What have you eaten today? (Low carb forum)

Mixed fruit with coconut milk, almond milk (unsweetened) 4 drops stevia, lime zest and juice and chia seeds as an extra today... Quite a nice pudding to have.

Normal salad but with chicken today..


I have started adding unsweetened shredded coconut to my chia pudding and along with the chia seeds, it soaks up all of the coconut or almond milk and is even more delightful. I did it to get in extra fat & fiber, but now I do it because it is so tasty!


B- 2 eggs & chard sautéed in butter, cream with my coffee
L- vegetable salad with some ham, cheese and some chunky blue cheese dressing (my fave)
D- (will be) leftover pork sausage, broccoli with butter, and something else...blueberries? Couple of apple wedges? Wee peppers stuffed with cream cheese? The possibilities are endless.
S- sharp cheddar or walnuts, if I need it
 
Breakfast....coffee
Lunch.....Tinned slamon, spinach, sliced tomato and mayo
Dinner....Pork loin steaks with cauliflower, broccoli and small sweet potato, little thin gravy (hope the sweet potato doesn't blip my bg too much)
few raspberries...a little fromage frais with cinnamon and tspn of ground flax seed
 
B Bacon and egg
L Chicken salad and olives
D Stir fry pork (small red onion, garlic, red pepper orange pepper, couple of slices of chorizo and pork) with salad
Pudding...Fage, flaxseed and cinnamon with grated 85% chocolate on top...gotta wash up now :(
 
B: My first ever Coyo (loved it even though it’s a tad on the expensive side!)
L: Small avocado, asparagus in parma ham
D: Salmon with cauli egg salad, blueberry muffin (made with Almond flour and Stevia)

I forgot, I added in unswetened shredded coconut too!! It is yummy.

I'm eating it to get some extra calories on my workdays...
 
Yesterday I had:

B: boiled egg, Tbs coconut oil

L: minced lamb & courgette soup/stew with yoghurt

D: 85% chocolate with 3-nut butter and cinnamon (yum!)
 
Breakfast...........coffee

Lunch Tuna, spinach, tomato and mayo

Dinner ...Small high meat content beef burger (1.5 carb ..8.5 protein), mushrooms and fried tomato with a side of spinach and mayo
No added sugar jelly (very low carb)
 
Hi All, feels like ages since I posted, but it was probably only yesterday...

B: 2 good sausages, coffeencream

L: soooo hungry. Just kept munching! Hummus, coyo, choc 9bar

D: lamb steak, green beans, peppers, LC hot choc
 
B Groats with everything thrown in as usual
L Veg soup (b squash, leek, green pepper, beef stock, red wine), almond cheese bread & blue cheese
D Mixed grill -- steak, sausages (Debbie & Andrew's Harrogate 97% pork), tomatoes, bacon, mushrooms, onions, green beans
 
B: Black coffee and some leftover salad
L: chick pea and tomato salad
D: was at Kaspar's at the Savoy, to celebrate a birthday. They do lots of seafood, and the set 3-course included starter of mullet and main of brill. Lovely veggie side dishes but portions a little mean. There was some excellent sourdough bread, but I only nibbled on a tiny corner to get a flavour of it. Cheese was one of the dessert options. (The other two looked potentially carb-ridden.) Champagne.
 
B: Omelette in butter (2 eggs, bacon, asparagus, blue cheese)

L: L/O lamb/courgette stew with yoghurt, 2 LC biscuits (I made a batch of 20, hoping that my OH would eat more, but he only has 2 per day as they're very rich)

D: Beef tongue, cauli mash with cream and peccorino cheese, green salad
 
Yesterday was:

B: Sugar free blueberry muffin with double cream
L: Almond cheese scones with guacamole
D: Pork mince with cauliflower rice.

Was going to have jelly & cream for dinner but was too full - probably because I had a sugar free macaroon in the afternoon when a friend came round for afternoon tea.
 
B: black coffee and water

L: some skate from the freezer. With some greens and carrots. A little after 2.

L another pork and chorizo, pepper stir fry and salad
S babybell and handful of peanuts
D roast chicken, broccoli and cauliflower and cheese sauce, pudding will be Dr Deakins chocolate cake with ahem...clotted cream and cinnamon. Hurry up dinner I'm starving :D
 
Tea will be a shepherds pie with celeriac mash on top and parmesan sprinkled on it , spring greens and cauliflower .
Then, after the day I`ve had, a shall most likely ruin the regime with a glass or three of wine ;)
 
Breakfast.....coffee
Lunch...Salmon, spinach, tomato and mayo
Dinner....Thin slice of turkey breast (17g protein) mushrooms and 2 tomatoes all cooked in butter and served on top of a couple of handfuls of fresh spinach
Small 'no added sugar' jelly...(1.2g carb) with a teaspoon of desiccated coconut.......waiting now to see if the turkey spikes me ;).............Yayyyyy only went up to 6.1 from 5.2.......I added more fat so maybe that helped :)

D: Steak with savoy cabbage sauteed with onion and butter

Bottle of McGuigan Estate Shiraz is breathing as we speak and a glass shall be enjoyed in place of a dessert :hungry:
 
B Bulletproof coffee, boiled egg, slice of buttered granary & walnut bread :wideyed: First real bread for 2 years and made no difference to my BS (5.3) 2 hours after so now I'm confused. I assumed it would give me a reminder of what I mustn't eat. However, I have no desire to do it again :)
L Lettuce, rocket, sorrel, babyleaf spinach, tomato, celery, s. onion, chives, beetroot & cold sausage from last night chopped and doused in home-made hot sauce. Waste not want not.
D Large baked mackerel, spinach, broad beans, broccoli, butter.
S Squares of almond cheese bread as per forum recipe plus flaxseed, chia and walnuts; 4 eggs instead of 3. Nice with Meridian yeast extract (low-salt Marmitey spread)
 
Haven't had pizza for a year since I was diagnosed and went on a low carb diet . Made a cauliflower based pizza yesterday for the first time and it was delicious.It wasn't perfect and I will have to try and get a drier dough but it tasted pretty much like pizza to me :).

Afterwards made my version of a chocolate mousse,double cream whipped with some unsweetened cocoa powder and truvia to sweeten,so good :)
