What have you eaten today? (Low carb forum)

Mon
B- mushroom omelette with spinach and pesto followed by a berry infusion tea
L- none (water = 1L noon to 1.30pm inc taking meds)
D- GF Fettucine with tuna and vegan 'soft cheese' (reminded me of Philadelphia :hungry:)
Dessert!- Alpro dark choc soya dessert with 100g strawberries and a mini meringue!! ;)

snack (11amish - ) handful mixed nuts

drank approx. 4L still water interspersed with the odd herbal/fruit teas
I usually eat both breakfast and dinner cos of meds, I do try to eat low carb (under 100g per day) but it does get a bit naughty on times!!! ;):cat:
 
There have also been a number (an excessive number!) of meals out, where I tried to stay totally gluten free, but lapsed rather on the carbs. Mainly due to chips of very variable quality. Oh, and that bag of popcorn... Haven't yet had the courage to get on the scales.

OK, so yesterday I wrote this ^^^

And today I weighed myself
And I am amazed.
That 9 day week away involved 7 meals out; all gluten free, and lower carb, though as I said I did eat quite a few chips. There were 2 bunless burger meals on the motorways, 3 pub meals and a large chicken kebab the night I got home and was too tired to cook. Again, no pitta or bread or gluten.
And, even with eating at least twice, sometimes 3 times a day, with all sorts of extras that I wouldn't normally touch, I only put on 0.2 of a pound.

Yes, you read me right. Less than half a pound, while eating like a glutton. And we all know that tiddly little weight fluctuations happen daily, so that amounts to NOTHING AT ALL!!!

Honestly, I have no idea why I normally bother with this Intermittent Fasting at breakfast, and portion moderation. My weight is set in bloomin' STONE!!!!!

Anyway, back on topic:

Yesterday I had

B: coffeesubstitute
L: small 40g nutbar with 12g carbs
D: homemade chicken curry with red and yellow peppers, onion, peas, green beans and brocolli.
Lots of water.
 
Monday - ND - Week 8 Day 1

Breakfast: Cup of decaff tea

Lunch: Black decaff coffee

Dinner: Sunday leftovers: roast beef, cauliflower cheese, carrots, brussels sprouts, runner beans and few broad beans

Drinks: Apart from the decaff tea and coffee mentioned above I drank sparkling mineral water all day.
 
Monday ...

Breakfast: Two double decaffeinated espressos with cream and xylitol. Half a homemade low-carb roll with mayonnaise and smoked sockeye salmon.

Lunch: Savory zucchini-onion-potatofiber pancakes with a topping of beef, bellpepper, onion, tomato, pesto calabrese and cheese.

Dinner: Pickled cucumbers, olives, gouda cheese, rambol cheese, a heaping tablespoon of hummus, pecans, and half a low-carb roll with butter.

Edit to add: Two glasses of red wine before dinner.

You've reminded me of the zucchini fried cheese sandwich which I haven't made for a while. It's a mix of grated zucchini, almond flour , egg and parmesan (will need to check it) - fry in kind of bread shaped bits and once the 'slices' are turned sprinkle on grated cheese and sandwich together - voila - fried cheese sandwich
 
Bed 4.7 FBG was later checking but only got to 6.5 before it started to go down. Still on the fast and noticed apart from an odd 6 or very odd 7 I'm mostly in low 5's and 4's now. It's not bothering me so will stick with it.
B. Nothing just water
L. May have a Tassimo Americano grande with a dash of cream or Marigold Swiss bouillon. Will see.
D. Will be salad. I have leftover cold meats with lettuce , tomato, coleslaw, boiled egg , baby beet , mozzarella pearls.
I still have 1 portion of crumble left despite feeding it to hubby and brother. It would be wrong not to eat it.
Taking No 2 to Gym Monkeys after lunch. Bill Bear is with him from Nursery. Bill Bear came with him yesterday complete with his little suitcase with jammies, toothbrush, bedtime story book and other bits and bobs for a mini holiday. Bill Bear went to swimming last night and I was ordered to take him to Tesco this morning before going to Gym Monkeys later. Currently in the front seat of my car with a seat belt on!
I'm reliably informed by both Grandsons toys come to life when humans are not about.

This is actually my feeble attempt at a substitute for potato fritters, a very popular dish in Germany and often sold at fairs such as Xmas markets. They are close, but not quite the same thing though.

I was lucky to find potato fibers online, which are really low carb. One brand has only 2g of carbs per 100g, another brand only 8g of carbs per 100g. You only need very little potato fibers to get the taste of potatoes (I used one heaped tablespoon for four fritters/pancakes) and it has a similar effect to chia seeds as it thickens the batter.

My recipe is one average size zucchini, a handful of onion, two eggs, one to two tablespoons of potato fibers, salt and a bit of ground caraway seeds -- so I guess, this would come out to about 3g of carbs per 100g.

Your sandwiches sound wonderful. I think adding cheese would greatly enhance the flavor of this recipe. I will try this next time.

By the way, another topping that works well is sour cream and smoked salmon.

I'll look for potato fibres. I could have fun experimenting with them.
The cheese, especially when it goes all gooey really gives it a good taste.

That sounds good. Do you think it would work without almond flour? I'm loath to splash out on it as I'd be unlikely to use it for much as I'm not a baker.

You don't really need to use almond flour - you can use ground almonds from any supermarket which aren't expensive and come in little bags. When I need it I get Whitworths ground almonds which are usually on a special offer at Asda for three packs for £3 and they keep for ages.

It just binds the mix. As @Chook says you can get the little bags of ground almonds in supermarkets. It's a bit too wet without it although more parmesan could work.

S. Pomegranate pot and a smidgen of Stilton

Tuesday
B. Blueberries and cream
L.camambert with walnuts
D. Cajun chicken with salad. Strawberries and cream.
S. Pomegranate pot and piece of Stilton.:)
