What have you eaten today? (Low carb forum)

Today in my corner of the world it has unremittingly ****** it down all day so Ive amused my self on a cooking / freezing mission that will cover my meals for the rest of the week at least
One mission was to find a good use for celeriac other than my usual one of leaving it in the fridge until it shrivels up enough to justify throwing it away and buying another. Used half of one to make up a rather superb cream of celeriac, celery,bacon and leek soup, some to make celeriac chips 1/2 of which are now frozen for future use. I also roasted 2 huge aubergines ( the flesh from one will go in a veggie curry tommorow, the flesh from the other will make baba ganoush), stewed a load of pears in quarters (1/4 pear and yogurt is just about ok BS wise) and made some muffins for the freezer - kitchen is a right tip now!

B - Coffee and pecan nut muffin
L - Raspberry and vanilla muffin
D - fried egg and mushrooms with celeriac chips amd 1 tsp low sugar tomato ketchup
Drinks - 2 x coffee and cream, 1 x califia farms unsweetened cold brewed coffee
Also had 2x pear quarters
950 cals 35g carbs

B- Small bowl bran flakes with semi skimmed milk
L- Wholemeal ham salad sandwich (always allow myself 2 wholemeal if i want daily)
LavAzza coffee with cream
D- Chicken stir fry loads of veg bean sprouts (NO noodles Hubby likes this also)
Slice of homemade chickpea apple cake (just less than half a cup of sugar in the whole cake ) had this with double cream BS is ok with this
 
B: none
L: 10 Pringles - highly regrettable. the carbs were OK, in the grand scheme, cos I followed them up with sliced cheese, plenty of water, and climbing the stairs a few times. What was regrettable though was the fact that they were not quite as fresh as they could have been. Mr B opened the tube last night, and today they were already past their best. Sad eh?
D: the delicious Dietdoctor chicken with feta, cream, pesto and olives. Lovely. Lovely. Lovely. And I made enough for several meals, so that makes life simple for a day or two. Oh and cauliflower rice with the rest of the salad bag with a bit of Balsamic vinegar.

I expect there will be a few squares of Montezuma Black Forest Gateau choc too, since it is wonderful. 70% solid with fragments of dried cherry - really intense flavour - scattered through it. 4 squares = no blood glucose impact, so far as I can detect. So my main priority is to savour it slowly rather than eating it too fast.
 
I didn't think it would turn out very nice but yours has turned out looking very nice.
It come out looking ok with that light browny colour, did not baste it although I might try that next time to see if I can get it darker.

How did the cream do in the IP (or did you take the pressure off to add it)?

I ended up cooking the chicken thighs (skinless and boneless) in the Instant Pot for 15 mins (could probably have done with a couple of minutes less). While I did the sauce on the hob.

It was bottling out from putting cream in the IP, but it worked just as well.
Simply transferred the chicken into the sauce, and stirred. Delicious.
Mr B says he thinks it is his favourite DietDoctor recipe.

B: Mixed berries & Greek yogurt, avocado & 2 poached eggs
L: Wholemeal oat topped roll with chicken, strawberries & mullerlight Greek yogurt
Flat peach at 4.45ish
T: Sausage casserole, mini new potatoes and roast squash & carrots (veg from son & DILs garden)
Skinny latte & tea during the day & a glass of vin rouge this evening

T Steak with peppers and courgettes stir fried in coconut oil and butter, followed by an *apple

*I suspect thats where it all went wrong :( Before my tea tonight I measured 4.4 , an hr later 9.0 then 8.1 after another 30 minutes. No more apples for me :banghead::banghead::banghead::banghead::banghead::banghead::banghead::banghead::banghead::banghead::banghead::banghead::banghead::banghead::banghead::banghead::banghead: oh and :banghead::banghead::banghead::banghead:
 
Today ...

Breakfast: Half a low carb role with mayonnaise and chicken, two cups of double decaffeinated espresso with cream and xylitol.

No lunch.

Dinner: A cornsalad with Caesar's dressing, parmesano, fried chicken skin and chicken breast. Two squares of 85% chocolate.

I wouldn't write off apples without a bit of further testing.

Here is my thinking:
Is 4.4 a bit lower than you usually see? Or were you v hungry?
If so, your body might have reacted to being lower than usual with a liver dump.
In which case, you 9 may have been due to the liver dump and the apple.
I wouldnt expect the steak and veg to impact at all, within an hour, and if the apple came after the main course, then that would be slowed down too.

If you want to test my theory (although feel free to write my suggestion off as some OCD excuse for a testing frenzy) then eat an apple by itself, and test every 15 mins til your bg returns to the starting point. :D

Thank you ! I am all melodramatic / over the top / out of proportion traumatised by the 9 result :nailbiting:so yes I will try anything! 4-5.5 ish is my new normal since I began lowering carbs. This last week I've added a bit of dark chocolate and an apple to my life and I really do feel a lot better for it, psychologically and physically. (Unless it's a fruit /chocolate based sugar rush I am experiencing! ;)) The apple was enormous , roughly the size of the moon , and was eaten like dessert straight after the meal, so that won't have helped matters!
 
Wednesday:

Breakfast: Toasted Lidl protein roll with toasted cheese

Lunch: 10g macadamias, 10g almonds, 10g walnuts

Dinner: Fat Head Pizza with salad

Evening: Salted peanuts - which established beyond doubt that I cannot eat salted peanuts without:

a) my BG going up
b) having a night disturbed by nightmares :(
