This recipe looks really good. I am especially intrigued by the red wine and the peppers in the recipe. I also used to add a bit of cinnamon, balsamico and cheese. I miss having chili, so will give it a try.
I am glad, @Goonergal, you are feeling a bit better and hope your blood sugar readings will soon come down too

Now I'm thinking I have to make chilli again soon. The taco recipe they don't explain the end bit well. The logic with the rack over the sink is to put the cooler but still soft cheesy tacos over the wire to harden into the taco shape. Give the rack a rub of oil to stop them sticking.
I'm varying another recipe today to make chicken cacciatore as Hubby doesn't fancy curry. More wine added - it gives it a nice richness.

As usual I just adapted it. Using Instant Pot again. Saute sliced onion and garlic cloves. Add some chopped prosciutto and oregano. Should have said brown the chicken first and take it out before doing onion, garlic. Deglaze pot with a cup of red wine (or white) put chicken back add in chicken stock and pack of chopped tomatoes with chilli. Mix in a tbsp of tomato puree. Bring up to pressure cook 20 mins on high pressure. Pressure off check seasoning. While it was under pressure I gave a quick saute to button mushrooms and sliced yellow pepper (Should have been red but I only had yellow in the fridge). Just a turn over in a little oil. Add the sliced pepper and whole button mushrooms and back up to pressure for another 10 mins.Hi @maglis55,
Guacamole is an old favorite for me too.
I do miss corn tortillas, though -- but I guess there won't be a good substitute as the taste is quite distinct. I still have four cans of Old El Paso red enchilada sauce from before diagnosis.

I think youve got mine - I end up with loads of bottoms but no lidsStrange BG day. Bed on 6.2 FBG was also 6.2 pre breakfast was 6.5. Barely moved after breakfast either. Dropped back and I've been sitting at 5.5. It is staying pretty flat and the highest I have been is 7 30 mins after breakfast. Not complaining it's just unusual for me.

Have been sorting my plastic storage containers. Did them 6 months ago and the drawer was chaos again thanks to hubby just chucking them in. Is there a plastic container monster as well as a sock monster? You all know the concept of single socks but I end up with about 20 extra lids despite sorting them! Once again I'll need to store in case the bottoms turn up.

Great that the chicken cacciatore was delicious -- the recipe definitely sounded yummy. I've now got quite some new dishes to try -- and am looking forward to this.
Tonight, I might adapt a recipe from dietdoctor. It is the blended cauliflower with butter. I usually also add onion, garlic, tahini and a Moroccan spice mix -- but haven't decided yet what else I will have with this.
