What have you eaten today? (Low carb forum)

Hi - here's the recipe:

Paleo Porridge - inspired / based on @Brunneria 's recent Amazon purchase:

150g Coconut flour
150g Ground almonds or almond flour
30g Psyllium husk
15g of Splenda (or other sweetener to your taste)
10g Ground cinnamon (this gives a very mild flavour - you might want to increase it)
Pinch of salt

Mix everything together in an airtight container

Total calories for whole recipe: 1562
Total carbs: 101
Makes: 10 servings

One serving is 35g of the mixture
Giving 10g of carbs and 154 calories

Slowly stir in 275ml of COLD water in to 35g of the mixture. Allow to stand overnight if you want to eat it cold or 15 minutes if you want to eat it hot - if eating it hot then microwave for 4 minutes, stirring every minute then let it stand for a couple of minutes so it cools down a bit.

Thank you so much @Chook for taking the time to make the recipe and posting here. I'll give it a go when I've purchased some psyllium husk.

Looks great :) Have you ever made it without sweetner and used berries instead or don't you think that would work?
 
I need a good night's sleep! Very restless night - bed on 6.9 FBG 6.6 and pre breakfast was 6.1 - unusual it heading downwards. Swimming with No 1 grandson this morning and his arms and legs are finally coordinating in the front crawl. Then son caught me before I escaped to take him to Costco (I needed one of their giant boxes of washing powder so it wasn't that bad).
B. Slice of ox tongue and Tassimo Americano Grande with a dash of cream.
L. Slice Hovis lower carb seeded with lurpack, slice Ayrshire ham and coleslaw. Another Tassimo Americano grande with a dash of cream.
D. Cold meats - fire smoke turkey, ox tongue, Ayrshire ham, mortadella. Lettuce, tomato, 1/2 avocado, red Leicester cheese, coleslaw, 2 Walnuts and Helmanns.
5 strawberries and alpro soya coconut ice cream.
Think I'll have an early night after the X Factor. Planning a fishy meal tomorrow. Got fresh mussels to start and a selection of cod loin, bassa fillets, scallops, prawns and trout which will become a fish pie. Half the top will be potato the other half cauliflower mash.

Bit headachey today, which always makes me hungry so fasting day abandoned. Strangely headache disappeared while out shopping. Still a bit tired but should sleep well - new mattress delivered today.

Breakfast - none

Lunch - salami and cheese

Dinner - courgette bake: fried courgettes layered with fresh tomato and onion sauce and mozzarella, topped off with grated Parmesan. Added some cabbage on the side. Dessert was 2 squares Lindt 90%.

Drinks - 1 mug tea with cream, 2 Diet Cokes, 1.5 litres water.
 
Hello all

Been a hungry day today but have tried to ignore it

B - 1/2 protein roll buttered
L - 1/2 protein roll buttered, pkt pork scratchings and some Greek yoghurt
D - takeaway night. Kebab meat with salad and a sausage. Finished off with red wine and pork scratchings
 
Saturday ...

Breakfast: Two double decaffeinated espressos with cream and xylitol. A cornsalad with Caesar's dressing, parmesan, and two boilded eggs.

Lunch: Nothing.

Snack: A few nuts.

Dinner: Roasted eggplant and bell pepper with a little bit of feta and chicken.

Late night snack: Greek yoghurt, blueberries, low-carb honey and cinnamon.
 
Well that was a surprise Bed 4.8 FBG 6.1 and pre breakfast was 6.3. Even post breakfast it is holding at 6.7. And it's Sunday and pouring rain.

D. Usual campari and soda and a wee prosecco.
To start mussels in a white wine, cream and parsley sauce. Home made fish pie with smoked bassa fillets, cod loin, trout, scallops and prawns. Part mash potato , part cauliflower mash. Green beans and asperagus.
May have a few strawberries and alpro soya coconut ice cream. Will see how I feel later.

Sunday... the weekends go SO fast!!

Breakfast: Two grilled rashers smoked streaky bacon and one egg fried in olive oil

Lunch: Fresh raspberries

Dinner: Roast beef, small amounts of roast parsnip, cauliflower cheese and carrots - much bigger helpings of broccoli and runner beans. (I will be avoiding the yorkshire puddings and broad beans.)

