What have you eaten today? (Low carb forum)

This recipe looks really good. I am especially intrigued by the red wine and the peppers in the recipe. I also used to add a bit of cinnamon, balsamico and cheese. I miss having chili, so will give it a try.
And you can happily have guacamole and sour cream on the side. Diet Doctor also have a recipe for low carb tacos

Now I'm thinking I have to make chilli again soon. The taco recipe they don't explain the end bit well. The logic with the rack over the sink is to put the cooler but still soft cheesy tacos over the wire to harden into the taco shape. Give the rack a rub of oil to stop them sticking.
I'm varying another recipe today to make chicken cacciatore as Hubby doesn't fancy curry. More wine added - it gives it a nice richness.

Mmmmmm now I want chilli - luckily I have a pkt of mince that needs using up so cooking adventures await!
Like the idea of adding chorizo so Ive ammended my normal recipe to include it
30g butter, 1/2 red onion, 400g organic minced beef, 100g chorizo, 1 large fresh red chilli including seeds, 2 cloves garlic, I knorr beef stock pot made up, 40g 90% dark chocolate, 3/4 tsp cumin powder, 1 large field mushroom, 1 large courgette, 200g fresh baby plum tomatoes, juice of 1 lemon, 1tbsp erythritol, 1 pepper (Will also add 25g green and blacks cacoa powder just before serving). Cauli rice or courgette noodles will accompany, depending on my mood.together with a dollop of creme fraiche, will also dig around in the fridge - Im sure theres some fresh coriander in there that needs a home
The rest of the day has cosisted of 70g mixed nuts, 1 coffee and pecan muffin and a couple of coffees with lactofree milk

Breakfast: Greggs - Large Latte and Bacon Roll

Lunch: 2 slice of malted loaf bread, wafer thin ham and salad, 2 peaches, a pear and a nectarine, coffee

Dinner: Hopefully something with lots of carbs then wine

Guacamole is an old favorite for me too.

I do miss corn tortillas, though -- but I guess there won't be a good substitute as the taste is quite distinct. I still have four cans of Old El Paso red enchilada sauce from before diagnosis.

As usual I just adapted it. Using Instant Pot again. Saute sliced onion and garlic cloves. Add some chopped prosciutto and oregano. Should have said brown the chicken first and take it out before doing onion, garlic. Deglaze pot with a cup of red wine (or white) put chicken back add in chicken stock and pack of chopped tomatoes with chilli. Mix in a tbsp of tomato puree. Bring up to pressure cook 20 mins on high pressure. Pressure off check seasoning. While it was under pressure I gave a quick saute to button mushrooms and sliced yellow pepper (Should have been red but I only had yellow in the fridge). Just a turn over in a little oil. Add the sliced pepper and whole button mushrooms and back up to pressure for another 10 mins.
It is needing a boil again to reduce a bit (one of these days I'll get the liquid right under pressure). Garnish with fresh parsley.
You can use chicken breasts but I am using corn fed drumsticks and thighs. I'm having mine with either cauliflower mash or Oomi noodles. Hubby wants buttered tagliatelle.

Strange BG day. Bed on 6.2 FBG was also 6.2 pre breakfast was 6.5. Barely moved after breakfast either. Dropped back and I've been sitting at 5.5. It is staying pretty flat and the highest I have been is 7 30 mins after breakfast. Not complaining it's just unusual for me.
B. Tassimo Americano grande with a dash of cream. 1/2 Lidl high protein roll with pate
L. Urban Fruit triple toasted coconut chips and a mug of Marigold Swiss bouillon.
D. Chicken cacciatore with cauliflower mash (or it might be Oomi noodles)

Have been sorting my plastic storage containers. Did them 6 months ago and the drawer was chaos again thanks to hubby just chucking them in. Is there a plastic container monster as well as a sock monster? You all know the concept of single socks but I end up with about 20 extra lids despite sorting them! Once again I'll need to store in case the bottoms turn up.

Last time I did this I found some of the bottoms later but not them all. Some have a habit of disappearing onto shelves and storage in the garden but not as many lids as I have. I know all the containers in the fridge and freezer have lids and if they go out with stuff in them they always have lids. Like the sock monster it's a mystery.

Dinner - home made burgers with mince, feta, onion, spinach and tomato, served with sautéed cabbage and leeks; 10 raspberries and cream

Drinks - 1 mug of tea with cream, 1 sparkling water, loads of tap water

The chicken cacciatore was really good. It reduced down well and was very rich. I'll make that again. Even hubby now admits the Instant Pot was a good buy.

Great that the chicken cacciatore was delicious -- the recipe definitely sounded yummy. I've now got quite some new dishes to try -- and am looking forward to this.

Tonight, I might adapt a recipe from dietdoctor. It is the blended cauliflower with butter. I usually also add onion, garlic, tahini and a Moroccan spice mix -- but haven't decided yet what else I will have with this.

D - tonight will be salad with boiled egg, spicy chicken wings and a glass or two of red wine
Today I went for my 3 monthly hba1c - hope it's okay.....

Mmmmm tahini with anything or even tahini with nothing, I love tahini
