San marzano tomatoes, exotic mushrooms, spinach. CC little chocolate pot with raspberries.

Just got a text from DIL that swimming grandson came in 2nd in the 50m Butterfly! 20230928_190016.jpg

Love the look of your meal.
Didn't bother with my 2nd meal after all. We wrapped the first of the extensions to my kitchen table once it had dried after its second coat of teak oil and got the second one out of its corner. It was very dusty and had quite a lot of mould growing on it. So we had to vacuum it and wash it with wood soap. It is drying now in the hallway and will get the first coat of oil tomorrow. Then I had to do something about the corner the extensions had been stored in which was very dusty, cobwebby and mouldy. Took all my energy to do it but it is now vacuumed and bleached. As a result, I couldn't raise the energy even to cook my piece of salmon so just grabbed a crumpet from Em's supply and toasted it. A big knob of butter on it and that was my meal. Loads of carbs, of course, but I was hungry and it was there.
Salmon for breakfast tomorrow, I imagine.
 
I have a plan for my evening meal, but also a feeling I won't be bothered with cooking, we'll see. :)
I surprised myself and did cook after all!
And not even the meal I had in mind.

The last of the Brussels sprouts had been sitting in a pot ready to be cooked for two days now, and I had already resigned to feeding them to the guinea pigs tomorrow, but suddenly they wanted to be cooked!
Had them with the last of the soft blue cheese, and a burger on raw endive with a slice of melted cheese and fried onions. :)

B: 1 cold sausage left from last night

L: 60g weight camembert and about 8 olives.
Another stressful day so emotional eating had me binging on real cookies. This must stop!!!
D: roast chicken with 1 roast carrot and a roasted wedge of cabbage.
Latter was new to me, about half a white cabbage sliced through the stalk to give slices at least a cm thick, brushed with olive oil and sprinkled with spice mix (morroccan style but any will do) then roasted in the oven for about 30 minutes. Very tasty and easy as the oven was on for the chicken.

Glass red and 4 sqs 60% dark chocolate

Hopefully stress situation is now resolved so no excuse not to get right back on to lc and looking after my health

That sounds very good!

Sorry about the stress and emotional eating, hopefully this will get better now.
 
Friday 29 September - bed 7.2 FBG 3.8 (Libre said 2.9 but I knew that wasn't right). We're off out tomorrow for a belated birthday dinner for eldest grandson. Hubby suggested a mixed fish pie for Sunday. I actually convinced him to ham cauliflower mash on top rather than me have to make half potato. That called for more shopping.

B. 2 slices of GF bread with egg mayo and usual TAG (Tassimo Americano Grande).

L. Salami, chorizo, scramoza, cheese triangle, veggie salad.

D. A bit chicken breast. CC little chocolate pot and a mix of raspberries/blackberries.

Glad to see my Tassimo order, and my SRSLY order is on the way. Hubby persuaded me to remove the steri-strips from the head wound. He's looking a bit Harry Potter ish now.
 
Late breakfast of 2 rashers of back bacon, a fried egg, half a large tomato and mushrooms cooked without any butter as I'm trying to reduce my fat uptake. Tomato and mushrooms were cooked in a little stock.

Had a gruelling morning as I decided it was time to clean out the garden pond, evicting bullrushes and cleaning out the bottom silt left me caked in mud. Surely I've worked off quite a few grams today.

After the 'mud bath' I had a shower, followed by a very nice G&T.

Dinner was smoked salmon, broccoli, asparagus, ribboned cucumber, accompanied with diced stick of celery mixed in cream cheese (these two ingredients worked really well together, will do this dish again.)

2 squares of 90% chocolate.

Yesterday was an eating day. Nothing particularly carbs, but just lots of food. I’d had a few days of dented appetite due to the antibiotics for my finger.

Today, still plenty to eat, but nothing like yesterday. Rounded off tonight with some slow roasted belly pork, with salad, then cheese, but the highlight of the day was stitches out of my hand.

Only 2 more days before I can get my hand wet and wash it properly. Oh, how I’ve missed that.

Seeing the surgeon today, I chickened out on the “I was good for the doctor” t-shirt, but he does have a sense of humour deep in there, so I may well have to stitch it out for my next appointment in 6 weeks.

(In other news, I stitched another denim jacket back the other day - a rising phoeni. The chalk marks are just for placement and will brush off easily. I like it, although I wish I had made it slightly bigger)

Yesterday was usual brekkie of slice LC toast, cooled with thick layer of good butter and two large mugs of tea. I don’t worry about the milk in tea as only have a dribble!
Lunch was quiche with crust cut off, one tomato, and celeriac remoulade found in Waitrose. Ramekin of strawberries.
Supper was skinned and smoked haddock with scallops cooked in double cream with chopped parsley after sweating down finely chopped shallot. Sometimes the simplest meals really are the best. Mr P had his on rice and I used up some tenderstem broccoli.
Big welcome to new joiners of the thread. @shelley262 I LOVE your cat egg cups. I am still using the ones the boys had as children with giraffes on!
I don’t know what I would do without eggs, probably my favourite LC food but NOT poached have tried them often and they make me queasy!
 
Breakfast: Salmon that I should have had last evening. I baked it with some rashers of streaky bacon laid across it to protect it from the heat of the oven. Just added some lemon juice but no salt or pepper.

2nd meal: will be spicy chicken thighs in a tomato, onion and garlic sauce. Probably slice some Brussels sprouts and saute them off as well. Depends how tired I am by then. I have some more vacuuming and cleaning to do (underneath a drawer unit in the kitchen. I keep some biggish plastic storage boxes underneath it to hold linen and some odds and ends of kitchen equipment. I pulled out one of them a couple of days ago and they are not in much better shape than the table extension leaves we cleaned yesterday.) More vacuuming in an awkward place and more bleaching. Lots of mould has developed in this house over the last months - that's what happens when you don't use the heating in cold, damp weather.

I had lunch at a friend's today. She understands about T2 and diet.

Pork rashers, baked aubergine and kale with an olive oil and lemon gravy. Oh my word it was good! Followed by a small Greek yoghurt.

Dinner (at home) will be omelette and salad. Followed by a glass of red wine. Mediterranean day!

G&T about 2pm with 20 almonds

5pm dinner, lambs liver, bacon, onion, mushrooms, and a salad made with shredded lettuce, sliced celery, diced apple, dressing: 4 parts mayo 1 part salad cream.

So far carbs for the day 18g, I'll probably have 2 squares of 90% chocolate later.

Quick post between Strictly dances-
Coffee all morning. Still decorating granddaughter’s bedroom. Pinched some blue cheese and a packet of Awfully posh pork crunch for lunch.
Nice long walk this aft, stopping for lemon and ginger tea at a new mobile coffee trailer.
Dinner- lumps of mince fried in butter. 2 eggs broken into the middle and cheese grated on top.
 
Breakfast - 3 rashers of smokey bacon with buttered asparagus heads.
2 cups of cream/unsweetened almond milk.
Lunch - 3 Boiled eggs with 2 seeded Ryvita. One cup of green tea.
Dinner - 2 plain burgers, not wanted anything else as I was full
Lots of water and no food now till tomorrow, by which time I will be ravenous lol
Cucumber and celery if I do want snacks ;)