Dessert: One scoop Alpro hazelnut and chocolate icecream (which tastes like truffles)

Drinks: Tassimo Kenco decaff coffee at breakfast and mid morning then sparkling mineral water until dinner when I will be having a glass or two of red wine.
 
breakfast was humous and celery sticks and coffee with double cream

lunch was lamb chops fried in butter with lots of mushrooms and fresh spinach, with feta chunks sprinkled on top

tea will be poached cod with cheesy broccoli, courgettes and cauliflower - sauce make by combining creme fraiche, greek yogurt and grated cheddar. chopped spring onions on top

At some point will have a small handful of almonds
 
Did I do yesterday? I honestly cannot remember! Oh well... you can all skip it if it looks too familiar :D
Mind you, now I have to try and remember!
um...

Oh yes:
B: bacon, egg, mushroom and beans at local garden centre with Mr B.
L: at 3pm he wanted a peanut butter and jam sarnie (!) which involved a trip down to the high street, and some gluten free crispbreads (5.9g carbs each) fell into the basket. Funny how that happens. So I had 2 with marmite and butter.
D: sort of didn't happen since neither of us were hungry, but we did have a glass of kefir each, and I had 2 squares 70% choc.

Today:
B: bacon omelette
L: those crispbreads are rather nice. they provide a really crispy crunch that I didn't know I was missing
D: will be DietDoctor baked salmon with pesto and celeriac chips with a big green salad (posh fish'n'chips)
 
So glad I got up early today. Managed a 1.5 hour walk in the sunshine and along the river before the weather turned grey and windy. On the eating front, a fasting day.

Breakfast - none

Lunch - none

Dinner - chicken leg with cauliflower cheese, raspberries and cream

Drinks - 2 mugs tea with cream, 1 Diet Coke, about 1 litre of water so far.
 
Hello all

B - nothing
L- 1/2 protein roll and boiled egg
D - roast chicken and gammon, green beans and a few carrots, followed by a lemon chia seed pudding. Red wine as usual.

Really struggling to get protein rolls from lidl at the moment,. Hope you all had a good weekend X
 
B: 1 slice toasted Wensleydale cheese/glass of milk ( Recommended to have with antibiotics to prevent ulceration of esophagus!!!)
L: Sliced turkey, brocolli, cauliflower. peas, 4 tiny new potatoes, tablespoon of gravy, sparkling mineral water
D: Blueberries, 1/2 slice banana with natural greek yoghurt and 1 slice bread/ butter. Black tea.
Lots of tap water
 
Good afternoon/evening all :)
B- GF Granola with oaty milk and camomile tea
L- GF bread tuna sandwich (sprinkled with turmeric powder, getting used to adding it to food, but still not sure about it in my ginger/lemon tea!)
D- What I call a pick n mix (No! Not sweeties!!) 2x rice cakes, one smothered in peanut and coconut butter and t'other with marmite, hard boiled egg, side salad (no tomatoes) and a fruity soya yogurt for dessert
So far 2.5L of still water, and hope to reach 4Ltotal by bedtime :cat:
 
No, I've only made up the one batch and I really enjoyed it so I haven't thought to change it. :)
Well if it ain't broke...

Thank you. I might make some without sweetner and see if it works with some berries. The only sweeteners we have are white sugar, maple syrup and honey. I am FAR to smug and pious to have those these days

Sunday ...

Snack: Five squares of 85% chocolate.

Dinner: Roasted bell pepper and eggplant, lamb with onion and sour cream and cheese.
 
Don't know what is going on today. Bed on 6.8 FBG 7.8 and pre breakfast was 8.4. Had a restless night again so will see how it goes.
B/L courgetti sandwich. Haven't had one of these for ages. Mix of courgetti, almond flour, beaten egg , salt and pepper. Fry 2 mounds (shape into bread shapes). Fry one side of each 'slice' , turn then add grated cheese to one side and a slice of ham. Top with the other half once it is cooked and serve. A mere 5g carbs for a fried cheese and ham sandwich.
D. More of yesterday's fish pie topped with the better than potato cauliflower mash.

Monday....

For some reason I'm just not hungry - I think I must be coming down with something because I always enjoy my food but I'm taking this as an opportunity to fast:

Breakfast: Nothing

Lunch: Nothing

Dinner: Leftover roast beef from yesterday and some veg - probably broccoli, cauliflower, runner beans and gravy

Drinks: Even coffee tastes funny today - so only one mug of black decaff at breakfast and then sparkling mineral water all day.
