You won't regret it - it really is very good and any leftovers keeps fine in the fridge overnight and is easily reheated in the microwave next day. What makes it so good is you are not dealing with the "wetness" when you steam or boil.I'm going to use that recipe for my Sunday lunch tomorrow.
Love lamb and mint sauce. Always makes me think of a Ken Dodd joke from years ago " How do you worry sheep?" " look at them in their field and say "mint sauce, mint sauce"". Typical Doddie.Breakfast: 2 boiled rand buttered Lidl protein roll soldiers, coffee with cream
Lunch: a few raspberries
Dinner: roast lamb, one small roast parsnip, one small roast carrot, cauliflower and lots of garden veg - purple sprouting broccoli, runner beans, chard, gravy and mint sauce
Alpro choc and hazelnut ice cream and a few more raspberries
Red wine and sparkling mineral water
I also made a low carb strawberry swirl cheesecakeBed 5.7 FBG 6.1 and pre breakfast was 7.1. Horror of horrors I hit 10 post breakfast. I won't do that again. Too many carbs obviously.
B. Finishing off yesterday's cold meats. 1/2 Slice each of roast pork and ox tongue and 8 mini slices of Lidl's German sausage selection. Boiled egg , 4 cherry tomatoes and a Tassimo morning coffee with cream. Mistake was to have a slice of Hovis lower carb seeded toasted.
L. Nothing
D. Mini ribs to start. Home made chicken cordon blue. Mine will be wrapped in parma ham - others breaded. Cauliflower mash , brussel sprouts and broccoli.
Usual campari and soda and a wee prosecco.
BGs still dropping thankfully.

I made it again today and the leftovers is off to the fridge for tomorrow. Hubby is spot on it is brilliant with casserole sausages.Best cauliflower recipe ever! In fact, although I love cauliflower cheese made the old way, it's far quicker and tastes the same to do it that way.
Even my husband liked it, and I didn't make it expecting him to want any as he had potatoes and yorkshires. He said to me "can we have this with sausages and onion gravy in the week?". He's normally a veg hater. Result!
