What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner at a friend‘s house, she type 2 too and always cooks lovely food, tonight was chicken breast stuffed with chorizo, mozzarella and Basil with low carb pasta and a pesto sauce (too much pasta for me I only ate half of it!), followed by strawberries and cream.

Morning all. Yesterday went out for lunch and had Hunters Chicken with chips and peas. I didn't eat the chips (well I did 2) and for tea chicken drumsticks with a few baked beans. So I didn't do too badly foodwise.
Is Hunter's chicken another name for chicken cacciatore @RosemaryJackson? If so, I reckon it's fairly low carb.

I lived and worked in the USA for a time before I was married; a wonderful experience which I wouldn't have missed for the world, but I was glad to come home to old Blighty.
 
That lunch looks so colourful and appetising @shelley262. Can I come over and join you?

Today:

B: Two poached eggs topped with a knob of butter, avocado, seasoned with black pepper plus Duckett's Caerphilly.
Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover frittata.
Romano peppers, celery sticks and baby plum tomatoes with lettuce cups for scooping and a dollop of home-made mayonnaise for dipping.
Prawns and brown shrimps.
Almonds, hazelnuts and pecans.
Water to drink.

Mid-afternoon: black filter coffee

D: Smoked salmon and cream cheese salad made with lettuce, celery, baby plum tomatoes, salad onions and Romano peppers, dressed with olive oil, flat-leaf parsley and a touch of lemon juice, with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
I’m so behind I’m not sure I’ll ever catch up! Our hotel break was cut short by a bit of a crisis at home. Since then food has been erratic. Not high carb per se. I don’t think I’ll ever be tempted in that direction again, but I do still comfort eat - too many snacks of nuts and cheese.
Trying to get back on track but it’s not my kitchen so I don’t want to clutter it up with my stuff. I’ve bought a few things from home and the rest, cooked meat, cheese etc bought from little Coop.
Today breakfast boiled eggs
L-prosciutto, slices of Emmental and roast beef followed by yoghurt with seeds and a chopped tasteless Spanish strawberry.
D- l/c roll. One half with pate, other half with roast beef. Few Montezuma’s buttons.
 
You've been missed and sorry to hear that you've been dealing with a family issue. Well done you though on staying with eating well despite the challenges. It's all much harder when you can't plan and also away from your own kitchen. Hope the situation settles soon thinking of you.
 
I honestly don't know. It's chicken wrapped in bacon and some cheese, served sizzling. Very tasty.
 
Yesterdays food has no place on this thread, I was enjoying a beer in my garden contemplating what to eat, when neighbour came out and asked if I wanted to eat. Sure!
Found out he meant right away, he had already cooked, so both high carb and no prebolus. Which ended remarkably well with a short spike and back to normal again.
A hypo threatened at about 1 am, right before bed, whith my last bolus taken at 8:30, so I predicted another night of going unexplainably low. No idea why this happens every time I spend the night with my neighbour, it just doesn't make sense, and my basal has been spot on all week.
I had a good portion of crisps (very long acting carbs, being both high carb and high fat), which only raised me to about 6.5, which makes no sense. But at least it kept me above 4 until 8 am.

It's lovely spring weather, so tonight I'll make up for all those carbs by having a mainly carnivore barbecue with my neighbour.
 
Woke before dawn, so only about 4 hours sleep.

Phew, it's warm when one's active.
Coffee ice cream and 1 chopped sq 85%.

Still hungry so going to have an early tea of 2 sausages and buttered leeks.

Hi All
Been away most of this week with worries about next of kin. I know I haven’t been so “on it” as usual.
Yesterday usual brekkie of slice LC toast, cooled with thick butter, copious tea.
Lunch was two h/b eggs mashed with mayo between two slices LC bread, tea.
Supper was chunky cod fingers with mixed green veg medley from supermarket.
Today usual brekkie.
Lunch was two ti y bits of toast from end of loaf with Dairylea. Tea.
Supper is Indian t/a, for me Chicken Shaslik and cauli bhajee. Some rose wine.
 
Evening everyone,

Quiet day today, rain again so no outdoors for me! Tomorrow looks more promising.

Small glass kefir
3 fried eggs and 3 slices bacon for breakfast
Pork puffs
Greek yogurt and sour cream

Minced beef (slow cooked in marrowbone broth) wth some cheese and tomato puree and a few shreds of onion.
More Greek yogurt and sour cream

For several months I went onto a strict keto diet, the vegan way. I did lose weight, it was lovely. I ate loads of nuts, one or two low carb protein bar per day, and that was it. I did not miss any other food groups, but I got lucky because my days were filled with exiting activities and lots of physical activity.

Now I am on a lower carb diet, meaning I eat 100 grams of lentils per day, in addition to about 6-10 different small portions of vegetables. I switched back to lentils because one summer I ate nothing but lentils and was extremely fit during that time, whereas I did not get the same result on the keto diet. I am not losing weight, unfortunately, but I know that the great range of vegetables I eat, as small as the portions are, gives additional benefits. In the low carb book of dieting, my carb intake is still considered low, but not keto. I do add to this tiny portions of berries, so all around I consume about 70 grams of carbs per day, and now and then one apple or one pear on a day.

So also today: 100 g of lentils, with tiny portions of asparagus, carrots, mushrooms. onion, cauliflower, fennel, and berries, and half a pear and half an apple, 5 hazelnuts, a handful of almonds.

I will stick to the lentil diet. The benefits of this diet are more important to me that weight loss that would come with a keto diet.

Turned out the 'lovely' spring weather was of the rather chilly and windy type, which in no way is a reason to not have a barbecue.

For starters we had Greek style spiced goat, from the goats of neighbours some 200 meters down the road.



Mains was spareribs. The marinade needed a little insulin, but that was all the carbs in the meal.



And 'dessert' was pork belly with salt, pepper, and smoked paprika. Neighbour also threw a small potato in aluminium foil in the coals for himself, of which I had a small bite for taste.



Will do vitamins again tomorrow, for today this was perfect after yesterdays unplanned noodles with veggies, shrimp, and a sweet sauce.
Also sleeping in my own bed again tonight, curious to see if my basal dose seems to be correct again.
Those lows when sharing my neighbour's bed are one of the most puzzling things I've experienced with my diabetes. I've contemplated starting a T1 labelled thread on it, but how would I even explain without sounding very weird?
