What have you eaten today? (Low carb forum)

B: Strawberries & cream
Lunch: Nothing sensible; "picking" whilst baking - long story!
Dinner: Chicken in cream, garlic & mushroom sauce, peas, 3 new potatoes in butter
 
Made a cauliflower pizza base last night. It was really good, but the topping I made was disappointing.


I used tomato purée smeared thinly on base, one packet mozzarella cut thinly and placed all over, bit of grated cheddar on top of that. Then added mushrooms, cherry toms, thinly sliced chorizo.. It was delicious!
 
Tuesday:

B: none
L: back to that cafe for that delicious rarebit, except that this time, I had the spanish one (with chorizo), and cut off all the crusts. I reckon it got me down to 1 slice of bread instead of two, thus halving the carbs. Yet, oddly my bg rose significantly higher and I felt worse. Sigh. Either 3 slices of bread in a week is too much for me (v likely), or the bacon protein last time reduced the high spike (also likely). Ah well, cross that one off the option list too. Sigh.
D: last slice of that divine cake.

Wednesday:
B: none
L: smoked mackerel, beef tomato and olives
D: huge assorted salad and crustless quiche
 
Fasting

D: salmon, broccoli in cheese creamy sauce. 2 strawbs and cream with 1 cube Lindt 85% melted on top. Yum
 
B: raspberries
L: turkey and romaine lettuce wraps
D: chicken korma and 100g brown basmati and wild rice
S: low-carb brownies
 
B Fried mushrooms, tomatoes, Polish sausage (Lidl) & 2 eggs
L Nuffink. Busy.
S1 (2.15pm) Chunk of cheddar
S2 (4pm) 2x toasted Livlifes & pate
D (6pm) Roast rolled loin of pork with pepper, courgette & mushrooms, onion gravy (no thickening), steamed green beans & broccoli.
S Stracciatella cake & double cream
 
Breakfast: Grilled Stuffed Portabella mushroom with Olive Oil, Crushed Almonds, Crumbled Feta & garnished with Scallion.

Supper: Pan fried (w/ Extra Virgin Olive Oil) Wild Caught Salmon (with lemon & butter) along with 6 oz of steamed asparagus slathered in butter.
 
Yesterday:

B: 3 Black farmers sausages. only needed 2, but they were soooo delicious...
L: wee snack pack of Appetina cheese, olives and garlic cloves. Mmmmm.
D: chicken breast baked with tomato, chorizo, garlic and onion with a crunchy cheese topping. coleslaw.
Forgot to eat my berriesncream!!!

Today:
A fasting day til dinner, so water, broth, coffeesubstitute, herb tea and more water
D: will be chicken thigh curry (prob tikka masala) with cauli rice and spiced sugarsnaps
 
Modified English Breakfast -- Low Carb / Ketogenic

This is the first time I've ever had an English Breakfast in any form. It's quite amazing, the synergy of flavors & textures: the mushrooms & tomatoes mixing with the flavors of the sausage & ham & butter.

Scrambled eggs are large curd American style sorry.. haven't perfected Gordon Ramsay's method :) He's so clever! I wish I had Creme Fraiche but had to do with sour cream. (I am going to try to make Creme Fraiche homemade with heavy cream & plain yogurt as starter -- any advice appreciated as I can't readily buy creme fraiche here in the states.) Eggs are also loaded with fresh spinach.

Tomatoes are yellow cherry tomatoes, as I've read that yellow tomatoes have less sugar in them than red.

Absolutely delicious! :) I'll be making this often.

What does Appetina cheese taste like? Never heard of it.

I love me some berries & cream as well. I use 1 1/2 oz frozen blue berries, 2 tbsp of heavy cream and like 2 drops of stevia (sometimes.. try to stay away from the stevia or any artificial sweetner) -- I use an immersion blender to froth up the heavy cream.

Regarding your broth, is it homemade? I think that homemade broth should be mandatory when fasting because of all the nutrients & protein that comes out of the broth. I actually use a whole chicken when I make my broth.. hope that's ok. I save the chicken meat for use in salads or to feed to dog. (Or I might add the chicken to a dish like scrambled eggs etc.)
 
Appetina is mild, and white and firm, a bit like feta, but not so crumbly. To be honest, it is nothing special, but it comes in these excellent little single portion snack packs, with just enough garlic, herbs, olives and olive oil to make it interesting.

I have a mix of things for broth, ranging from Knorr Stock Pots (in an emergency! lol), to home made broth from whatever chicken, lamb or beef I have been cooking. I often roast a chicken, get several portions off the carcass, then boil the bones and remaining meat up. If you have a REALLY powerful blender, you can actually blend a whole chicken carcass in a litre of water, and come up with an instant liquid broth. Saves a lot of time. But I wouldn't do it with any other bones, because they are a lot tougher.

Had another English breakfast today (see above). I'll probably be having this a lot in the forthcoming weeks :) I really love the fried tomatoes and mushrooms with the rest! :) Adds so much to the breakfast!

Fasted. A lot easier today but was intrigued to try bulletproof coffee having avoided ever since starting low carbing. It was nice and I'll have it in the morning from now on. It's a good way for me to get coconut oil into my diet as I rarely eat it.

D: ribeye steak, cauli cheese, steamed spinach. Will have cream drizzle later.

Wow while traveling, I am quite happy to not giving in too much to temptations! Though yesterday I did have some naughty treats:

B: omelette
S: crispy tofu that comes with crumbles (which i am sure is made from some flour mix with egg) super yummy though..
D: meatballs soup with green cabbage
 
B: 2 boiled eggs and 1 slice Genius bread, cut into soldiers :)
L: Raspberries and cream
D: Roast chicken, cauliflower cheese, runner beans, carrots, peas, Brussels sprouts, cabbage, gravy
